Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces* o2 f% k( }, J$ x7 s3 e

" M" x& c# W' @% m6 r4 N4 S' c6 ~- ^Marinade for Beef: ' Q% _& `2 _6 V
1 egg
; n: I5 h7 h* v, O( K1/3 tsp (1.5 mL) salt
$ m" U9 \7 N" m' m/ r5 i) G1 Tbsp (15 mL) cooking wine5 D) \4 K/ F  S& C. A8 |  i
1 Tbsp (15 mL) cornstarch, `& {9 E, {" `- U3 R  a
2 Tbsp water
" F! Y5 C1 ?  x2 k* Q# c, ~; r' D  y9 C/ M
1 1/2 Tbsp (20 mL) oil
' O; O; ~  [' o& e/ i9 k. m& i- W; ]( ]; M1 F3 _
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
3 u3 j2 o# s9 l% ?6 y1 cup (250 mL) cooking oil' R: U" c! y1 ~  c( L5 _
2 1/2 Tbsp (30 mL) oyster sauce1 c: s4 E1 e7 T! K- {
2 Tbsp (25 mL) light soy sauce# i4 N7 d0 l0 J3 J' {1 h( l; x" ~
3/4 Tbsp (10 mL) dark soy sauce
) o1 F! H9 Y+ \& Y0 F# ]9 g1 Tbsp (15 mL) sugar+ X  e- I5 b7 c5 Y0 N9 T3 \& V
a few drops of sesame oil. V* k9 i) Y) O+ _. ]
2 cloves garlic, crushed3 {" M. ]4 j( q9 T, Y( _+ M
1/2 cup (125 mL) chicken broth
* Y0 e  R3 N! l2 Tbsp cornstarch (if desired)' n2 }+ a4 Y! R& b$ W, w/ n- P0 [, a

+ I3 t% C& Z1 i$ q, f: {3 g1 M9 S  V3 ?Directions:
  Y+ P& C. f7 USlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ' m% I) A, x+ P6 \3 C9 _
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.9 s1 y6 N' _0 ], u, t) t
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
, ]0 c# Q" Z$ ]( ~Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.( U5 ]( p, P9 D( q" k' A4 [

Variations
  t& q+ x0 y1 Z# z7 X*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
