Beef with Broccoli

Beef with Broccoli  T& y: N" ]8 z  r1 [' X$ G
Serves 3 to 48 J  c5 _5 c0 [7 @2 v

Ingredients:/ a, ]- q8 R& H+ ^) n- A
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces7 M5 X5 P1 ^+ E/ y2 c# X# d

Marinade for Beef:
# G% o6 a7 \0 ?: e" J2 G& M1 egg
; u) q2 q* z& v5 p/ F( y4 L1/3 tsp (1.5 mL) salt
' J) o( |" d. `$ a, L1 Tbsp (15 mL) cooking wine
, N4 C" x- W$ ]) Y) d, ?+ Y" o" U0 W1 Tbsp (15 mL) cornstarch% P8 U" Q  a+ ^5 E
2 Tbsp water

5 X( X. w' W: X* }2 c! K$ K% c" s1 1/2 Tbsp (20 mL) oil7 L+ A% a/ E9 q$ d! c: L# E

7 y, c. M, T6 t+ R5 {  t1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices1 E5 `: X; R0 s* t: N8 p
1 cup (250 mL) cooking oil
. t& D) Z; h  s- H$ R2 1/2 Tbsp (30 mL) oyster sauce0 ~% @' v( t% `; Z+ [
2 Tbsp (25 mL) light soy sauce
" w  r; E+ a) l' G# _- w3/4 Tbsp (10 mL) dark soy sauce1 ]  s& D- N, j/ t9 P) e5 W: }' L
1 Tbsp (15 mL) sugar
  g: Y- C  s* I3 E: B- R  S9 }a few drops of sesame oil
8 A4 _; g% a+ x- f2 cloves garlic, crushed0 m, J/ ^9 U1 f( S1 x, W1 U
1/2 cup (125 mL) chicken broth
8 [' W4 @: j! N7 X2 Tbsp cornstarch (if desired)

! y0 c" l1 g, [: T( ~Directions:0 c" ?( Z% j2 N; i1 s
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
2 N2 Q+ a+ s' f: M* ]# RHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
, Y- v6 G' i+ x$ P' L% p  cAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
" K1 Q6 B( i; d8 P1 N& g) o1 jHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
