Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
! H8 g# L/ _! O. E# D
' G  A; M+ u# ~. DMarinade for Beef: 1 l1 g: M8 c0 z' v9 I8 k
1 egg
" d' I0 K: d1 z1/3 tsp (1.5 mL) salt
3 B/ h( U0 C3 l4 _- {' U1 Tbsp (15 mL) cooking wine
5 {6 f5 o& L1 _/ Q1 Tbsp (15 mL) cornstarch
" Q6 N* g) c) o# \2 Tbsp water2 T" z. I7 O7 E2 L8 Z

. ?3 A) j6 C6 @: Q7 @# w1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
; d+ e% T# d% `2 V" t1 cup (250 mL) cooking oil
- f+ j% ]' l5 A/ Y2 ~; t, z9 L1 h2 1/2 Tbsp (30 mL) oyster sauce) ~  O% b7 r  o& q1 O! S. Q& C
2 Tbsp (25 mL) light soy sauce
  n; ]7 N  U0 a1 {) c. T3/4 Tbsp (10 mL) dark soy sauce( G5 e  Z0 @" K, E! J1 `
1 Tbsp (15 mL) sugar
  q0 u% c" F5 za few drops of sesame oil
/ J/ }  O: D- Z& P8 R8 e2 cloves garlic, crushed
$ d- l/ [  d% c1/2 cup (125 mL) chicken broth4 @" \! P, U! X7 a6 m# D) c
2 Tbsp cornstarch (if desired)

Directions:
* o  |! Z7 M: _5 fSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 0 ^2 x8 Z: Z! x/ b( |0 b
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 `0 U: \0 w% ~9 U' {: S
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  6 x$ z8 e5 `+ |% G
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

1 h. `% t6 C4 r*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
