Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces4 j' y3 t. W! ?$ Y6 D# S

Marinade for Beef:

7 e& H- z& x& b7 v1/3 tsp (1.5 mL) salt' i  Z* L" Z5 G& a; Q+ O
1 Tbsp (15 mL) cooking wine0 p% I& ?; |- W, y: H" I+ K
1 Tbsp (15 mL) cornstarch

$ `4 ^" q7 t! f" `- r; n1 1/2 Tbsp (20 mL) oil0 q) w1 l7 k8 ]# k+ a

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
8 J0 q# P0 d% |/ f& F3 P/ q" I1 cup (250 mL) cooking oil; g9 f+ r$ T! X# P
2 1/2 Tbsp (30 mL) oyster sauce
# f4 b8 V9 B1 Z$ B( w2 Tbsp (25 mL) light soy sauce
  t# D  r, }- y! r* F8 @3/4 Tbsp (10 mL) dark soy sauce; l/ V- V; A1 C, ~' x
1 Tbsp (15 mL) sugar- P' N* E& n% Y
a few drops of sesame oil, h* G% @6 [9 M
2 cloves garlic, crushed( V" r* g. s4 _! I0 Q' i
1/2 cup (125 mL) chicken broth
& E1 `' Q% R7 c% d# n2 Tbsp cornstarch (if desired)4 W2 O6 s8 W, Z

  [4 r( V3 x# xDirections:
+ {" ~4 C3 x2 B, Y: V( |( }# [Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. # {% w0 h. R$ v- @
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
' ~% k, J* ^8 E  C- `/ PAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
4 g9 d) J3 H. \- Y: I2 q& @  wHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
( f: L4 Z  W. {5 G9 T. r; |*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
