Beef with Broccoli

Serves 3 to 4' B0 M, p( K1 F, x

, {, r6 S; f% l0 a  L+ F3 ~Ingredients:# ~6 b6 B5 E& P1 U
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
6 w, [0 a1 l& f3 p% {: _7 G# S- k, h3 A* _
Marinade for Beef:
. Y5 v" V  X% B; I) u3 j! N1 I1 egg
. S8 a: V. T* b. y: ]- X1/3 tsp (1.5 mL) salt
6 n3 {+ K' `4 I" @& }+ ]1 Tbsp (15 mL) cooking wine
& G9 v( [% c* h7 z* s0 p% v3 I  Z1 Tbsp (15 mL) cornstarch3 M% v7 G$ D0 m& O+ w
2 Tbsp water
8 n* T1 ~* Z$ k2 `+ T6 O. x* g9 P7 `8 X- F& e% q
1 1/2 Tbsp (20 mL) oil
2 y% r7 H& R3 F& ^+ S+ P
$ s6 K- V/ ]/ L1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices" D+ c1 r! J5 n, T9 b: t! o7 m
1 cup (250 mL) cooking oil
  @9 M7 c6 V4 `$ d/ F: w( y2 1/2 Tbsp (30 mL) oyster sauce
. q! H& K  P* |- Y# k' Q) y9 _& Q2 Tbsp (25 mL) light soy sauce
' ^1 a4 J0 S, R% }! ~3/4 Tbsp (10 mL) dark soy sauce
0 O5 ?2 d# q6 i$ B9 o9 S7 Y. q7 p) o) [1 A1 Tbsp (15 mL) sugar
; H! W. n+ I: }2 \7 R9 c3 [a few drops of sesame oil
  ^9 H, B, b- u: ^, I2 N2 cloves garlic, crushed
% R( r$ F$ _& d) D- A3 R  `1/2 cup (125 mL) chicken broth
# R$ s2 R- C# s  P8 h5 X/ ^2 Tbsp cornstarch (if desired)

# X$ R0 r: u8 r4 f' h8 y6 n. V6 s# ZDirections:9 r' W7 q5 [/ U5 G( F9 j  m  Z
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
6 m5 p: V' T3 ^! v! i. }! c" {Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.3 ^# |& Z, }4 `% e# H. v& ~/ Y* V
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
" T( _8 U; `! l# n% F* I; f- cHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.0 g4 `+ E! q) e6 I+ v4 D8 @

Variations
! R( G7 q0 B5 o6 k* O- S/ z*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
