Beef with Broccoli

Beef with Broccoli( j! y9 s; X) T& K( P1 N  w
Serves 3 to 4

Ingredients:( n( b, Z6 ?/ e+ ^3 `4 [' {
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1 egg
$ X4 X+ R" {/ d8 ~/ Q  G: K3 S/ G  x+ S1/3 tsp (1.5 mL) salt
7 j) M3 M5 ~' E# o1 Tbsp (15 mL) cooking wine
. D3 `0 _1 r. U5 w1 Tbsp (15 mL) cornstarch

1 1/2 Tbsp (20 mL) oil4 ~. G2 ^* @  r) N

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices0 g/ X: |# Y9 p. d1 E" ^3 o9 o
1 cup (250 mL) cooking oil; U; n0 x2 o; T" r* ~" x
2 1/2 Tbsp (30 mL) oyster sauce
! g4 c, B/ Z3 v* Y2 Z6 F  |4 A2 Tbsp (25 mL) light soy sauce
4 _& ^+ }/ X& k) I: j3/4 Tbsp (10 mL) dark soy sauce/ o& u7 S2 S: y: W) ^4 c& ?
1 Tbsp (15 mL) sugar
* D9 k) j* ]2 O  }: C/ ~' Ua few drops of sesame oil
; \" D* Q0 l; W5 ?0 T3 ]9 e# a2 cloves garlic, crushed
0 A1 Q; K7 d! H( \& t1 V, R2 n1/2 cup (125 mL) chicken broth% f# v- p- ~: X6 k8 b* @% |
2 Tbsp cornstarch (if desired)7 o% v: ]1 d  z- s" W+ X9 j

& J0 [9 i: R1 q+ W8 W( x+ JDirections:) E( O3 x( l2 u2 F: @
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
  _  f' @1 r9 ~) t: JHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
% e1 s9 ]' `" `; y; K) C. C' _Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
$ _' k3 f# z, \0 qHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
