Beef with Broccoli

Serves 3 to 4

' x- z9 ^- ]4 @# `3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
# E3 o, y0 R$ ^3 V
' [$ k) r5 u) n5 c! R- RMarinade for Beef: ' w& l" \$ @, t
1 egg , J+ K6 ~& F5 ]" y- X, v$ e2 }
1/3 tsp (1.5 mL) salt
7 m) e& i$ `. Y, T6 H' t9 ]1 Tbsp (15 mL) cooking wine
' `$ g1 j! K! _7 ]1 Tbsp (15 mL) cornstarch# ]* f" e# C7 @7 I4 B' w" A7 g
2 Tbsp water
3 N- ]% `: `( e' B, o1 N  P6 h
# v+ V9 j; E7 t5 S1 [; |1 1/2 Tbsp (20 mL) oil

- S! F4 F" [# R- a1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
0 \. O$ w# N! `0 X. i; N% l1 cup (250 mL) cooking oil
5 W1 ?8 m5 T' ~, I+ }# I2 1/2 Tbsp (30 mL) oyster sauce$ G- k% n5 x6 u4 S6 B' B
2 Tbsp (25 mL) light soy sauce
) R+ t& u, B* D6 f& a0 k3/4 Tbsp (10 mL) dark soy sauce% T+ x+ s+ V. s# b& I) ]5 s
1 Tbsp (15 mL) sugar
0 Q) _2 i) l+ E  d0 L* r( S: l- @a few drops of sesame oil7 B/ s$ N  ~- H, ^9 R2 k9 V
2 cloves garlic, crushed
8 j! x+ _, [5 K9 [, p1/2 cup (125 mL) chicken broth
- A0 e3 \+ y$ k. C2 Tbsp cornstarch (if desired), r9 Y8 J# q2 K7 A6 r2 ], G

Directions:+ m: T1 P( L' C, m& J
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 6 u, k1 m1 ^5 [/ ?1 @. z& N
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.6 t( ^& l/ m4 M* U, m
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
' b8 w# J% r6 ZHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.* ?. q. t" f. x" Q; {, V& h1 r& Q

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
