rye starter: 1/3 cup

+ a( R6 k% d7 h T- YDark rye flour: 3 cups0 h1 e+ N, L' H m& W% c
Wholewheat flour: 4 cups

Fennel Seed 2 Tablespoons6 ?5 I+ D/ y+ P6 z
Anise Seed 2 teaspoons

- ]( }4 w2 d. A3 X/ z5 Z搅拌揉好,用保鲜膜覆盖,室温下18小时-24小时
* E1 x( F! o' t8 l) b* r取出来折叠成型。放在和烤盆同样大的盆里,覆盖,继续二次发酵2小时。注意:发酵盆里要放cheese cloth 上后撒大量的面粉(因为rye的面团非常粘)

preheat the ovan and the pot 500 华氏
/ _: H: b2 Q1 }reduce to 380 华氏,and bake with lid on for 60 min# |1 |9 }% S, q% @6 A% l
open lid and bake for 10-15min ! {: _7 ~5 l P0 w
Broil for 3 min until the crust turn brown% B+ O9 r" w+ ]0 a; c! ^0 {) r
测试面包心要91摄氏度以上

吃的时候切片, 简单吃法就是用toaster 烤焦一点,抹黄油吃, 复杂的吃法很多,随意。 |
