Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces+ S! s: X% {$ ]( |# C

Marinade for Beef:
% H( W2 P4 C1 \' O1 egg 5 O9 a: Z2 Q2 E$ P+ r
1/3 tsp (1.5 mL) salt9 S0 j1 j: i' u9 _0 Y' h
1 Tbsp (15 mL) cooking wine! j4 x# ~! F  e( P  W7 ^
1 Tbsp (15 mL) cornstarch9 B+ t* V$ D; }# F: r! t0 y: B4 W
2 Tbsp water8 j/ v; z% ?9 e& a
" S8 w) N/ f6 C; ^3 L2 E
1 1/2 Tbsp (20 mL) oil
* m( G: k6 x/ T' A/ }; z4 @
4 e& h  t  }3 l1 r3 @/ e) y$ v1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices  Y8 Q! X2 ^. O
1 cup (250 mL) cooking oil( x/ V( l5 B% z1 X$ |
2 1/2 Tbsp (30 mL) oyster sauce
5 k2 F# B1 O1 [- p$ s2 Tbsp (25 mL) light soy sauce: _! N/ w+ F1 d' i
3/4 Tbsp (10 mL) dark soy sauce4 C/ H# g( `( X5 t2 f1 s. Q( M
1 Tbsp (15 mL) sugar
+ C' ^% L5 y; F( R! ra few drops of sesame oil
# S% s7 q* P4 Z. H; C7 @/ m, E+ ?9 |1 J2 cloves garlic, crushed* o+ a/ {5 F, p
1/2 cup (125 mL) chicken broth
5 ^$ S* i+ [$ o+ w% ^2 Tbsp cornstarch (if desired)1 D" K1 Y. [" C* |7 ^
% k0 H& e4 x0 [* x* z" q
Directions:
) L% y- ~8 g# r9 dSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 7 c5 p  y3 z: W4 A9 {: G0 o" d
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 R4 V2 f8 A8 t/ E  m
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
- y' g8 F* C! JHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot., D; R" P7 b. v5 M) J: Q0 Z

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
