Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1/3 tsp (1.5 mL) salt0 Q) F1 d* _0 W
1 Tbsp (15 mL) cooking wine1 [2 d2 x& @( F
1 Tbsp (15 mL) cornstarch

1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices+ _4 F5 p2 s2 v6 M% P
1 cup (250 mL) cooking oil
S" [1 H, l- C5 @* ^! v2 1/2 Tbsp (30 mL) oyster sauce
' E1 g; U8 M0 N1 Z2 Tbsp (25 mL) light soy sauce
5 U4 o1 F& y: v$ V# @3/4 Tbsp (10 mL) dark soy sauce& B7 w, I- U. w2 @$ {- a# l
1 Tbsp (15 mL) sugar
+ {) _# z6 f$ w, {7 [a few drops of sesame oil
; M3 U3 k" h8 q1 E2 cloves garlic, crushed
2 p6 ^& @9 Z0 d8 [# E* o, }# z1/2 cup (125 mL) chicken broth
& Z! S6 D7 E5 q5 T& s/ r: B2 Tbsp cornstarch (if desired)

Directions:4 C- R- }6 ]/ U4 I( S7 u& J
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
/ P2 ?* e" K( @5 `Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.1 I3 h0 G/ a b" w: x
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok. & S' [( |( k' j3 z# ]; D
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.
