烤蛋糕

• 1/2 cup butter

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
; w) d: l* E j5 o1 o# L, c• 1 1/2 cups sifted flour or all purpose flour (former is better)

• 4 eggs, well beaten

PREPARATION:
' f# g/ t S+ w* e9 A* e+ F8 vBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
; B& t* a6 ]% @# @Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. & E1 Z! E$ u, h
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

( R: x5 i' ] I# E( G这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。2 j8 ~3 Q. B, i( V3 z- D
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
