Beef with Broccoli

Serves 3 to 4% q2 R3 k" [% ?" U6 v

Ingredients:
8 p9 I4 v0 Z- |& l0 {& [; _& v3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces) e  O% ^. J9 M! E" U* J7 w
0 K3 F4 L/ h, M; P( @7 n
Marinade for Beef:
9 S! b  V3 f& Z: b; |' n3 s8 T( u1 egg 4 E7 `# U2 b3 W0 c. C9 @0 ]% Q
1/3 tsp (1.5 mL) salt
* x6 h3 A" c5 M* m) C% W& B" B1 Tbsp (15 mL) cooking wine' J& U6 v6 U/ G; X* I& }9 K
1 Tbsp (15 mL) cornstarch
# a* J. T* J- R  L2 G2 r+ `! _2 Tbsp water
9 F$ M& s2 s) Y  s3 L8 K( X3 a2 s* T2 L+ q0 C
1 1/2 Tbsp (20 mL) oil* O) R" Q/ _6 C6 j; s& E6 _7 D: {

$ r$ M3 ?  C  _9 H2 h1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
1 T7 ?! s/ F' D: z9 \5 S7 f! q1 cup (250 mL) cooking oil
, F4 l: l+ J- S# X0 m2 1/2 Tbsp (30 mL) oyster sauce6 q3 J- W3 ]% |& ?( d
2 Tbsp (25 mL) light soy sauce
# U; p7 J* U( j( M, m3/4 Tbsp (10 mL) dark soy sauce
" B/ k, `4 G- k$ e" u2 q1 Tbsp (15 mL) sugar
. V* {$ ]0 x3 R3 r: o6 I/ Za few drops of sesame oil
% h4 o2 a9 Y' K+ B) D, w2 cloves garlic, crushed7 s% |" [7 e% O& A2 x2 \7 m
1/2 cup (125 mL) chicken broth/ d! D# g; H" X' {8 N8 G3 z
2 Tbsp cornstarch (if desired)
; c0 d0 M8 m+ [$ `; q2 X! h4 S. f( C3 _* ~' ]& y, Z
Directions:  c; D, j* _8 p5 B* s
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. / \$ G! D/ [  X5 [
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
0 E9 [$ S3 k5 @' P" xAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  1 z% h  A% \) L
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.: w+ L* f" b5 m! a) S& _! R

Variations
' I% H2 N& v0 D" |! k*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
