Beef with Broccoli

. F, y+ r  n/ g3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces6 \8 c& h3 A$ G( z# ^) ]

Marinade for Beef: * O: V0 a9 {( [/ `( B% }+ P
1 egg ' [, q) U! }3 U5 J4 h
1/3 tsp (1.5 mL) salt# @3 K' z: S# v5 a9 \) W
1 Tbsp (15 mL) cooking wine& P; j. ?- O1 S
1 Tbsp (15 mL) cornstarch
  M8 G( Y- i) ^9 M5 g# [# A2 Tbsp water
9 d' C' P, m1 G6 U% P: W  s* m( I8 v. E; J$ z9 Z5 u. L3 i
1 1/2 Tbsp (20 mL) oil
5 P) U: n/ b* C% s+ p$ y- M, b
6 H; m3 k/ t; r5 m( q1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices1 `4 c0 ~  ]9 D! M* A
1 cup (250 mL) cooking oil
: @; M8 F: ^' T! W$ J) B4 v$ E. K( T+ ]2 1/2 Tbsp (30 mL) oyster sauce) E- ~. @6 j+ y  S9 j! @6 \
2 Tbsp (25 mL) light soy sauce, n. U3 h1 T7 A6 ]& t4 y
3/4 Tbsp (10 mL) dark soy sauce- a6 r; F. w$ d% e# p" i
1 Tbsp (15 mL) sugar$ \3 d- u) b$ Q2 n! d& T7 I& ]
a few drops of sesame oil* G6 ?. x6 K# l8 O1 e- F# ?) z
2 cloves garlic, crushed
" L  ]6 A& g# Q. j8 N3 j4 x1/2 cup (125 mL) chicken broth
, v, a0 x( f3 [2 Tbsp cornstarch (if desired)
5 Y! b0 ^" ^8 ^$ p, e4 R8 d; F& e! d$ K9 y& t
Directions:
7 h5 T6 J, E" hSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
- x8 j) S+ W' Y) w: L6 i$ sHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.7 n# a! i) {. e: T% u- b0 F( D
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
/ ~, m* i7 U, aHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
$ c7 V. r/ B, ~5 @/ @*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
