Dark rye flour: 3 cups

Fennel Seed 2 Tablespoons

搅拌揉好,用保鲜膜覆盖,室温下18小时-24小时3 p2 O7 l" q+ p' _$ ^" h
取出来折叠成型。放在和烤盆同样大的盆里,覆盖,继续二次发酵2小时。注意:发酵盆里要放cheese cloth 上后撒大量的面粉(因为rye的面团非常粘)/ ^" B8 t( X' Q* J" O; ?) W

4 A1 v( W4 P8 @4 u r0 t% Treduce to 380 华氏,and bake with lid on for 60 min

Broil for 3 min until the crust turn brown' d0 ?6 q R& M3 G7 R* |6 s
测试面包心要91摄氏度以上
