Beef with Broccoli

Beef with Broccoli

Ingredients:) t! U) m. o" H4 P% Q  a& S. j
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
/ D1 n  l0 H& S9 {- F0 o: \* I, `& P% I9 `7 q- G) R! Q
Marinade for Beef:
! i/ c0 d$ S1 T# Q& [" C1 egg
7 ?5 n( H! F. P3 L9 R9 ^1/3 tsp (1.5 mL) salt$ R2 U" h9 \4 G6 U- ^4 b5 N
1 Tbsp (15 mL) cooking wine
  E% Q% _6 E- R" v0 ]2 \. G1 Tbsp (15 mL) cornstarch
, p; V9 U; i" N$ S) N7 Q2 Tbsp water
6 }# H2 T7 T. l  D- s0 J: w* a# e& l* N7 b. K
1 1/2 Tbsp (20 mL) oil0 K- F  E- v5 o& E' b

6 v; w, `$ `/ k$ V$ U: w1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices6 [' A* G' j2 x2 u
1 cup (250 mL) cooking oil0 L/ v) \1 ~  O1 ^: w
2 1/2 Tbsp (30 mL) oyster sauce
6 x+ z& U$ p( L$ z  k% l1 \2 Tbsp (25 mL) light soy sauce+ m8 _' R/ z: Q+ G6 _* |# h
3/4 Tbsp (10 mL) dark soy sauce7 m6 o: I) ~( m; L% T
1 Tbsp (15 mL) sugar
, |7 \: |5 T4 `( [5 [4 Ha few drops of sesame oil+ g3 C3 D+ p* g! u) i9 y! e8 B
2 cloves garlic, crushed7 k! s  @* J4 Y7 o" k3 }8 r
1/2 cup (125 mL) chicken broth
0 k4 l2 t+ C2 [& M2 Q2 Tbsp cornstarch (if desired)

# K0 {/ I: M8 |& [9 E; U- y! ^Directions:
/ ?% f& R* R/ \. SSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
$ u$ i) }/ z* S7 }6 KHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
. z7 d, z4 y+ P9 y2 z; rAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
: D/ J* x, m; f! eHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
