Beef with Broccoli

Beef with Broccoli
/ Z+ }& n6 S; b. t4 V8 ^; GServes 3 to 4  a3 d' e8 `2 d# k- O1 D' v; d

Ingredients:
! a3 D6 h2 W3 s7 o9 o. f" K1 c3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
( O. V/ l- {+ i  N  ^; f* g" L
+ ?/ B5 C; j* I' BMarinade for Beef:
' C4 k" g, V. s# c& }! _+ X5 i, s1 egg
" V: ^. n( H! b4 `" n& ?1/3 tsp (1.5 mL) salt1 t  k1 A1 J' x, F6 r, p5 {6 P( x
1 Tbsp (15 mL) cooking wine" a3 m- v3 b0 U+ W+ R$ T5 m) T; L
1 Tbsp (15 mL) cornstarch& Z; x5 p# P- |) E
2 Tbsp water+ g) R" M* ^: {2 b6 o1 t; B# y' W

8 L$ W7 ^, z. K# n. c1 B1 1/2 Tbsp (20 mL) oil. A9 P$ ^  o1 X& P) `

/ U2 O- g" d( y! |' ]( L4 T1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
( _! B4 u' h" J- O* i  x/ e" }1 cup (250 mL) cooking oil- _2 d8 U& A8 m; K3 p# E+ N; f% u
2 1/2 Tbsp (30 mL) oyster sauce' E$ T' ?1 f3 d  Y& a
2 Tbsp (25 mL) light soy sauce( I9 c( A1 Z6 g. n' m. ^
3/4 Tbsp (10 mL) dark soy sauce
5 N, V1 K4 f+ S! P1 Tbsp (15 mL) sugar& ~6 u) g2 M  K5 h, [
a few drops of sesame oil; {' o4 X. b0 g9 g1 f% V
2 cloves garlic, crushed; w' P0 k% q( F5 @. h
1/2 cup (125 mL) chicken broth* W; H! R, y' D  L6 Z
2 Tbsp cornstarch (if desired)& A7 E6 O8 Y6 \# _  u
4 ]  i- c9 k0 A# T. ?+ Q! i
Directions:" l! e) W" O4 |7 F9 s
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ' e  [9 y! F# j) m* H
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.# w2 N" l* h, n
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  : I: p' [) H& }5 U! R
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
