Beef with Broccoli

Serves 3 to 4$ v7 l6 {7 D! A+ u& n

Ingredients:
& G$ G' {8 o* K" O4 m/ r3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces' Z6 p/ k; c& h: _8 S5 q
# T0 `9 W! w7 N: t  K$ w7 }, o
Marinade for Beef: - `! v- j# y1 y2 z( u& }; x: ^: ]# O
1 egg
8 g% B; A( V! n' ~( k* T) K, J& Q1/3 tsp (1.5 mL) salt
/ F6 c8 o: I8 x: B; _1 Q1 Tbsp (15 mL) cooking wine
5 `. u4 z1 o; S- l7 `3 w1 Tbsp (15 mL) cornstarch! E/ v1 O& w, o" s: R" ~6 a; m
2 Tbsp water2 T# }0 q* l- @8 c! a7 G9 O
# @! G: X; X6 d4 Y9 t9 n4 t" _
1 1/2 Tbsp (20 mL) oil' _2 C. C0 L2 Y

( |) F. y& g: ~' k3 S; k1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
' O# W% N+ U. }2 L2 E1 |% A, {7 d# Y1 cup (250 mL) cooking oil
! \5 S3 o% q0 u4 q$ h( T% H- }2 1/2 Tbsp (30 mL) oyster sauce' Z8 ?  q* {2 ~( ?+ F: E" U
2 Tbsp (25 mL) light soy sauce
1 y* X9 d% ]; g* Z# I' y. c3/4 Tbsp (10 mL) dark soy sauce0 g6 z, r) r' r6 b8 r: M% d& s
1 Tbsp (15 mL) sugar  l& Y2 Q8 a( r3 @
a few drops of sesame oil9 e5 N7 F) ]$ J$ J6 z! O" N$ y# d
2 cloves garlic, crushed
$ ^* t7 M* u5 t1/2 cup (125 mL) chicken broth
. O( E+ I* Q1 S4 N2 Tbsp cornstarch (if desired). l: F& D* r$ s3 ?8 Q
+ W6 u" Q1 T2 q3 ~
Directions:
" [+ t& L' K% t. DSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
; k: h# ?2 ^% m. D! BHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.+ x' t" P- S- [. X
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
4 F' n( L% j( u# GHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.* e9 [2 E  ?% O- n# v1 o8 _3 x  }

7 `1 Y% W% x! ~4 o  h*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
