Beef with Broccoli

Beef with Broccoli

Ingredients:8 y2 h9 ~8 o1 R
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces8 F% s8 R7 |( R" c/ C. A
0 q; S5 v( f5 B$ B; w3 V) F* Z
Marinade for Beef:
+ L, u& e3 c- y) p5 [" ?1 egg 3 g6 a& O9 Y- r/ E
1/3 tsp (1.5 mL) salt
- d1 u9 e  Q" v; c4 ]1 Tbsp (15 mL) cooking wine
, y! H1 g) O; w4 U1 f$ p1 Tbsp (15 mL) cornstarch
# I; O$ w4 F1 ]1 g! Y& M2 Tbsp water! s3 L% `( ]9 i3 q( a& p4 y& @

6 G- K0 s; |5 ]2 }& e/ q! K1 1/2 Tbsp (20 mL) oil
' y6 p% r- A, B* D7 ]8 e, |# U  c7 h2 L$ f7 [6 a2 Q6 o$ |3 P9 `
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
( h/ T/ A# R, m" K4 a1 cup (250 mL) cooking oil. d6 o7 X* D. k& Q8 S) D+ x4 D
2 1/2 Tbsp (30 mL) oyster sauce- K7 f. d* s, I2 c0 t6 a6 K, ~; y7 _% R
2 Tbsp (25 mL) light soy sauce" e/ l7 N* e: v& D0 F
3/4 Tbsp (10 mL) dark soy sauce
9 Q4 a+ H9 s* D# T: z1 Tbsp (15 mL) sugar3 W0 g, R/ u. f6 n3 H, u" @
a few drops of sesame oil' V8 X  y1 \: {1 X7 `% H9 m
2 cloves garlic, crushed
5 `' \. _$ V+ r' s3 q! J9 z1/2 cup (125 mL) chicken broth- U6 @* f  {8 v6 g& x9 ^
2 Tbsp cornstarch (if desired)
$ C0 i5 Q0 J% m) Z6 ^% f% b* x. L: _3 N9 |! o* R4 e
Directions:7 |% n( p: O9 |+ Y# l
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
" D; v( L, A2 Y8 W' `" u6 sHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.% f' }1 D7 j1 ?  X( @% {% f
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
9 P# v  r7 j7 Z6 p2 EHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

/ F8 T" l- I; Q8 v! o*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
