Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces) R' }: ]. o+ x- \. P

Marinade for Beef: 5 `! b  }- V# q. z7 k, f7 n" x5 d
1 egg 6 \* m& I8 ~: w2 O; L6 G
1/3 tsp (1.5 mL) salt
0 M3 ^' M% p7 U- P3 c1 Tbsp (15 mL) cooking wine$ K' O6 X( _" T5 [, q
1 Tbsp (15 mL) cornstarch' o0 u7 ^; L. p. U9 n; u2 c3 g# j
2 Tbsp water6 z6 C: W- P" V! F/ b0 {- i

1 1/2 Tbsp (20 mL) oil

4 v3 Z. C7 ?* r# @  ^, q1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices! Z" O  Z/ I. `4 L
1 cup (250 mL) cooking oil2 q  c( G2 S3 q" J2 T1 l1 P
2 1/2 Tbsp (30 mL) oyster sauce
& v8 {1 Q3 ^$ ?$ S( Z, ]- F2 Tbsp (25 mL) light soy sauce
' ~. _: ]8 t7 S" F( }3/4 Tbsp (10 mL) dark soy sauce
7 [$ |' Q9 J# ^, Q( O1 Tbsp (15 mL) sugar  d! l. U- f1 N4 ~
a few drops of sesame oil
- i% D# ^. B. I5 `" U2 cloves garlic, crushed
" y& [2 h( e4 i* {4 T, l1/2 cup (125 mL) chicken broth5 ]+ |3 \+ x1 W5 U  v
2 Tbsp cornstarch (if desired)3 k& \+ `6 D1 e& D/ V0 b

Directions:2 w. d! m9 y; p6 k' N7 R
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ! U- c8 N6 h- J+ d  w
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.0 F6 o; l% W( b  `+ ], z
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  % M* Q. [8 w4 ~/ f: v
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.4 N+ r6 o: W7 a- v: r

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
