Ingredients

1 x" Q0 n- O2 m r * 2 big halibut steaks, g4 h+ ^- Q! j3 m" L, v
* 2 tbsp olive oil
7 c) B. L! O$ x7 C/ a- y9 m * 1 tbsp butter |3 W' m4 ?0 _
* 2 cups sliced chanterelle mushrooms
( x/ W6 F' B( l3 v+ x8 L * 1/3 cup diced roasted red pepper

r$ z3 r% K( t+ t$ O * 1/2 cup water

* salt and fresh ground black pepper
4 j6 V7 H) a3 u6 D: t8 E9 v" r * 1 tbsp minced fresh tarragon

Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

. h% d4 h9 s# e% J' x9 c' Y. e' l$ dAdd 1 cup fresh corn kernels,
3 F5 Y- ?# z0 @ I2 g: ^and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. ( K) ]& c' W6 H0 {
Step 3
/ @8 t2 c% }; r4 U9 A* pSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

e+ W- ~$ _& i1 j: gTransfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
