Beef with Broccoli

Beef with Broccoli

Ingredients:
* {% A* V/ E+ d& U3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces0 t2 u! p6 H, O) D7 q

Marinade for Beef: ) H) h' d+ J9 r7 f0 J
1 egg
* G5 b! T  U4 f* D1/3 tsp (1.5 mL) salt: C  g. j( J, X# b7 B: X: O5 F
1 Tbsp (15 mL) cooking wine+ h; D5 u, D* O' F8 T* o
1 Tbsp (15 mL) cornstarch6 x; A/ [: w6 ?4 \
2 Tbsp water4 F" s' |8 q% u5 h0 t4 z
7 i! i* z/ R0 }: m0 G1 }8 x
1 1/2 Tbsp (20 mL) oil
1 g- b& I) ?  ]4 @6 M, ^$ W& j0 F1 a' }0 D
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices- f' B, m) g0 \' c, W! k
1 cup (250 mL) cooking oil2 F+ K; K5 f9 z0 b( o. a
2 1/2 Tbsp (30 mL) oyster sauce2 x6 B, O3 @% j; X+ g' a
2 Tbsp (25 mL) light soy sauce2 W( g$ U4 [# j- O
3/4 Tbsp (10 mL) dark soy sauce& u) x1 @6 D: n$ ~" M: l
1 Tbsp (15 mL) sugar5 v% w1 W% K9 O% ]0 f& v9 a
a few drops of sesame oil, G  y/ X- E9 K7 G( w
2 cloves garlic, crushed
. V9 y' k9 d: o% N& B1/2 cup (125 mL) chicken broth
! q/ X. g& p# C! L& G9 k* Y+ X2 Tbsp cornstarch (if desired)

3 E3 [$ C' T! ~# K  ~% rSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ) e5 D8 [- i2 N$ e* e: Y5 ?
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
% E" t: Q& E! h6 B+ G1 nAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ( r) K2 W8 S4 k' Q; i: p
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
