Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces$ B( D4 X/ V( [7 c- Q" M

  R, |- H2 y/ B7 [% X2 tMarinade for Beef: & \+ s  I2 T' R* M
1 egg
9 f9 d3 K2 g0 f8 z; M; O1/3 tsp (1.5 mL) salt
" X7 D3 S7 ~- A! H1 Tbsp (15 mL) cooking wine
& a* {$ ?  l; J, y% \3 O" R6 w3 \1 Tbsp (15 mL) cornstarch
' M! M, @- {6 L7 h2 Tbsp water1 c( d, J% `' [: m

; c7 N. p% h8 u( N4 r1 1/2 Tbsp (20 mL) oil
% ]) @) U5 w! o4 y- s  t: e$ P: T7 `! {7 j+ {: |7 ^" H5 p
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
5 l* v) \1 A0 V1 cup (250 mL) cooking oil' z7 c0 T4 ^' T* Q' t
2 1/2 Tbsp (30 mL) oyster sauce, l- s5 Q! J. L* [8 l5 g
2 Tbsp (25 mL) light soy sauce
6 r( D5 v) R" x. Y  I2 o3/4 Tbsp (10 mL) dark soy sauce
' A% \+ u4 Y2 t" T! m2 N) V- @1 Tbsp (15 mL) sugar/ h- e9 M$ t5 O8 V. Q8 M7 q6 C
a few drops of sesame oil& N: W4 I. H0 ?, @  C: Z' Q
2 cloves garlic, crushed
6 _. W5 k! f9 l( q* z4 t1/2 cup (125 mL) chicken broth
0 n( U& V8 q- |- a& k2 Tbsp cornstarch (if desired)
& i  e) h( @7 G- A3 T  E/ Q" a6 z* u3 X$ U  J
Directions:7 _/ G) ~$ Y0 G$ A; ]: E6 W& a
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
- H7 O) ?8 M5 L% yHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.- A0 T0 f2 K% L& H" u4 A
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  . @7 H5 M% W3 ~. ^  y' ]* Q
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.; J" h  I, O3 q; Z# n: m: D4 [

' |8 G% }8 h7 o! H) N*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
