Beef with Broccoli

Beef with Broccoli

9 i/ D' c7 x" u% G( R% n/ }$ x3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces: z5 a  f" D. w+ @1 ~! I) Q

Marinade for Beef:
: v: h2 f1 Z' u( f1 egg 9 o; T3 l$ J$ G2 T
1/3 tsp (1.5 mL) salt
, l) X, V* P0 U2 t9 Y! S  r7 K) S1 Tbsp (15 mL) cooking wine6 c) T# q6 |- k1 G/ n! r+ w+ k' m
1 Tbsp (15 mL) cornstarch
/ O* ~) N! u$ @! k" A2 Tbsp water
3 Z* P6 V" H8 U
0 G+ n" J) Q6 c  y, K4 }% ]2 v/ y2 M1 1/2 Tbsp (20 mL) oil
2 f+ p; i9 s1 O6 q% K
( f7 I4 a0 s, V/ s- D1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
2 J$ V) v, ^! m1 cup (250 mL) cooking oil
$ Q7 F8 l6 k7 n3 V9 }; ~2 1/2 Tbsp (30 mL) oyster sauce+ V: ^) h% K$ r7 v0 b1 j
2 Tbsp (25 mL) light soy sauce
7 `3 s8 {+ o4 g& E* I& u. W3/4 Tbsp (10 mL) dark soy sauce
  d% |. M; L8 }- b6 v; L' U1 X1 Tbsp (15 mL) sugar0 R6 }7 q: t! l) k
a few drops of sesame oil
3 D3 }) M  v  V4 o- g& ]8 l2 cloves garlic, crushed
0 _( {1 V; q* w+ s# Z5 m1 I1/2 cup (125 mL) chicken broth1 q8 D* v. K/ X
2 Tbsp cornstarch (if desired)2 }1 g* w5 q3 ~/ [2 O
, X, W/ j3 I7 g/ I  B
Directions:) v) m6 a9 t% e( J/ O
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
" n5 c& I4 P( PHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
6 t% Y, ?$ y* Q. u" r3 D' T5 DAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  0 _& W" P9 V5 F- f4 \
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
% m+ N0 z$ Y3 [8 }, p3 S*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
