Beef with Broccoli

Ingredients:
6 z/ @: r& X: T4 S/ d9 a+ M3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces  g3 p, Z4 S8 {5 P& V# E
; t# x5 v+ X. c/ v6 C
Marinade for Beef:
0 c. v1 o) @/ V" u: l: Y1 egg
/ T4 v2 H5 U# C! V- J1/3 tsp (1.5 mL) salt
* V& k" g3 c8 C. D' T3 f1 Tbsp (15 mL) cooking wine# H' n; a% a. `+ i9 o$ C
1 Tbsp (15 mL) cornstarch" A4 o3 U+ \3 a+ h8 z
2 Tbsp water2 e& {. k6 q/ P# \* B  n

7 b) N7 r3 ?, }" N" n1 1/2 Tbsp (20 mL) oil. a# V0 C- [( u! Z

& _) l. X1 e! H! }+ U) `1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
; }4 s' p' w" Q  A1 cup (250 mL) cooking oil
2 L' L; \8 p! v, T" o2 1/2 Tbsp (30 mL) oyster sauce
  P  k" N! Q# K& B6 [9 d( `: z2 Tbsp (25 mL) light soy sauce( M9 U" t1 x- m5 x6 v5 y
3/4 Tbsp (10 mL) dark soy sauce; E* b1 F. x2 }% V
1 Tbsp (15 mL) sugar* W8 c  O, v4 m
a few drops of sesame oil
' Z% B# U* k- N/ W. s2 cloves garlic, crushed/ g+ C# n+ s+ q
1/2 cup (125 mL) chicken broth
9 @% J! I  |  }% I9 j2 Tbsp cornstarch (if desired)7 T0 s: T, _) `! f2 L% B% D. i

Directions:
7 m2 l; Q# L, ~# v, \$ R1 K) e/ SSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. : |  J( `% ~& O6 i  z# x
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.3 n' e1 u  n8 Y3 K" E
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  9 }) |4 u1 U" O" x
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 r& A4 D) V% S# x, t/ Q

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
