Beef with Broccoli

Beef with Broccoli3 U- R2 g( C# u0 _, u5 q+ N% a

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces; u% Q' W3 Z  K4 Z- I, U

; N% `# Y* U' T, k& I' F6 OMarinade for Beef:
( _* o4 }1 f" K7 {+ u1 egg 9 T1 R( Y" p) f, p# l
1/3 tsp (1.5 mL) salt
; b  d( k8 }8 n( [% t: ^. S- W1 Tbsp (15 mL) cooking wine
, W6 }/ \. ]6 U& Q' M% C3 U+ j3 x1 Tbsp (15 mL) cornstarch
. S5 R: L5 h0 x; A$ d8 Z8 k! F2 Tbsp water

$ N2 I  S: a& G* h  T* r1 1/2 Tbsp (20 mL) oil3 A  C  Y5 s9 V. `! q1 @# V

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
* g# A2 X1 f% u1 cup (250 mL) cooking oil
5 e# ^+ m" e, X1 D( l  @2 1/2 Tbsp (30 mL) oyster sauce
# U# k  n; R: `1 o* k2 Tbsp (25 mL) light soy sauce
% U. D% o' T) k8 e3/4 Tbsp (10 mL) dark soy sauce
! {+ s# F- s1 a5 t/ R8 [3 s1 Tbsp (15 mL) sugar1 p; z' K/ K1 q( ^& a
a few drops of sesame oil( x. D. J& ~- u. v5 K- n. w
2 cloves garlic, crushed
2 X6 T( E# s9 K; r0 Z* J2 k9 U4 f) y1/2 cup (125 mL) chicken broth
' s$ K& H% Y3 A" I. r6 s) \' o2 Tbsp cornstarch (if desired)
. a8 `! Z- o3 @3 i/ o% L+ L) Y5 E- V. D1 x' \9 \
Directions:5 T' o/ s% q  Y9 P# O  [
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.   u5 G% g% n2 @) v7 ~5 C
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel./ @% e; f# o" p: G
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  : `9 m# B- w& Z4 G4 F
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

  W3 e! A. P7 @3 e3 R/ ^9 ]7 i*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
