Beef with Broccoli

Beef with Broccoli

Ingredients:
% o: s5 @- f" s" g, w0 b4 ^3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
1 ?5 E% S% T8 l0 c1 v6 l# Y; v4 q! S8 N
Marinade for Beef: ' V% e& f; _! S  |4 L0 b
1 egg 8 {: I- G& R% D
1/3 tsp (1.5 mL) salt# n. A, {( b1 C
1 Tbsp (15 mL) cooking wine, z; \0 ?3 P& ?, M
1 Tbsp (15 mL) cornstarch
6 P+ c! O- i. y( M9 |- F2 Tbsp water
: j4 C8 f8 G- h# h, B0 d6 v
) H. B% U% N; p1 1/2 Tbsp (20 mL) oil
+ a! w7 ?9 j9 a* \4 y4 J
4 Y% G/ }* {+ @. K0 y4 _4 ?) k9 K, n1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
1 b' {6 o' b: g7 H( k1 cup (250 mL) cooking oil
% C$ J6 f4 [' l( H2 1/2 Tbsp (30 mL) oyster sauce
2 r4 ^) [7 x8 ~" @2 Tbsp (25 mL) light soy sauce, e; v- d/ K  s/ P: Q3 q
3/4 Tbsp (10 mL) dark soy sauce
4 ^* [( [, U1 [. b2 e1 Tbsp (15 mL) sugar+ K  k! r0 Z4 f) N
a few drops of sesame oil/ O& I. X6 ]# B3 N7 v2 ~% B
2 cloves garlic, crushed% }+ v! e" W& r8 i2 C2 N& I! z
1/2 cup (125 mL) chicken broth* s& t" r8 D  @) p, R  s# Z: k
2 Tbsp cornstarch (if desired)- ~/ @7 P9 b( m5 v0 D+ j0 g

3 }: \: w- f% I% uSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 2 X- {( e4 T. D6 ?  Y
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
) p& R* E# ~$ A( X4 R7 R6 f0 U- |# AAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  3 B+ Z, J7 g6 u) k
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.- K- n( |( H) R

Variations
# v* |: ^& h3 m9 d7 |9 M" A*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
