• 1/2 teaspoon vanilla extract( if you like the flavor)
2 P6 @4 g2 }2 ^6 ?) P• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)

• 4 eggs, well beaten4 E0 x; t) b6 B. q+ s/ f0 j
PREPARATION:. r6 {1 a% Q/ l' c4 Q0 j) `
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. {! C$ J3 ?7 v& v5 q4 e Z, d
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. " n, n6 }+ x- d1 r) |
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.+ L- R: Q+ U4 r: ~

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
