Beef with Broccoli

Beef with Broccoli* @# i$ s# T% Y% [9 U
Serves 3 to 4. y' V- a( t# c

Ingredients:* C4 f' u7 X( x( y5 G/ R& b% `, _
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces: R& n- b- m8 s
$ \9 o( v9 w& N1 F0 O$ W- y8 J) c
Marinade for Beef:

; w5 R5 G6 x  b, _4 n( N6 H& R1/3 tsp (1.5 mL) salt  _  [$ O. Y( Q% w/ P! `6 O4 j
1 Tbsp (15 mL) cooking wine
- q* _: }% ?" [1 Tbsp (15 mL) cornstarch
; g8 _6 Q3 e- y2 Tbsp water

7 A- I7 B3 r1 I0 g# z2 `4 ?# Z1 1/2 Tbsp (20 mL) oil+ e5 y: u" p, ^& J3 i& X7 e  i
% Z, T  B" m6 b7 p4 j8 c( j/ J; s5 l
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
3 m6 f6 M4 u" H7 S, U1 cup (250 mL) cooking oil
0 {  O3 T) X3 W4 [7 H2 1/2 Tbsp (30 mL) oyster sauce) P0 g% N1 i0 \" {) F7 q
2 Tbsp (25 mL) light soy sauce; V" W, ^4 w. f" N
3/4 Tbsp (10 mL) dark soy sauce, c6 w% n1 Q/ p" [
1 Tbsp (15 mL) sugar
. b, [: J6 z$ ?2 oa few drops of sesame oil
7 z& ]- n% G1 t- V3 s+ u2 cloves garlic, crushed
$ H( D+ F8 [! {/ c* d$ j( K1/2 cup (125 mL) chicken broth( D1 c9 L( }/ _* o" {5 s
2 Tbsp cornstarch (if desired)- q$ ]- ?1 i( L+ R( v; N

" X! u2 d- ^4 ~3 K) FDirections:
8 e, C2 Q  Z4 i3 _: d1 G% ESlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
: J+ J" v( u; @7 ?* ^7 RHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
8 e5 M% u  F- V3 T) rAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
" f5 S1 W9 |0 F. {Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.; B3 Z6 u6 k1 F2 l3 f

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
