Beef with Broccoli

- u: [. F6 m3 D& g# _6 n% y3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

+ g! z- X+ F' x% N6 i& x. eMarinade for Beef:
" r# b# i9 q+ X1 N% G3 K9 b1 egg
' R; K( Q+ K! N1 d1/3 tsp (1.5 mL) salt
; @4 U  n, t6 ~5 |0 S: u: d1 Tbsp (15 mL) cooking wine
$ J0 h. @' v/ Y  `% F3 d4 y1 Tbsp (15 mL) cornstarch
& R) l  P# b! v2 `' H2 Tbsp water
  P. T1 J, `1 y1 \3 w! M: x1 f' ~
& d# p( t; T* P5 c1 1/2 Tbsp (20 mL) oil
* q; Y# P' S3 `1 n+ ~; D. T
* T- `$ T0 O  \% h( l7 v1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices+ O3 C( O0 V* `
1 cup (250 mL) cooking oil0 |' @. J1 n# }, g( n/ n% f7 U1 ~
2 1/2 Tbsp (30 mL) oyster sauce) @6 T3 N2 R; |% P2 E
2 Tbsp (25 mL) light soy sauce1 |3 x* S! O. H, _0 b7 |
3/4 Tbsp (10 mL) dark soy sauce
  ~, U! M/ `" e8 C1 Tbsp (15 mL) sugar
# Q6 W3 h% t" o: q  @; wa few drops of sesame oil5 }- p; e1 @" D1 o
2 cloves garlic, crushed( o; a/ G4 `, e+ L
1/2 cup (125 mL) chicken broth
" Z1 k) I5 N+ |- C8 g2 Tbsp cornstarch (if desired)
% L1 b: y; S! {. E. ?& a

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
0 \1 S2 ?( |- R; dHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.; S2 ^* g, t! [/ I& F0 ]
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
4 z' S% B2 T5 J: wHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.6 K- c8 J1 G7 }" V; @

* r% n8 P: \8 N: l$ J  |; ]*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
