烤蛋糕

• 1 cup sugar / W J& z3 {' ^/ }6 ~8 H
• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)0 o4 a8 ^: X( Q2 N$ K) q
• 1 1/2 cups sifted flour or all purpose flour (former is better)1 _4 K: `6 p0 x9 \' a7 ~. e; c+ k
• 1 1/2 teaspoons baking powder

Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
/ y3 K! j) r' g) N5 nTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
( t7 f/ q0 \5 d; {+ q# S, lBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.1 B! T) V, {! j _# p0 `

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。0 o* M8 _: ]0 \1 s. m& T
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。+ Q! F. M2 u; J* {3 d
3 @6 l% B& y' N/ f Q: }$ Z2 U7 D8 b h检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
