Beef with Broccoli

Serves 3 to 4

Ingredients:
; h/ q: T$ y0 `6 }/ ?$ ~; W3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces# r% n1 p3 k2 a$ I/ i7 ~

1 s  [" L9 R% s& S2 t8 xMarinade for Beef:
; T  Y, V/ c  R# \$ o# K0 V1 egg
+ t1 V# f5 @; M1/3 tsp (1.5 mL) salt! z* G; s. j9 Y' T9 I
1 Tbsp (15 mL) cooking wine
& j$ I5 F8 @- C: Z1 Tbsp (15 mL) cornstarch1 B$ W. M! n, `5 P/ `
2 Tbsp water3 a. I# X2 u3 G( b
9 y' s# D* Y% w3 I4 l3 Z/ j% C% M
1 1/2 Tbsp (20 mL) oil# e# o! D# W5 B( z

8 @' c# D) m4 F3 b; M$ [1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices" }. Z/ j5 g2 _
1 cup (250 mL) cooking oil# p: Y. i/ p- l6 y6 G5 ~7 a
2 1/2 Tbsp (30 mL) oyster sauce& M- b* D& a/ p' s1 P" h( i% R& D
2 Tbsp (25 mL) light soy sauce3 t- U7 g* _/ U( y
3/4 Tbsp (10 mL) dark soy sauce
5 x- D% m0 j  V1 Tbsp (15 mL) sugar* c, B2 U4 s; n$ p9 O% z1 J& n& B
a few drops of sesame oil8 @9 H. D; F6 N
2 cloves garlic, crushed
) Q  G3 N% ~* n1/2 cup (125 mL) chicken broth( Z$ d: k6 M/ F# k  O' k
2 Tbsp cornstarch (if desired)

  K  }5 K3 S* J4 qDirections:5 b8 ?0 R7 R/ @, j% \
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
* L1 W$ ^9 p4 h- e) N% GHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
+ C0 U. q1 u( ^' iAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
. J# O3 p  l* k! S) Y" w4 K. zHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.1 e% S6 j" b: G/ z, s
