Beef with Broccoli

Serves 3 to 4

/ |  v; [2 o# Y' C& f4 z; T3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1 egg
& v7 z6 Y0 X9 u) F- [$ G1/3 tsp (1.5 mL) salt; P" \, u5 E" z& M+ k
1 Tbsp (15 mL) cooking wine
4 q8 N- \& N3 v! s0 O1 Tbsp (15 mL) cornstarch
6 L) T0 ?% J0 O/ ?: [2 Tbsp water0 A, t% L9 B' g' c! m, b" y+ p

6 {$ E9 h  E+ A1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
, ~  F: |" ?# T0 V& A1 t9 I( i/ U  @1 cup (250 mL) cooking oil& Q+ f; ?: j3 w( w: r5 e
2 1/2 Tbsp (30 mL) oyster sauce
* _. a+ ^8 ^% b( K# B; i2 Tbsp (25 mL) light soy sauce
8 E0 V9 b8 E! A* X* R* t* I% O' y% z# N3/4 Tbsp (10 mL) dark soy sauce
; H" \; y) s' H& }  b( ^$ f% s1 Tbsp (15 mL) sugar( e' Z2 \" r  h. u
a few drops of sesame oil8 T& }/ o- c/ _0 X; u2 S2 D
2 cloves garlic, crushed1 f" q2 z) y" A
1/2 cup (125 mL) chicken broth
9 o" ~7 I7 S1 r8 ^" a3 ?1 J; H/ B2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ' }. _* `: Q2 r7 D  w0 {0 }
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
' f! ?- l  P7 f, d- BAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ' \% J6 F; a3 x5 g* p) e
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.. I$ x" X6 z1 b9 A  e' \

Variations
* `. i, h. W- A' B8 b, T( t*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
