Beef with Broccoli

Beef with Broccoli; I+ ~" c* G: \& r( u; ]  q
Serves 3 to 4

/ f: G, N8 p) T+ F: I3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

8 ?. L; s. z* a1 j1 egg ( x7 T+ g; c& h( p$ U2 w8 S
1/3 tsp (1.5 mL) salt
" D, _- p5 ~9 O7 F5 X' h3 S! b- l1 Tbsp (15 mL) cooking wine
. i# O6 p0 M3 ]. y& G$ z1 Tbsp (15 mL) cornstarch& |$ i0 x2 ^" y3 c
2 Tbsp water% P6 Z5 c! o" n  K6 M) R4 V4 u

1 G" k2 d% C. g1 1/2 Tbsp (20 mL) oil6 z3 x7 R2 |) s3 l6 f2 l" m

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices) g. ^+ k- h0 y" X/ M* }
1 cup (250 mL) cooking oil: M: O. O; c8 B/ E
2 1/2 Tbsp (30 mL) oyster sauce8 i) g( i3 z2 T
2 Tbsp (25 mL) light soy sauce
1 f1 S% W+ x0 w, G, ]5 R3 ?3/4 Tbsp (10 mL) dark soy sauce* \# T: d( b  h$ L- H! B
1 Tbsp (15 mL) sugar
( N3 A% e: n# @0 X# _) n- X9 ea few drops of sesame oil) _' V2 l* u' j$ ~0 X
2 cloves garlic, crushed, K. d* N3 l5 B% b5 _/ k
1/2 cup (125 mL) chicken broth, ~9 B% U1 M* U: Z
2 Tbsp cornstarch (if desired)0 M% X9 T+ m, K

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 9 ?# N4 }0 I* }; U1 y+ E: u' _
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.% V: K( ^0 d7 V; A) M9 M% E
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  & ^8 h' Z+ `* z1 z- d* B+ {
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.
