* 2 big halibut steaks/ e$ E6 X) \3 c8 W; ~( Z
* 2 tbsp olive oil3 \- Q8 k9 p: o' i" i
* 1 tbsp butter8 l# ?, f7 z: i, d; I+ G$ C
* 2 cups sliced chanterelle mushrooms, b2 v% ?7 d8 w& N' e
* 1/3 cup diced roasted red pepper

* 1/2 cup water1 p& y$ e, D' r/ L. y
* 1 lemon, juiced, @* L5 y. w- Y8 s

* 1 tbsp minced fresh tarragon

Step 1 ; K( i, q2 b' H6 O8 B3 e
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned. : \+ m7 f4 f" F

Add 1 cup fresh corn kernels,
- R6 _7 W9 b) L$ nand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.
