Beef with Broccoli

" t' z9 t5 b. Q# i# u8 n; }+ U5 X. j3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
) N( q- c; `9 _( n) `6 f( P) C; E1 d& W+ ^/ O# d
Marinade for Beef: : u; Q0 I. Y$ k3 p7 J: P
1 egg # A. o8 X3 a" q" [# \% Z& m% A
1/3 tsp (1.5 mL) salt% n! n  N$ A( _7 P( U+ T
1 Tbsp (15 mL) cooking wine
- J- s/ j1 x% O; x1 Tbsp (15 mL) cornstarch
) {4 ^1 s0 A4 j; }7 A2 Tbsp water
" I3 z  c" ], k8 H# [' J9 Z# W! _* g( t& n5 {: f6 m5 q6 L7 T% A
1 1/2 Tbsp (20 mL) oil
/ ]4 w, R: k0 R" L. P
0 x. X( g, V0 z; G( f4 w. I1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
  ^5 v  H. ?" o2 `6 e1 cup (250 mL) cooking oil# k3 c/ u6 K+ e! B0 s5 a
2 1/2 Tbsp (30 mL) oyster sauce
: G% I/ ?8 [, _4 R( U- H5 @& S2 Tbsp (25 mL) light soy sauce
. ^- ]: G  |: @6 q" C3 c0 F3/4 Tbsp (10 mL) dark soy sauce
0 x, \" T) g4 J9 g' c) Y. R1 Tbsp (15 mL) sugar
, P9 [0 X) X: b' T# va few drops of sesame oil
2 x& c, L! i* l6 c0 D. T: m2 cloves garlic, crushed. M: W  v2 i, F$ r: H1 g: a8 d; u
1/2 cup (125 mL) chicken broth+ B* d4 n3 l: D9 C" `5 {
2 Tbsp cornstarch (if desired)# u; @5 \* j! }- E2 ]
! z# a! a5 T) d
Directions:
' @" i, d1 Z! T  H* `) LSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
, M$ p# b$ E; d# l0 BHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
( `8 h0 D3 C. P; d0 B: sAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
  Z! ^6 @. w+ S0 n2 bHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.5 y- i: b# ]# ^9 l6 v2 I! F; U2 |

$ p3 V4 r. {  @8 c; |- a$ X9 U*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
