烤蛋糕

• 1/2 cup butter

; b1 j7 X$ { }• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)

• 4 eggs, well beaten

PREPARATION:
+ m0 t/ d4 m( |, b2 O# A6 {$ HBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 0 ^9 {9 r1 ]8 g
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. 9 C5 T+ _5 |" H" u
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.& a( |4 a" g% k$ b: V( w

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。- c# C' T3 [& f" S. d
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
