Beef with Broccoli

Beef with Broccoli. Z2 q2 d& m3 j9 |/ R
Serves 3 to 4% M+ O8 L4 y5 I( }! a' _

  V; U% O) j3 H" ?& U+ j- f3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
1 o7 o! B. I+ q& i$ K) e% S8 h3 h" ~/ [+ c+ G
Marinade for Beef:
4 `3 O$ r8 G1 I+ ^* R( _9 Y& |1 egg 9 \) @6 r' @" `& `
1/3 tsp (1.5 mL) salt9 c' ~' I. D- z) Q
1 Tbsp (15 mL) cooking wine
" Z+ s+ G2 K# c1 A2 y+ a$ M1 i1 Tbsp (15 mL) cornstarch; y  m( @" a4 s# [
2 Tbsp water* ~  ~4 T; }% [: j1 W% J9 }! k

% i. q% t& Y+ j5 y3 ]3 V1 1/2 Tbsp (20 mL) oil
# `3 [" ?" ^8 E; k
( w% K# K* }* X1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices, W7 M/ S  T$ l/ m7 m
1 cup (250 mL) cooking oil/ U' n! [$ L0 Z8 e6 m
2 1/2 Tbsp (30 mL) oyster sauce. p2 o0 h" V  _* h3 P
2 Tbsp (25 mL) light soy sauce! a3 d( K( `/ y2 v
3/4 Tbsp (10 mL) dark soy sauce* O. e3 H$ Z9 j, s
1 Tbsp (15 mL) sugar
( Q+ N& ~% Y9 |! G# C4 r! ga few drops of sesame oil# E4 g3 ?# P8 R( K& W( C
2 cloves garlic, crushed
  u! J& j: |# H1/2 cup (125 mL) chicken broth+ Q# ?! q3 I' C( k9 j
2 Tbsp cornstarch (if desired)
9 Z5 G' b  d5 K# S( E# f1 o. k, m# M5 k6 |% T2 O1 I4 B' q1 P3 [
Directions:) U: I1 o9 h6 O4 @, o  M, Q
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.   D+ S# e1 ^: @4 _0 ~- b% @
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel./ W2 R5 a( w. _3 {0 D% R7 k
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
( h9 _8 W- b% e+ y9 a- L( A" THeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
* e  N1 Q! w' I* P* |3 d1 {*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
