Beef with Broccoli

Beef with Broccoli

Ingredients:
# T# P' v, U( W( A/ z7 K3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

& F$ P# z1 `3 m6 N! b. VMarinade for Beef:
3 E) `( N, C! `* I1 egg
1 `2 [+ I  G# H' Y0 x" T9 N- S: L7 s1/3 tsp (1.5 mL) salt' P: z5 u5 O; \
1 Tbsp (15 mL) cooking wine' A& }/ F$ J! x; q* \* O. \
1 Tbsp (15 mL) cornstarch
; I9 \  P3 q9 z' I2 C: Q5 X! y/ Q2 Tbsp water

1 1/2 Tbsp (20 mL) oil

4 @! P# M! n) i4 ?1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices) k# [6 l' k2 t+ s
1 cup (250 mL) cooking oil
9 Y5 z7 ~+ M: z  Z- c2 1/2 Tbsp (30 mL) oyster sauce
; S5 ~0 D* c5 M1 b6 M1 U2 Tbsp (25 mL) light soy sauce4 M- @; D/ I7 Q  T
3/4 Tbsp (10 mL) dark soy sauce
; R# s! k' P. u5 E5 w* n: n. M1 Tbsp (15 mL) sugar
  B  c( A2 X( a: b8 @( W4 Sa few drops of sesame oil, `& b9 ^9 t4 {# u$ }
2 cloves garlic, crushed. G8 K$ k  T: o0 e: k1 D
1/2 cup (125 mL) chicken broth- w- k6 u3 Q. r0 k8 J7 ]
2 Tbsp cornstarch (if desired)
5 o$ d- Y4 N2 ?( A3 S4 X1 ^( p; C: B* J1 h5 b7 f8 s% F
Directions:1 B! f/ r' ?5 w) e9 T2 X
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 9 O& C% K4 [6 l1 @/ ]7 k7 v
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 t7 ~$ Q* o( P- M3 T3 ^
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ; k. q( n; p1 D1 F+ U1 ?7 g; A
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.4 v( N0 G. b* ?# a, Q1 }  K

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
