Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces4 ?2 k3 a) v+ z. g2 e

1/3 tsp (1.5 mL) salt
/ u& a4 z3 S! z7 F, r. e1 Tbsp (15 mL) cooking wine
: d( f/ W5 b6 E/ U4 T1 Tbsp (15 mL) cornstarch
' X5 i. U# ^9 M6 z9 f3 Y0 x2 Tbsp water9 G" b5 G1 p1 w3 f

1 1/2 Tbsp (20 mL) oil4 Z- I; L" h; d) G/ ~

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
% `9 \: b) o1 e* n: v. k# [9 o1 cup (250 mL) cooking oil6 K8 G( L' X4 U) W! @
2 1/2 Tbsp (30 mL) oyster sauce7 h/ w1 e6 ?) j4 v
2 Tbsp (25 mL) light soy sauce
: J- `- [$ Z' p+ g- }; t9 s3/4 Tbsp (10 mL) dark soy sauce  r$ w- n  }! \
1 Tbsp (15 mL) sugar! {& c/ ^+ g1 |; O
a few drops of sesame oil5 B1 i* g! e* Z
2 cloves garlic, crushed
* ]( j. |/ W9 n" u9 E/ Z1/2 cup (125 mL) chicken broth5 [3 `6 w" X' o+ s0 b8 e5 {
2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 1 H* H- ~2 g: j
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
6 _- u/ E# m" u& N0 g  z2 u- }: |7 ]Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  8 e. Q5 z6 T" b( E1 h" b! h
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

8 M* E+ J' a+ f; F) F*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
