Beef with Broccoli

1/3 tsp (1.5 mL) salt

2 Tbsp water

& k" A# @* a! [$ ^1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices- O- R3 i, w* I6 Y7 [
1 cup (250 mL) cooking oil
+ V0 r# \2 D* x# ~* n2 1/2 Tbsp (30 mL) oyster sauce6 G: ^1 t, {' L" _# C, d3 ^
2 Tbsp (25 mL) light soy sauce
. }/ @, _" {0 \9 m; z3/4 Tbsp (10 mL) dark soy sauce1 h' A6 B; j6 |: W/ w+ [. W: Q, U
1 Tbsp (15 mL) sugar$ r0 Y' M b( J; N' t
a few drops of sesame oil
' u+ q9 G9 s+ X$ J( \5 W: i2 cloves garlic, crushed
' R8 O2 W" | Q2 W4 t% I1/2 cup (125 mL) chicken broth
) Y' j5 m% Z& v$ F6 c4 n2 Tbsp cornstarch (if desired)7 K8 d2 b1 u- M! f' B) X

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. . {+ V& W' b3 d5 D
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel., Y. K" n l- S$ s4 i$ t+ J
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
9 k5 D% ~6 e" N) F" ]* k8 sHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.
