Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces; f6 z6 {/ `& L8 [0 |5 [

1 egg * L, c" s  f7 H8 y& [+ E
1/3 tsp (1.5 mL) salt
4 K1 C  Y2 I0 g1 Tbsp (15 mL) cooking wine3 S& ?. s/ [1 m" [& O3 b) h0 W$ s
1 Tbsp (15 mL) cornstarch
1 ]1 j4 w% L; I" m; h( n2 Tbsp water7 }9 C7 L' f! x. E1 [

$ b1 u) O! `; H" x, m) m1 1/2 Tbsp (20 mL) oil3 }/ e) K: f# l! t7 _

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices3 ], I8 n' c$ w
1 cup (250 mL) cooking oil
4 y! x- W4 z* u2 1/2 Tbsp (30 mL) oyster sauce9 x$ h9 U5 F  O0 _0 |5 V4 D
2 Tbsp (25 mL) light soy sauce% H5 Z2 O# T3 U4 R- W. Q* u
3/4 Tbsp (10 mL) dark soy sauce- R0 \0 N3 j4 M- r9 ~1 D6 J7 T% |
1 Tbsp (15 mL) sugar; O8 j3 X$ i9 P, {3 [
a few drops of sesame oil
" i- `# J4 m% A: _8 j0 J' t2 cloves garlic, crushed- z, q6 S8 T2 N; G
1/2 cup (125 mL) chicken broth/ W- W1 g8 J+ `% q- l
2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
+ T3 W2 k& ^$ V& hHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.$ K" S! a6 X( n$ D. L& _
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
; F& I6 g9 o/ Q/ ?- E6 J; PHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.# p$ i2 ^% F# A3 U' S

) D% C- W* y& n: [, u  Y*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
