Beef with Broccoli

Beef with Broccoli. Y9 J* E. l9 l5 Y5 P
Serves 3 to 4

# W' z. i# j3 P" R6 E: OIngredients:
# k2 O: ~1 H% p7 w8 ^- w3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
$ T9 s4 A( `$ q1 k9 S: t6 T3 W- }& F. G$ S
Marinade for Beef:
4 l3 @# X1 P2 ^8 }! X6 b1 egg
2 A8 t  p$ D% d+ `1 c4 k; T: d% l1/3 tsp (1.5 mL) salt
6 \* ^) Q# b9 e1 Tbsp (15 mL) cooking wine/ p0 V( W5 [+ K
1 Tbsp (15 mL) cornstarch/ Z' Z* u$ ]& z& o$ i8 N9 B' g8 ^7 }
2 Tbsp water# X8 F/ I$ B& A+ I! G& C0 ^6 I
5 X- d# r6 E0 P, M5 ]) B8 U- g
1 1/2 Tbsp (20 mL) oil
% Z- a7 y& q5 _7 T0 Z
* \, M0 F; k2 J; ]5 Z" ?' M/ o' H: i1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
$ y: L% M6 |0 R$ r0 ~2 z+ X1 cup (250 mL) cooking oil
* n$ b* U. y1 O, [; E; Q0 \. }2 1/2 Tbsp (30 mL) oyster sauce
( Z( }/ u  {8 l6 \2 Tbsp (25 mL) light soy sauce
5 U/ W2 {6 ]2 [& b& y9 h5 C3/4 Tbsp (10 mL) dark soy sauce
  F4 q/ q/ i* m9 o" ?6 h1 Tbsp (15 mL) sugar* o1 p6 A( Q" M5 Q
a few drops of sesame oil( t8 @. u. _/ S% D2 I
2 cloves garlic, crushed+ I# d% W* d( [# v3 I& P6 z" v$ l
1/2 cup (125 mL) chicken broth
' j* Y5 _2 L6 {2 z1 O" q2 Tbsp cornstarch (if desired)2 V$ \) B- K! ~6 @

Directions:1 d" Y, E; l% ~% y# f) q  ^
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
/ N/ q1 O1 E8 _% V7 ]+ b! I7 M& tHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
; N5 x8 v$ j: f3 j7 G* |/ I5 _. ?9 I% QAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  $ s+ P/ L, x8 d/ g5 l' y. Z& v7 |
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.( o$ ]- n/ w& S" d

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
