Beef with Broccoli

Beef with Broccoli5 G" m. r* x/ [
Serves 3 to 4

$ a9 C3 G: C6 ?# i3 k6 G- W3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
* q  \! h; m7 M8 ]- G: w: w( ?* ], c1 O, R1 }
Marinade for Beef: $ k) R' o+ O# X- l9 C. I# i
1 egg
9 X. p0 k, f' U# P' x1/3 tsp (1.5 mL) salt) o- U* x# F% W4 n6 m7 S" U
1 Tbsp (15 mL) cooking wine, x8 }, G7 Y# b: C5 B
1 Tbsp (15 mL) cornstarch2 t/ G4 f: t; j$ x
2 Tbsp water& {3 Y3 e8 o9 Q+ m

- K( `. B+ a# E8 H. T1 x7 Y/ I1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices2 O! {1 R# J0 w* r5 X
1 cup (250 mL) cooking oil
+ G* \* A4 y/ a5 y2 1/2 Tbsp (30 mL) oyster sauce
' X, Q$ x/ a$ [( f+ A, G- Z2 Tbsp (25 mL) light soy sauce
/ t1 |; Z, f# z% A0 c- O3/4 Tbsp (10 mL) dark soy sauce
( W; n, o8 {* u; _: Y3 ]) U1 Tbsp (15 mL) sugar
5 k  g! X# T3 T2 aa few drops of sesame oil
1 l) S6 }2 }6 L6 w4 |2 cloves garlic, crushed0 u( I  a9 V; z* h4 E: ]4 d4 _
1/2 cup (125 mL) chicken broth: q3 d. Z' ?- Q
2 Tbsp cornstarch (if desired)5 m1 c' v6 `, }6 H$ d

1 w7 l( J* ~7 G& u" F$ D5 kDirections:7 T+ b' r( m+ ~; }" G
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
, {. Z/ c1 F) X/ K7 hHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
5 w% u- `* `8 m; x- r  WAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
8 V+ t. r# n' Y) @& r, n. B/ \Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
; N/ W; G/ z2 H8 p  O*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
