Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces; B* A: U# n/ v1 A$ a, M9 ]7 Z

4 |' F1 ?& j; k6 zMarinade for Beef:
0 ]( V2 Z2 v. r1 egg % a' x! x  \- B: m
1/3 tsp (1.5 mL) salt
2 z* G+ `- [4 e# Q- M5 C! T1 Tbsp (15 mL) cooking wine
, o2 F0 O2 R* }  c- p( o1 Tbsp (15 mL) cornstarch& o) A- }, Z; O; [! h5 a7 q
2 Tbsp water7 c. d4 t! V0 M# w: L! Z
* Q4 c. ~0 ?9 g7 r) K- p
1 1/2 Tbsp (20 mL) oil
  P& a9 K) r+ j$ g" Y" m/ t( J0 g+ Y
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices! ^# }: E3 L# `7 Q$ r4 S
1 cup (250 mL) cooking oil. {' b" d3 z7 u2 b, y! O
2 1/2 Tbsp (30 mL) oyster sauce4 u& {: ]; ~% V$ B6 \
2 Tbsp (25 mL) light soy sauce
- v# R  o; A& y: r5 l( U3/4 Tbsp (10 mL) dark soy sauce
, ^- \$ g$ h% |+ p1 Tbsp (15 mL) sugar, I' o7 i' D" f& K  n! V( r- e) N
a few drops of sesame oil
8 ~3 d) F. U0 r! s- X: k6 A2 cloves garlic, crushed
1 T& B' ~3 L3 s2 O# _& M1/2 cup (125 mL) chicken broth$ o" y3 ?( f+ g# C, a$ |
2 Tbsp cornstarch (if desired)8 z$ o+ m$ D* E: v3 C& m
$ p  D& q5 @1 V4 N
Directions:
3 w, R2 d! j2 e6 ESlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
. m. C+ ^" J. t  u. bHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.0 X5 j' x' w# i3 Z; \& `- r
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  7 ]7 W5 n1 T& ]; i$ L9 `3 G7 @
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

! w4 _% j7 B8 k% Y*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
