Beef with Broccoli

Beef with Broccoli

8 z8 T6 V6 @3 K! }0 V, F3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
" q( L  i9 ^- X$ `, ^- J( _% O8 Y0 ^. ?# Q
Marinade for Beef:
% l1 Z" w" ?. j. O! L1 egg
+ w8 R1 o  R* ~1/3 tsp (1.5 mL) salt
  a" v4 O: p# Q1 R* B6 M  F1 Tbsp (15 mL) cooking wine/ d' O8 X$ W! ?9 g% I
1 Tbsp (15 mL) cornstarch
5 ?9 P+ ~$ y; S3 C# O2 Tbsp water, q7 G- R3 z" s1 m" S1 \: ]
& b  w$ h7 Y+ |; a! Z
1 1/2 Tbsp (20 mL) oil/ G0 M' j" \9 h7 p: m8 \' x
  ^. m' a0 }$ H
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
! C& H6 P" n2 m+ T2 Q1 cup (250 mL) cooking oil
; a7 U  `# f) q/ K2 1/2 Tbsp (30 mL) oyster sauce8 w6 E6 l2 c6 `) J0 S% c
2 Tbsp (25 mL) light soy sauce
. Q& p) C2 K1 [1 `3/4 Tbsp (10 mL) dark soy sauce; l  W. x7 l. B* L0 y$ ~
1 Tbsp (15 mL) sugar$ C! W7 L) `: n/ R7 g
a few drops of sesame oil; x" g- G7 b" |1 l* A) r( T
2 cloves garlic, crushed& @4 p  Q9 e! K& F
1/2 cup (125 mL) chicken broth
, K7 R( q( f" Y3 h( y2 Tbsp cornstarch (if desired)
" i3 f* m9 r' b3 j$ V" ^$ T5 `1 ]# u
Directions:  M3 b2 q- m8 K3 y4 i/ T
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. & M7 K, j9 _- S  X  N; `
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
: y/ A! B6 k# ~Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
4 F+ O5 B; z1 V; @, O& `7 V  P, q( nHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
