Beef with Broccoli

Beef with Broccoli

Ingredients:& a; ]' ^3 _1 u
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces. V, u  E4 H- J" K! q+ M0 c4 ^

Marinade for Beef: 3 ~6 T, y9 ^- B  N3 n
1 egg
' Y* L* W) G9 t! x2 \8 }" q1/3 tsp (1.5 mL) salt: o4 Y3 B& M; \% |
1 Tbsp (15 mL) cooking wine
; a4 |2 E1 [3 D3 p8 D+ P1 Tbsp (15 mL) cornstarch

3 t9 I$ |3 z; ]" \; M
1 1/2 Tbsp (20 mL) oil

( Y/ P# y: n  K1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
9 _9 B; H# E) @; `2 X1 cup (250 mL) cooking oil
* |( |/ k$ c7 v1 z0 c5 r! h( y2 1/2 Tbsp (30 mL) oyster sauce9 r# C+ k4 S# `9 m5 s( i' B; A
2 Tbsp (25 mL) light soy sauce, f, d4 I4 u* z" z( Q) e* y
3/4 Tbsp (10 mL) dark soy sauce
+ c$ U: i/ B  v! C: I1 Tbsp (15 mL) sugar
* \6 ]. v' Z$ Y. w6 X; _1 x  za few drops of sesame oil
1 K% d9 _5 _4 [2 h1 Y4 |; k( ^+ L2 cloves garlic, crushed8 v" G' I9 M" W1 o6 B/ e7 Q
1/2 cup (125 mL) chicken broth
1 l; p% l" Y% r& X- C+ o2 Tbsp cornstarch (if desired)$ ]* D2 N0 S% o

: q  Z% k, f% N! C7 P5 [0 x9 ?4 X1 @Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 6 Q. v$ y* z, g% m+ ?
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.0 I: t' M: V  }8 c1 H
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
4 w2 _, `+ L2 ^Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
& U% X. K1 k( ^7 i! a*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
