Beef with Broccoli

Beef with Broccoli

Ingredients:
5 W+ {! `; b" N+ b. Q3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, C! r2 K) Z# ^& O: [* a  d/ y/ x

2 ~% E$ y+ q0 ^' eMarinade for Beef:
, o  s$ k/ t; y$ k3 {* D1 egg 4 S( S* y" |8 ~3 A; \9 W
1/3 tsp (1.5 mL) salt
! U; s1 f) x0 h# X! U1 Tbsp (15 mL) cooking wine. {1 \$ i% J6 _( a
1 Tbsp (15 mL) cornstarch4 ^- r5 v7 v, j4 K- X; I+ i
2 Tbsp water
0 e3 W3 W' T) y9 c/ G, C) O/ j: _! j, @: V, n$ V+ T/ w, _
1 1/2 Tbsp (20 mL) oil
% L% s3 T( R$ x+ L/ o. j. T$ e
4 e3 h4 Z0 h% A: H) t1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices( Q9 ?6 E- t& R* N
1 cup (250 mL) cooking oil
2 \- M) p8 I, R  I" v6 o' f2 1/2 Tbsp (30 mL) oyster sauce
! X8 G) S/ u9 F# B  ~/ L2 Tbsp (25 mL) light soy sauce0 ^9 N. d  K+ X9 L
3/4 Tbsp (10 mL) dark soy sauce
$ v7 \1 P; [8 W3 [6 @1 Tbsp (15 mL) sugar, Y8 M6 Y- \# w  Y' |
a few drops of sesame oil' w- G; s8 e0 j* r# `
2 cloves garlic, crushed) |. E5 Z& q! R8 Z( p
1/2 cup (125 mL) chicken broth. ^  V# f. ^, \4 ~1 E4 v7 x
2 Tbsp cornstarch (if desired)2 g. M3 k1 n' u8 Y  X

' ^( @: W# r; ^# w' O# VSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
1 R& ^2 d+ `7 ^+ z; X" i6 CHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 R( j1 _8 s5 F$ K1 h6 B
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  - h* K' G( `$ X, A" h. y
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
