Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
! h6 {5 u& y4 w" J9 u0 F: c3 K6 [  P. ^7 b( F4 S
Marinade for Beef:
% J2 S9 W' B& ~; {8 C. H5 h1 egg
3 Y( p4 p; L/ S) M1/3 tsp (1.5 mL) salt
# w  K7 N3 {# v7 Q4 k( q! c5 _1 Tbsp (15 mL) cooking wine
9 }, f) k9 P- p% [( i7 M- I% F1 Tbsp (15 mL) cornstarch& w0 l7 i* t& E3 P
2 Tbsp water
0 e. N& g( q% b4 C% v. S9 e. N. B+ ]/ A& ]
1 1/2 Tbsp (20 mL) oil* m! ^1 G/ h" j' k5 k6 Q$ Y

* X) u6 _+ O! \1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices( v5 ~  o" h/ B% M% ~8 S6 [  g9 m
1 cup (250 mL) cooking oil
: p* i6 x. `" S5 _" x6 N2 1/2 Tbsp (30 mL) oyster sauce% n& w- }  P% G; Q0 _
2 Tbsp (25 mL) light soy sauce
+ \# L! `8 c1 R1 A% l' Y7 D% n# c9 e3/4 Tbsp (10 mL) dark soy sauce
7 W8 u- z  u9 ~: a, L5 P% x- d1 Tbsp (15 mL) sugar/ Q) C( e/ w9 }- d: D7 I: U+ w
a few drops of sesame oil
4 R. j% l0 U7 w$ b& j2 cloves garlic, crushed, u% Q2 ~% x) i. G$ T( o8 z" [
1/2 cup (125 mL) chicken broth
( K. `9 o* q3 i5 a6 v: y2 Tbsp cornstarch (if desired)

1 |& ]- `/ S/ U, ^0 ~8 UDirections:
2 Y: g! G8 S7 f+ x# {Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. , k1 K1 L* j0 a$ G
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.  A3 ]$ _' `3 d3 }6 Q
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.    c% D# D3 z: P& s
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.4 F- P8 O; `& S2 A7 N# l/ m& K

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
