Beef with Broccoli

Ingredients:
3 {1 O8 t7 G, y& B7 Y* b7 U3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces5 ?5 \1 W  Z. i/ u! X

Marinade for Beef:
! w) g& D) d1 z! C! i0 o4 H3 }4 ]1 egg
5 x+ n5 b8 B) T0 P5 Q1/3 tsp (1.5 mL) salt
/ E/ ~* |. ~+ _' S+ D7 ^$ l1 Tbsp (15 mL) cooking wine+ l$ h! }5 z2 d' W! m. Q& D" L
1 Tbsp (15 mL) cornstarch
! ^! w! M6 H9 A# L9 u, n2 Tbsp water
: Q1 @  S+ r) p; G# J' n: q/ `* a& y$ R  j
1 1/2 Tbsp (20 mL) oil
! c5 O0 D: t6 p* H: m7 L  v/ e6 m2 [4 i
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
  A3 t( Q, e! z4 v* X1 cup (250 mL) cooking oil
" n& Q% @* l6 j' l& s, i9 |! h- i0 l2 1/2 Tbsp (30 mL) oyster sauce( E4 i) c  X4 \8 ~0 @, ^% ~
2 Tbsp (25 mL) light soy sauce
7 @. r& K2 x. C+ {8 g# ^3/4 Tbsp (10 mL) dark soy sauce  o' J. s; l. W% _# |3 C* n- R
1 Tbsp (15 mL) sugar& N7 W0 x# s1 q  I/ x: r' g' Q
a few drops of sesame oil1 s- c: j1 d0 K
2 cloves garlic, crushed
, f+ Y) U  [, b& T+ @1/2 cup (125 mL) chicken broth
( O- v# M, @/ n5 D  c3 r# ?2 Tbsp cornstarch (if desired)+ Z8 P/ k! d  k0 p

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
0 |) C4 H( Q* }, [, CHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.$ L4 f8 N4 G( A# L5 X
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ; C9 P3 x; p( R. v& Y
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.+ K1 P: P) d+ T/ D8 t: v8 T" t

+ r1 W. ~0 P1 N5 j  U*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
