INGREDIENTS:

• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)

2 S$ G5 C9 O x2 T7 ^* V: B* M• 4 eggs, well beaten

Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 3 _2 M4 d8 Q* o( }" n: r
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
7 s% e8 I: D, g% HBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.1 ~2 t3 l g! @$ ^% T
, u, O2 m% j! D9 _For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
