Beef with Broccoli

Beef with Broccoli( i. A; R' ^6 h: p& ^. x% t
Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces& v8 w8 D* d+ z2 a& h/ ]1 r; Z; ]

* {+ c% L3 P% \& L6 Z. g) D$ cMarinade for Beef: 2 d' n5 w1 N( S
1 egg
' ^4 V' C0 @/ W1 p) |1/3 tsp (1.5 mL) salt2 Z& m- p" ~* Y) d* M9 y
1 Tbsp (15 mL) cooking wine
4 s, p. X$ P' t! T3 g- l: n. ^3 h1 Tbsp (15 mL) cornstarch
8 q9 ^7 z2 o* R0 D' ~/ Q2 Tbsp water4 R3 U- l) q: h$ d1 M0 ^3 y& i

# X$ j4 {0 o& k# N; x1 1/2 Tbsp (20 mL) oil; z. t* ?& r' D8 a& K

, p2 m, w1 p+ j4 P7 `1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices" y+ \" o5 z" Z- y1 _
1 cup (250 mL) cooking oil
6 O) H0 Y0 {& @$ q  O2 1/2 Tbsp (30 mL) oyster sauce
8 v% ]; R, g, `$ M! F, }2 Tbsp (25 mL) light soy sauce
8 F" A8 L/ E* g3 V/ i& b. s' X( O3/4 Tbsp (10 mL) dark soy sauce
! H1 V8 t1 o5 ^6 e: d; \. c1 Tbsp (15 mL) sugar" e: A% E5 I" S  H6 ^8 a! k
a few drops of sesame oil
2 `: c7 {0 ~. X3 B& M6 q2 cloves garlic, crushed5 T$ K' z7 `0 o6 w9 y
1/2 cup (125 mL) chicken broth
2 u. u) E, S( }2 R$ o2 Tbsp cornstarch (if desired)

0 B3 z, a+ m+ I( lDirections:
% k1 B' Z$ {2 L, G' W3 USlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
7 [& e( w2 c9 y: `Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
7 S/ T) j( @& K5 P" M' [) ?' U: bAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
  T" @. i: i# G6 IHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 q8 ]+ A6 B2 H# L7 q

Variations
! `! ?6 _" l) A) d" s! w, r*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
