Beef with Broccoli

Beef with Broccoli

Ingredients:
% h7 ?" u2 E- Y# n9 Y& J3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces* D/ H  ~6 i" e' O
0 g2 U* B0 l! q# U! x5 L  C
Marinade for Beef:
  w5 h  O1 J' x1 i1 egg 2 J/ B- h* V, ?- h% L& }4 C) c, d" Z
1/3 tsp (1.5 mL) salt( B% t3 d- \' e  a4 g2 h8 Y
1 Tbsp (15 mL) cooking wine
2 q, n& r. ?  B- S1 Tbsp (15 mL) cornstarch) [1 r. |% Z/ B9 O
2 Tbsp water
0 I8 L' Z5 Y7 t7 V: g! G5 l0 m# _8 ~/ i: W0 `4 ~) I
1 1/2 Tbsp (20 mL) oil" z! T9 S1 @4 J! n1 i$ {/ t* m' w

  I; y% W8 i4 [9 {* D- s1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
- e$ y; s: ]5 E* }9 r. p1 cup (250 mL) cooking oil
1 z" d8 n, k+ k2 O2 1/2 Tbsp (30 mL) oyster sauce; E; E' L& O: f
2 Tbsp (25 mL) light soy sauce
- H( ~; ^# Z3 J  b, \0 z$ V3/4 Tbsp (10 mL) dark soy sauce% H- D1 n7 V3 @
1 Tbsp (15 mL) sugar6 |" _/ D; \1 M
a few drops of sesame oil
* {- V1 y. t: U2 cloves garlic, crushed& p) z. z% y( w/ P' o0 T
1/2 cup (125 mL) chicken broth
4 U$ E" M( b5 U1 e' u% J2 Tbsp cornstarch (if desired)
/ \  Y" L4 F- g; n/ p( |$ x$ ]' C- D& l4 E2 N# Q/ y% ]+ F& p: }
Directions:% W" ~/ ]; ~& |- G- ^. Q) I
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
  L; W6 p' R0 H# ~( |Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.4 q2 |( z. y; `' i$ H8 ~% P
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  & a0 ~9 }, y- s
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.- i7 P* w' D8 C" b7 ~4 B" H

% q  Y% f# l. |! l, K, }*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
