Beef with Broccoli

Ingredients:
  y8 Z9 M+ E9 @5 c# ]3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces- N0 d# @+ B% @: x- n

2 B* b! r& Z) |. O( e' S" e8 W3 \Marinade for Beef: , n2 B  N/ R/ }/ H9 W
1 egg
* q5 C& b! S  [, u6 m1/3 tsp (1.5 mL) salt/ A/ e  q; u- p- i
1 Tbsp (15 mL) cooking wine  E( K: Z. k- d
1 Tbsp (15 mL) cornstarch/ i; x# N8 I! C" k
2 Tbsp water; m, D) b3 ]; c" [- w/ N5 d% ?
9 Z+ ]0 y6 d4 \9 }5 F7 [1 F6 |
1 1/2 Tbsp (20 mL) oil) m+ A" G# v. T

9 q- B" k7 A( Y, s2 R1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
$ h% f1 y- {/ _8 c1 cup (250 mL) cooking oil
( r/ @! v/ ]% M; Z: u# E7 L2 1/2 Tbsp (30 mL) oyster sauce7 R( s4 o, R- e* Z" _
2 Tbsp (25 mL) light soy sauce9 l- R  N. a0 Q- Y2 _
3/4 Tbsp (10 mL) dark soy sauce. r2 S$ R: S* C2 r. F
1 Tbsp (15 mL) sugar4 t1 ]* M, I5 {3 F+ A) \! N; M
a few drops of sesame oil1 t* f3 Y. M  |/ t$ K# P
2 cloves garlic, crushed
- k. |7 b7 c3 f7 H# x; ]1/2 cup (125 mL) chicken broth
2 M# ?& Q; U$ t2 Tbsp cornstarch (if desired)
+ c8 J% F2 E! s& N
3 r( V6 a7 w0 M% r% N. zDirections:
, S8 |  C- T& y" U. {& M) jSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
* m# p1 g0 N9 |( ?3 r  YHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
; `7 `* \$ d. O6 qAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
* r  a" x% k) g8 S9 g% P( ~. OHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.5 F5 W5 ^" J! K9 e) n

/ P- N5 X$ S) n$ C5 U# R*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
