Beef with Broccoli

Beef with Broccoli

Ingredients:
& b# w7 s8 W4 D3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces  o$ o8 j6 X' y5 N9 {! L
% X2 d+ p, b# n/ C) x
Marinade for Beef:
# m# C4 v5 k! F! \$ ]4 J1 egg
8 L$ J$ o# o$ ~! A5 n1/3 tsp (1.5 mL) salt
. ~: b7 t/ e1 q3 Q' l3 Y1 Tbsp (15 mL) cooking wine
# j/ @* p) l2 I& N+ Q1 Tbsp (15 mL) cornstarch+ d8 p, A: Z& h/ V' q/ g9 o
2 Tbsp water6 q7 C$ L: g# |  {9 V. o
& A, ^$ ~# ]' m8 Y- T/ Z4 ?: Y
1 1/2 Tbsp (20 mL) oil% d: U! @" }( q. V" U
6 M$ d, {& o) N- T1 ]5 X5 v2 Y+ E
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices$ }3 B+ \9 G2 z& {9 o2 V
1 cup (250 mL) cooking oil
* O8 C( o/ J: P- i# w2 1/2 Tbsp (30 mL) oyster sauce6 P/ g) g! A  X. w6 P
2 Tbsp (25 mL) light soy sauce
+ C3 T" G: z: ^3/4 Tbsp (10 mL) dark soy sauce
3 R8 ]4 a3 A, ^* P5 i0 v2 _$ c4 R1 Tbsp (15 mL) sugar* h- R4 U& u% A2 [1 I
a few drops of sesame oil
  A$ e# D- v0 L" q8 W# N2 cloves garlic, crushed# f1 |5 m7 W; O
1/2 cup (125 mL) chicken broth
* D$ l, c) c: t* x! D6 a' j( T( \2 Tbsp cornstarch (if desired)5 j9 `8 M! `5 f3 @- ^1 k

/ N  K+ V& E9 y. \" q# e, j8 kDirections:
$ @7 s8 {6 `1 t. \2 B7 r. ASlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ! c3 k- G; _& x
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.3 P8 v: j/ }9 U) V/ w4 `) s. v7 o9 X, q
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  $ p  N, z6 Y# Z; G8 X& v5 V
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
