Beef with Broccoli

5 N' l3 {  I5 k( n; J5 A5 J3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1 Tbsp (15 mL) cooking wine2 |" T2 f8 i9 E
1 Tbsp (15 mL) cornstarch
9 R/ L0 G4 s: P" n3 h2 Tbsp water

1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
2 {+ ]. Z7 {% i1 T: e1 cup (250 mL) cooking oil
" J% z9 z3 ^% K$ e& g2 1/2 Tbsp (30 mL) oyster sauce9 ~$ J3 ?" I1 V1 o7 u2 O4 Q
2 Tbsp (25 mL) light soy sauce
8 g. l2 J5 ]) V- L3/4 Tbsp (10 mL) dark soy sauce) C8 \7 Q( }$ y5 w
1 Tbsp (15 mL) sugar
! q" {6 ^6 x" t1 u$ sa few drops of sesame oil; X( [  B' O6 L. h/ I0 _; y8 e
2 cloves garlic, crushed
4 c8 Z' |; q+ r$ [1/2 cup (125 mL) chicken broth8 Z. G/ B0 n/ Y. i/ N+ |. Q# w1 L2 n
2 Tbsp cornstarch (if desired)
* O  S* q8 |. ]* H3 t6 v

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 4 [$ R8 ~4 u$ L% @- t8 t
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.) r+ y  o' @3 l0 T0 `7 t8 i
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  $ A0 P. F, B$ g2 b0 y8 x
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.2 \& x, r8 y+ U- h* W% |7 m/ f3 E, U

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
