Beef with Broccoli

Beef with Broccoli! U/ D. F6 H, K" t* W6 h% e: y

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces& C. ?/ a" p% Q$ h/ o5 r
6 x. x& P( p, r; t% V4 Z
Marinade for Beef:
" }! \5 P4 N% e0 h3 T1 egg
8 n' B4 x* n; E1 B# f; d/ \* c1/3 tsp (1.5 mL) salt, E1 F5 k1 Y/ U# U  ~- @9 a
1 Tbsp (15 mL) cooking wine
, u2 e2 n% }2 n. h1 Tbsp (15 mL) cornstarch  l" ]! J$ m9 q
2 Tbsp water
' D( o- G( ]* }$ ^' |" i+ P, L* W) w; @& j) N' l! u" E  L
1 1/2 Tbsp (20 mL) oil
: M; S7 p: }3 |7 l& L$ t# {2 C1 G! Z" P6 S& o: {
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
6 y& F/ [: B0 }1 cup (250 mL) cooking oil
3 d+ c- S' a! k! a9 |2 1/2 Tbsp (30 mL) oyster sauce- \1 E# g5 N; [4 y$ a6 l- C" o
2 Tbsp (25 mL) light soy sauce
2 u9 N* q0 n  N. J) c! t& A3 T3/4 Tbsp (10 mL) dark soy sauce
2 d' O4 v% C9 f* ^+ q2 K1 Tbsp (15 mL) sugar
. N5 U* R. C2 J6 _! c- Oa few drops of sesame oil
  v7 V. X% Y4 F& t( Y7 A' {) l8 m2 cloves garlic, crushed8 c2 q" O9 `2 s1 q: ~0 E$ y6 g( Y) b
1/2 cup (125 mL) chicken broth
" J8 b% w" s8 ]0 w" a2 Tbsp cornstarch (if desired)1 m7 W2 Q- R" }& R: P1 m

" `! Y0 U* n  J' \Directions:
, i8 \2 ~: r/ T) g& DSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. : Y+ R9 H6 |1 G/ B
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
* n$ N  C! H0 _1 c- JAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
1 E7 n) X- ^  AHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
