Beef with Broccoli

% w( n8 v2 b/ c+ ]3 P6 I3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef: - E# K3 k* Q% h
1 egg
( `! W; \* a2 v+ @4 W/ f' d6 V1/3 tsp (1.5 mL) salt
( n: ], G! d( N0 J- p1 Tbsp (15 mL) cooking wine3 {: X1 R  o1 d/ _' w
1 Tbsp (15 mL) cornstarch
& \* |  b1 K, p2 Tbsp water
$ H" X- `" |% Z" e: _: A7 V
- ^/ J  I0 U: r9 q# j9 Q# {) p- h1 1/2 Tbsp (20 mL) oil
% L9 x: o( I  n$ w' B8 F5 d* G( n/ f
( N  W, }! ?- S2 A1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices  w% W& X1 Z1 V1 E: x# J
1 cup (250 mL) cooking oil
+ h& P; b; C* x) @; w2 Z9 S3 X2 1/2 Tbsp (30 mL) oyster sauce
! n# W% {9 @: T& z* s2 Tbsp (25 mL) light soy sauce
3 S$ Q0 X2 ^! p: y( P3/4 Tbsp (10 mL) dark soy sauce
3 o0 Q1 j  H4 F1 Tbsp (15 mL) sugar8 G! ?( e* R& X% ]
a few drops of sesame oil* X/ [, [4 J7 ~  }) W
2 cloves garlic, crushed/ w+ U  M$ y" @
1/2 cup (125 mL) chicken broth
& K6 D6 h5 A- L+ ?- D) ]7 g2 Tbsp cornstarch (if desired)/ j* J6 @( [: j# L

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. , G, m2 o* p7 a. s
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
. w6 A( K0 |' v1 A+ u( k7 zAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  0 O: y6 w3 f- {! E" c9 z3 d4 K
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 I5 ^; }: P* T1 Y. x

; y+ t' Q& {; k; t( b*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
