Beef with Broccoli

Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
4 \' p& K; {8 T; L' b7 C' ~- H1 egg ) U( V) }0 t# P; T6 e
1/3 tsp (1.5 mL) salt$ F0 G$ B3 y3 b6 P: K
1 Tbsp (15 mL) cooking wine' Q  G( l" e0 ?' c; ~+ m$ m; m) l4 P
1 Tbsp (15 mL) cornstarch% j) u- G4 I$ h3 C- \& }" _0 s9 h
2 Tbsp water
1 @9 W& q2 p" |$ _; i
' s+ \& g. {* p1 1/2 Tbsp (20 mL) oil
/ ~, O9 B4 O) P% K! H# u7 ^! R; I* x* z- G
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices& N3 c+ @8 K/ M( J3 U
1 cup (250 mL) cooking oil1 f& D  }; o3 ]% Z1 f8 }: m- [
2 1/2 Tbsp (30 mL) oyster sauce
, ~. [6 p0 a  `$ }7 d( ^7 {2 Tbsp (25 mL) light soy sauce9 Y; ?+ U( K8 @2 z( |0 p' i
3/4 Tbsp (10 mL) dark soy sauce
: z9 Z' c) G9 v6 Q: B1 Tbsp (15 mL) sugar1 x# a! T# _* Z3 N' |; e. b
a few drops of sesame oil
' W" H- t( K* J$ J6 E2 cloves garlic, crushed
7 \1 d  _  G1 P3 \; P: l4 R3 J1/2 cup (125 mL) chicken broth
, c. U* f9 w1 t$ e2 Tbsp cornstarch (if desired)3 K" b; N/ o- i2 f8 J

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
0 M* V- P& B- N3 d% R. S7 F9 SHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel./ O9 B/ Y  Y9 I  f
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
8 p3 S3 c2 Z1 G6 r/ Y- }# q+ `Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 X) Z6 o- r5 B, h, [

$ t0 R) y% F( {/ H" ?) M  X*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
