Beef with Broccoli

Beef with Broccoli

Ingredients:
  X4 m( ~; ?8 j* }) _! V' z3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
* J) @3 ?2 |' b/ [& h+ k* E
7 Y9 `5 i9 H! {( f, F0 AMarinade for Beef:
& \# b1 k3 J' i' X9 ]7 g" z- M# P1 egg
* a! i( i' D$ Z$ F' w1 l1/3 tsp (1.5 mL) salt
7 X4 n% ^$ W. E9 E, u; \% z. l. ~( d1 Tbsp (15 mL) cooking wine' N4 V* M1 {; [, u% r
1 Tbsp (15 mL) cornstarch3 O. M( E0 @# U( `$ P" {
2 Tbsp water4 ~/ S, \1 [9 ^  O6 |) q$ C

4 Y7 p% B: R1 t5 g. I" w1 1/2 Tbsp (20 mL) oil

  F. |1 ?1 h- J3 ^5 p% |1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
/ k3 z+ g" b; S8 m) A1 cup (250 mL) cooking oil. \% }  o, Z" l, {' ]3 F' z
2 1/2 Tbsp (30 mL) oyster sauce; G4 C3 }. ~& r& o( o  [
2 Tbsp (25 mL) light soy sauce3 S& C' s- l$ y; s, c% @8 S
3/4 Tbsp (10 mL) dark soy sauce3 S" \  K8 h: J; Z; `0 A
1 Tbsp (15 mL) sugar
9 R! |7 l1 [- x+ v$ ba few drops of sesame oil
5 a2 S# w1 b; E8 f# q2 cloves garlic, crushed2 y4 N% L0 E) e( e
1/2 cup (125 mL) chicken broth
1 m7 \+ s: z3 z$ W/ U2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. - z" ^- p: _6 E; D
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel./ g% Q3 Q. C- O% G  K
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
3 ~4 D7 @  Z0 n! S# QHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
