Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1/3 tsp (1.5 mL) salt0 L8 [$ f2 U% d8 b9 q8 |0 Q- O
1 Tbsp (15 mL) cooking wine) J6 j% q5 R  C0 H! U1 j+ g
1 Tbsp (15 mL) cornstarch
9 L: I/ V' H5 _) p2 Tbsp water5 o+ E6 Y, M% e! I0 ]- R
9 A, V# ^/ m0 W* a3 \. s( D
1 1/2 Tbsp (20 mL) oil
; O/ {9 D+ Y$ M/ r- _" j" U! \1 l( t& n0 n6 ?
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
/ H4 O7 ~. B4 R" k; m( F  `- E1 cup (250 mL) cooking oil
: z; K. u* O( w/ Z* p5 Q! |2 1/2 Tbsp (30 mL) oyster sauce
* z' X( W' S4 s' x0 G4 i2 Tbsp (25 mL) light soy sauce% K) ~# n2 q) g% [5 w' O' g9 r
3/4 Tbsp (10 mL) dark soy sauce
5 @: Q/ `  W5 n8 i5 D1 Tbsp (15 mL) sugar
; A& S) |# r/ C- s) Wa few drops of sesame oil+ @* G, W' v4 c& c9 ^. {* z7 }
2 cloves garlic, crushed* U  o+ L) P3 E0 e- `! ~
1/2 cup (125 mL) chicken broth
% c3 C5 o7 C' o2 Tbsp cornstarch (if desired)
) X. L/ M* t% C" B: Q
( l2 L  Y& v* ~; J1 Y! YDirections:3 A: r5 J$ j8 r7 A0 [; K' x
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 9 c$ |# Y3 @6 Q& R$ E+ X+ H& H
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
8 O. j; J4 w. D+ g: N% tAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ \; L" i; ~2 U8 [! Q2 I" }Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.- M+ {$ y4 F5 I% O0 y

  ?! k; X2 l/ [, v0 t/ ]*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
