Beef with Broccoli

Serves 3 to 4

Ingredients:
6 i  e8 {4 y: ?. h3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces0 g7 C& j( @. l4 {3 Z6 C9 X8 |

2 Z) o2 Y8 k$ P! ~& x0 a4 s1 eMarinade for Beef:
8 }7 m9 ]% t* }" W4 e0 i1 egg 9 p% w7 W- |: v
1/3 tsp (1.5 mL) salt
' C. d$ ^, h1 w/ {% m& b8 R4 X1 Tbsp (15 mL) cooking wine
7 M+ I2 B8 i+ V& B2 j; S. @1 Tbsp (15 mL) cornstarch* F! m2 I  b3 k& e! J. w
2 Tbsp water8 Y3 c# u& T6 j; @

- p$ i' Z: o: n( G1 1/2 Tbsp (20 mL) oil
+ q& _3 C0 b" k  h0 b4 `2 d
. h' w! W+ N- |5 l1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
; d* |$ |9 Q; D* y$ b1 cup (250 mL) cooking oil" g. c# ^4 I2 d
2 1/2 Tbsp (30 mL) oyster sauce
" P) N; A1 X, T2 m8 W  G3 h8 x2 Tbsp (25 mL) light soy sauce
1 u! z: G  D0 S' s. f. l3/4 Tbsp (10 mL) dark soy sauce  _3 M! _, [6 h: H
1 Tbsp (15 mL) sugar
( l9 c3 D8 b' m) }' V6 ia few drops of sesame oil4 ~1 W( O, D, D6 e
2 cloves garlic, crushed  C7 U' n1 B& K1 s0 \
1/2 cup (125 mL) chicken broth
, Z" ^6 |% U. I2 Tbsp cornstarch (if desired)
+ B' R+ y0 L& o4 E

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. - ?/ o" U9 U( I) Q
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
( q) G  p  ?0 w7 yAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ; L  ]" `& d! }" W& {+ a, U
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
& \: L; F3 v- r9 h; ?*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
