Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces- t, ?$ [& m# H6 c

& Q+ n! O( [1 J# X( {Marinade for Beef: + B0 V0 s; [! p3 s
1 egg
+ b& g/ i' }9 @+ S1 T$ t  C1/3 tsp (1.5 mL) salt8 ?' Y& d! b3 S7 P# Q+ E
1 Tbsp (15 mL) cooking wine& m) Y9 H' z5 ?9 Y( ~! V1 w
1 Tbsp (15 mL) cornstarch

& f' ]) O* U  H/ {  g* |- h4 f* A/ L/ i1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices. m* p$ w, _  l! d2 d
1 cup (250 mL) cooking oil3 h, m* U0 h( F3 r
2 1/2 Tbsp (30 mL) oyster sauce( |6 V& o5 y: w" m
2 Tbsp (25 mL) light soy sauce
4 a6 [- h+ d: @3/4 Tbsp (10 mL) dark soy sauce" m" G4 q1 Y( `
1 Tbsp (15 mL) sugar% c0 k  W, P/ C3 [% Z- P/ B
a few drops of sesame oil. d$ m: H* ~0 d3 h
2 cloves garlic, crushed
2 W# Q0 s4 c( g0 f1/2 cup (125 mL) chicken broth1 c+ h' w* m5 s6 V, i! m: }
2 Tbsp cornstarch (if desired)3 h6 H& u: i& Q1 f5 M( V: o4 ~

" e( h8 o" w$ c4 K: P1 qDirections:
# s. Q/ x" s: v+ h) e) pSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 3 |% y& ~; f% P6 a& Y/ V" w
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
2 Y# D1 j5 `  ?: S0 l& ?5 R' J7 t) v6 AAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
2 a' I. X% g3 P# H, s" ^1 gHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
; |/ K. `. U+ x* C*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
