Beef with Broccoli

Beef with Broccoli

$ ^. X* A! G* c4 w' |3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces: A- u4 A. ?" p1 s

' ^9 K% ^% ^9 D; x5 z- {  C1 egg   a% f# L7 F; t* p
1/3 tsp (1.5 mL) salt
  W4 G( {& j9 U& H' n1 Tbsp (15 mL) cooking wine
. z1 w" i( V1 Z# Z1 Tbsp (15 mL) cornstarch5 k3 j! O. c) s( }
2 Tbsp water$ J" N  p9 u+ x  Q$ {% Z' _

1 1/2 Tbsp (20 mL) oil
1 A6 g: q; `  J8 O
: r" B" Q) U, {9 X% x4 s1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices, T1 _. O6 }0 _+ C5 x9 p
1 cup (250 mL) cooking oil' s* N6 l0 c% U3 c" ^1 J+ l" _
2 1/2 Tbsp (30 mL) oyster sauce1 n- B7 O# f! S( x5 T( \3 T; e% l
2 Tbsp (25 mL) light soy sauce
8 e4 O0 U; W( j9 B0 w0 T3/4 Tbsp (10 mL) dark soy sauce
$ o6 S  M+ ^/ H1 Tbsp (15 mL) sugar3 w* b1 S* r( t8 w6 f! l
a few drops of sesame oil* N4 @7 K3 i2 x" g1 J
2 cloves garlic, crushed
3 ~0 H( w0 z2 i; b/ M1/2 cup (125 mL) chicken broth
5 i" {1 b9 _- O2 Tbsp cornstarch (if desired)
+ t; D# U% U& ]  p9 @: d
& c1 x) v1 V% f$ FDirections:
9 m# t5 G+ y5 CSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. + R/ z7 ~6 S7 L! V* Q5 F
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.5 ]7 z0 r+ V6 C, R; D5 X, T
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ' v+ ~2 r$ T( Z% K) H
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
