Beef with Broccoli

Serves 3 to 4' G2 V- d! X! {

Ingredients:
! {3 |/ H5 ?* r# l0 d2 ]9 V" |3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

7 P. F5 k, C+ K0 D8 [Marinade for Beef:
! L; E9 y1 `  o5 Q0 O# D- j8 @8 o1 egg
5 x3 `* L: ?& Q6 f1/3 tsp (1.5 mL) salt
3 b$ g6 d) X' E! g9 H, k1 Tbsp (15 mL) cooking wine
, O. l+ a4 p! u  B1 N1 Tbsp (15 mL) cornstarch
. o% w% W/ i5 T# d8 Z: i2 Tbsp water7 t$ h' L* W$ y" C$ W! ^

1 1/2 Tbsp (20 mL) oil+ y  @; Z. w! f- F4 f
% B" F* \: P  G
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices3 |" B! U% \5 S- Z" S0 `- \
1 cup (250 mL) cooking oil
" ]0 C/ U* s' H& r( |2 1/2 Tbsp (30 mL) oyster sauce
$ J2 I* \" D7 S  v  P2 Tbsp (25 mL) light soy sauce% H* `( x% M0 O7 s3 K% R& |
3/4 Tbsp (10 mL) dark soy sauce
* D* g" p1 \! e% ]1 Tbsp (15 mL) sugar
, x7 o  q, n+ I  p5 P, Y( qa few drops of sesame oil
' y% h, _; R1 J+ K4 l% _  N2 cloves garlic, crushed
# }' h  J7 Z( ?+ B: i1/2 cup (125 mL) chicken broth+ E' y! c5 a4 s; r9 w; \* V) z: Q+ p0 b
2 Tbsp cornstarch (if desired)

% p3 U4 Z7 ?8 z6 a, P, bDirections:
9 g. J: x4 a/ F& i& u% `! o+ A; O$ uSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
/ S# o, ^: S: `+ i4 VHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
7 |, m7 u0 S! z% c* c, Y; P+ zAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
! E- H0 C* E* c' K5 \/ QHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.& H: A# \4 Y" z

Variations
6 a/ g$ ^4 Z( @- c# n; G% y7 x*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
