烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none), G3 A& l8 A* O N( g0 s
• 1 1/2 cups sifted flour or all purpose flour (former is better)
! z# K; @) e; S# `/ `• 1 1/2 teaspoons baking powder
9 f% H* ^+ F+ O6 j; G3 J, F, E• 4 eggs, well beaten

PREPARATION:
_* Y2 `+ g1 |- ?7 y. _Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. # r" o4 y2 ?# _
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
, ~2 l4 k2 |- S: FBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.1 s+ c. h: r0 m, Q

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。/ v: \3 c: C: x5 k! L
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
