Ingredients

* 2 big halibut steaks# ` G/ W) Q* e+ t
* 2 tbsp olive oil
1 `' e+ E1 t, } * 1 tbsp butter
- [& T# c, P; } * 2 cups sliced chanterelle mushrooms5 u8 I( Z: V( o% J7 |2 X y n
* 1/3 cup diced roasted red pepper' o3 I, |$ A0 f. e$ C" E+ X8 D
* 1 cup fresh corn kernels; a0 h! c. L/ A) ]) U/ w
* 1/2 cup water

* 1 tbsp minced fresh tarragon

Step 1
" k3 b! V0 a7 ~* t8 L3 `# eSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Add 1 cup fresh corn kernels,5 V* o3 A [+ ~4 U+ }5 D
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. 2 w3 J; g R& {4 S- Z8 W2 @" ]
Step 3
/ Y6 C7 `' [7 ~6 b8 {Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.5 U8 Z8 y% Q- S( Z3 a9 f

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
