Beef with Broccoli

Beef with Broccoli

Ingredients:; ~  P0 K0 H  a
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
/ T7 d& ^7 ]+ x2 ?' m/ N2 t" O: }7 e+ B/ l' w/ w( l7 Y
Marinade for Beef: ' V1 m; g: @; H+ l/ [( h, v. y
1 egg # \, _0 d6 F2 S4 t
1/3 tsp (1.5 mL) salt
6 v! W, }( H5 g- u, }+ a1 Tbsp (15 mL) cooking wine' N8 G. t- S$ T% p. j; S
1 Tbsp (15 mL) cornstarch7 h: [' \8 C7 s+ \
2 Tbsp water
5 V) K& i! Y3 d4 a( ?+ {
; q, b- s7 s/ z1 u2 g; \1 1/2 Tbsp (20 mL) oil4 S8 M; w; y5 a) h! P8 ?; ?

  p! D% c9 [2 c: k# X4 R  j1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices6 @- I5 K+ S- Q) r( g
1 cup (250 mL) cooking oil
! j" ~& T/ ~, ?/ `- s/ T7 |0 [& t2 1/2 Tbsp (30 mL) oyster sauce
; H% |" d1 v! h5 d+ Y2 Tbsp (25 mL) light soy sauce
) H3 Y" r' B/ `( y9 h0 {# ]7 \6 ], H3/4 Tbsp (10 mL) dark soy sauce4 d& W# l5 n* C0 w
1 Tbsp (15 mL) sugar/ i9 d# a6 H( k1 o
a few drops of sesame oil, n' ~% V( @# Q: X
2 cloves garlic, crushed
! {5 C. ?9 n0 r* d1/2 cup (125 mL) chicken broth/ p/ R7 n$ R, t0 E) }
2 Tbsp cornstarch (if desired)
) q7 ^, ?4 c! C* U- h& S( a4 Y" H4 B' |% ]
Directions:' z; O: \5 _+ t6 g. U
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
6 D$ N% M+ J$ r5 vHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 s  x$ p: Z, K4 M
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  6 V# J" o' n. X4 ]8 w, \
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.! a" s- z$ s& \4 m( D' v* t

3 c4 q' C6 p* ?4 Q  ?+ Y*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
