Beef with Broccoli

Beef with Broccoli

Ingredients:
" c* _  B) Z# }+ J3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

, V0 B. e2 W! T1 T# |# H) |Marinade for Beef:
: o; \3 T- o- s7 b- u) C& p9 d1 egg # g& H8 d2 N. P& @: T6 i2 U
1/3 tsp (1.5 mL) salt
6 U; z; O7 G/ n6 R, T1 Tbsp (15 mL) cooking wine
5 P. T6 V1 Y6 g: ?7 Q1 Tbsp (15 mL) cornstarch2 L- z$ J: N5 f- m; X6 T$ j
2 Tbsp water

' r0 r6 E' h/ d; D2 {' }1 C1 1/2 Tbsp (20 mL) oil
1 p4 ?; b, O( ^. H5 v1 K  P' B: G* o/ K, T* E
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
' [% ]( L$ Q/ E( B1 cup (250 mL) cooking oil
$ \$ ?$ W" e" A: C- N  j# b2 1/2 Tbsp (30 mL) oyster sauce
& ]3 _' M- C5 ^9 `2 Tbsp (25 mL) light soy sauce/ Q% ~  f. z) E9 T
3/4 Tbsp (10 mL) dark soy sauce9 N" x  l, X% N% ?8 Y( ~1 {+ \
1 Tbsp (15 mL) sugar1 ^) |0 [& a- O* b. s; l1 P0 O. |
a few drops of sesame oil
& A$ B0 @4 @5 }- P0 J; V2 cloves garlic, crushed
: P- K, q: ]8 T# m+ i* e1/2 cup (125 mL) chicken broth
1 j* T% {  x2 O( t0 o) G  g2 Tbsp cornstarch (if desired)
4 Q- B7 H! x7 o& l% o. r- H0 q! r' K0 A. h1 E
Directions:
1 o+ `3 Q) s; GSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
9 \# q; ]( s2 JHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
6 F) ?: V, X+ r$ L% N3 |2 LAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
5 I1 [7 }8 d/ X8 R" ]$ ^; {Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.  ~9 c* ]. _2 o7 t, P

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
