Beef with Broccoli

Beef with Broccoli

Ingredients:: j9 G5 i* v0 Z' G
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
4 b' S) V! |) Y- U' e2 v* a  J% T
Marinade for Beef:
* w  c/ n. S, N6 m# c! K1 egg
5 X; D: L4 V0 L, ^4 [% c1/3 tsp (1.5 mL) salt3 T: o6 h3 i1 ?/ e
1 Tbsp (15 mL) cooking wine& U  W3 r: `+ s5 i
1 Tbsp (15 mL) cornstarch
: A6 D4 ?! Z6 h) k% J& K2 Tbsp water1 f1 D/ h! H$ f$ K7 K7 E2 j( Q4 D

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
  l+ _" K7 q  K& l4 k& z1 cup (250 mL) cooking oil. Y* E- z; O+ a2 Q. ?# ]
2 1/2 Tbsp (30 mL) oyster sauce! g* U& b+ k" ]+ \
2 Tbsp (25 mL) light soy sauce
* b, O* S0 D4 f1 h3/4 Tbsp (10 mL) dark soy sauce
9 C; A- E+ b" o9 `/ z1 Tbsp (15 mL) sugar
$ u8 {- a- q1 o8 }; Ia few drops of sesame oil; m( R: J$ {9 e# @, Y
2 cloves garlic, crushed
3 B) A! ]2 _5 C5 w- N1/2 cup (125 mL) chicken broth
) Z4 v: Y- L$ M' i2 Tbsp cornstarch (if desired)

/ l! _: g. h0 `2 {$ U& vSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 8 f, @" ~9 h+ Q# t
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
6 ^5 H" k1 r4 M5 N  ]. A# dAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  3 D+ a8 k4 D+ Z8 ?4 f6 g. N/ k) U
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
