Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces! C. V- y  e- V. h

Marinade for Beef: - |4 m) t3 R: M3 ?# V8 ^4 N' `
1 egg " Z: `0 s9 q! S
1/3 tsp (1.5 mL) salt
9 K. d, \" I! V- C3 f1 Tbsp (15 mL) cooking wine8 J* I( F9 M. j, ^8 Y3 x7 Q
1 Tbsp (15 mL) cornstarch% P0 \; ?  s' H" ^5 b' j! h
2 Tbsp water; f( d4 O4 o$ O" U1 `, X& V

' o$ a4 z$ W; H3 ~. @1 1/2 Tbsp (20 mL) oil
' O! h$ i; t+ Q9 `! h3 M- l7 ?# \( C2 t
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices( {& v2 b9 H3 ]5 [' E
1 cup (250 mL) cooking oil7 O: G8 s0 L. @, q( c/ u( S6 J
2 1/2 Tbsp (30 mL) oyster sauce- u( `) t0 ]5 |2 d" G' Z
2 Tbsp (25 mL) light soy sauce
5 ^* H* k9 u# D1 h3/4 Tbsp (10 mL) dark soy sauce% f# m+ b. C% s
1 Tbsp (15 mL) sugar
7 u+ x" D& J3 w9 y; x7 m7 Ua few drops of sesame oil! L8 f8 S0 c4 U
2 cloves garlic, crushed+ y7 f7 q/ N( t& t
1/2 cup (125 mL) chicken broth1 a3 |6 t' d' [7 G8 o; O7 R
2 Tbsp cornstarch (if desired); o  s0 i4 N+ {: T% c4 ~3 x
6 v4 j& I5 ^: i$ u& J! I( D
Directions:* J7 X2 F4 b& C
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.   \' h2 g( z$ d  H# a- s
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
" K2 p4 d" G7 M! c  @1 yAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  # j7 }8 |0 O( ^0 B4 S" ?
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.$ m9 @0 r! u$ b  t* ~% G

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
