Beef with Broccoli

Ingredients:
( ?& M6 f0 F2 [$ Z- e3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces; @% Q2 `, K$ {  S! l' U; {: i( |' y
7 C, w: `3 D; x% L7 e, _, j
Marinade for Beef: 8 h8 q0 ?5 q  V
1 egg ( H& \/ R- W. j8 ]5 T8 X+ T. y
1/3 tsp (1.5 mL) salt
6 M/ m1 k, L: I8 b8 l! _1 Tbsp (15 mL) cooking wine3 Z& d: L- }/ L- k
1 Tbsp (15 mL) cornstarch. E* T& N$ n1 |; {( _; P
2 Tbsp water; I9 H9 V7 [4 T9 a
. H/ c+ x, g& F* q& M+ b
1 1/2 Tbsp (20 mL) oil3 l, t" B" I2 V% t' T8 D, g

' U$ `9 c' @6 F9 O8 L+ X1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices: n+ @& {, U; t. F# C$ y; _
1 cup (250 mL) cooking oil
( N6 d4 L/ Y2 \5 z8 v1 J) [2 1/2 Tbsp (30 mL) oyster sauce
' o, k; N$ A* g2 Tbsp (25 mL) light soy sauce
' `0 g7 @/ q+ c3/4 Tbsp (10 mL) dark soy sauce2 D" U8 I+ R/ P  Y- t
1 Tbsp (15 mL) sugar% r1 U3 `% y* z0 M! ^. {7 p
a few drops of sesame oil
. o" ]! M/ C, G" a" v5 F) @2 \2 cloves garlic, crushed& X9 |! m: X  I
1/2 cup (125 mL) chicken broth) k% z* Y9 S: Z2 R# ?4 Q+ |- q) G8 h
2 Tbsp cornstarch (if desired)

# X8 j# i0 R, n% v( JSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 1 `$ U/ D8 p( G( @; v# \# F
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 W2 K5 Y* u8 ^/ K) X9 u9 J
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
0 Y1 a2 m: n4 T9 r9 DHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

/ t4 n; V2 y1 L" [+ u0 ?( j*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
