Beef with Broccoli

Beef with Broccoli

Ingredients:
& R! T+ W* d$ L' n( G3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces! p, \1 b2 E4 {7 y1 \1 h" S3 W

* H9 x) C6 u9 c  k, B3 xMarinade for Beef: $ F3 N/ l+ e$ O6 }' I
1 egg 1 ]4 ?; |+ N5 p) |& [/ l
1/3 tsp (1.5 mL) salt4 K$ _; f6 ~1 c- e& k( W
1 Tbsp (15 mL) cooking wine5 Y. y" K; q% @% r
1 Tbsp (15 mL) cornstarch
/ f- U1 O0 l& I2 Tbsp water) l, V, C/ ~/ ^* a5 f$ ]4 _

8 v* y* \: N" k* R1 O  U1 1/2 Tbsp (20 mL) oil5 {- f) e4 Z9 N

$ N0 L& {# q! L2 X) O8 w. Z- Q1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices2 P8 |8 t: T0 h/ f
1 cup (250 mL) cooking oil
2 o# O  B# b- h% N) k2 1/2 Tbsp (30 mL) oyster sauce
) U0 e7 q6 c; X$ }5 r# o- u2 Tbsp (25 mL) light soy sauce
% e& g; q& w+ k; u* s9 c3/4 Tbsp (10 mL) dark soy sauce# {9 O) N9 L. Y% M( O9 t
1 Tbsp (15 mL) sugar
1 S% y( Y8 I; v8 {+ ?a few drops of sesame oil
% ?6 G, i& l* s  D0 M1 r2 cloves garlic, crushed
5 Z! g! G. T1 c9 p) }9 H/ \1/2 cup (125 mL) chicken broth" P9 j& ~4 H: p9 L$ s& ~! @; ?
2 Tbsp cornstarch (if desired)5 c9 T: U) |1 X) I

Directions:
, v' K( ]  H. [! p4 Y% n( f. nSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
$ A( q- r; n5 K2 c# d5 ]* @Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 {, H! j: q+ B
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
" B4 c' R1 x  s# E! i/ f6 b: f, yHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
