Beef with Broccoli

Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces3 T, S1 F! y3 d/ @2 O4 U+ `

& q$ S  Z7 J  d: [Marinade for Beef:

* q- `+ \1 Y$ G$ f9 |. L: \1/3 tsp (1.5 mL) salt
; V$ s9 t1 P( y/ ~/ [2 o1 Tbsp (15 mL) cooking wine2 k/ j9 A& C' k; L" G) n7 C9 M
1 Tbsp (15 mL) cornstarch
( Y3 r$ t8 A0 }$ k2 Tbsp water1 Y  }. ~; N6 U: i' u& B
5 S6 g8 @& i, ?) F
1 1/2 Tbsp (20 mL) oil
$ }, S; v) z9 j# r. [; u& R3 K% c6 ?( F$ J# B
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices' Q9 O0 i( |+ L
1 cup (250 mL) cooking oil. M# V! S3 L* u, a" q: y1 }
2 1/2 Tbsp (30 mL) oyster sauce6 l% r) I; q# ]  U5 H1 A; [  t
2 Tbsp (25 mL) light soy sauce
9 J4 X, c' w" B$ h3/4 Tbsp (10 mL) dark soy sauce1 _, ], B6 H+ K6 y
1 Tbsp (15 mL) sugar. S: q) C  g" G, R4 a# h
a few drops of sesame oil
% o( q) E% B+ @3 d/ A) _2 cloves garlic, crushed8 o* ?2 {( x1 O: T
1/2 cup (125 mL) chicken broth
. `& E7 c+ C9 L3 Z2 Tbsp cornstarch (if desired)

$ k' [- ^5 T- a1 H- C$ qDirections:
" _2 D. `+ d; E& {! C7 b1 K6 ?Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 1 r# m/ U! ?) z  ~
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
5 h1 {* ]4 z6 ]5 GAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  / \& y6 ?: T( s% x( h& s8 p, }
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.8 s& d: m! O  O8 K/ g. C

Variations
5 ^+ w! ^; p$ S5 m& u, s*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
