Beef with Broccoli

Beef with Broccoli

Ingredients:- S* X9 @( z, v
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces( |4 ]4 x  ~. D6 S2 w2 k

! p- p. y) q9 jMarinade for Beef: # a. b5 i# y( e6 Y% K# G
1 egg & p8 h! b: ^1 O  \4 |
1/3 tsp (1.5 mL) salt
+ Y- r& T" N8 a, ]# p1 Tbsp (15 mL) cooking wine% C; j; E6 Z/ z& _: g% k" X  E3 o
1 Tbsp (15 mL) cornstarch
! x/ M( D: H" w* H, H  p) ~8 d2 Tbsp water7 ]5 b' ~/ v* c- \
% D' [$ {' \; n7 P+ u/ L+ N" M
1 1/2 Tbsp (20 mL) oil
4 o# @% m5 f; }- @/ B8 m( T
: f7 X) J+ H# F1 x1 d1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices3 d# i& J' y: t$ z$ S. h0 c
1 cup (250 mL) cooking oil
3 A" ], D/ O; M2 1/2 Tbsp (30 mL) oyster sauce+ k9 g6 Q/ g6 x" d1 A. M
2 Tbsp (25 mL) light soy sauce
7 w+ e% C2 T' d. I- Z# f5 F7 F3/4 Tbsp (10 mL) dark soy sauce& c) _$ R4 ~2 d/ C" e0 d/ C
1 Tbsp (15 mL) sugar
4 j# z8 O* ]0 a0 y" Ba few drops of sesame oil& h2 K$ f! O% G7 O4 }$ L' v
2 cloves garlic, crushed
' p9 `- H1 q& ]1/2 cup (125 mL) chicken broth9 w" P  J2 O# R
2 Tbsp cornstarch (if desired)3 w  J' a. n, j0 O
! {$ L% @1 a: t7 F. r2 S
Directions:$ a9 Z" ]$ _3 o
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 9 `9 M4 i/ W* Y! Q6 [" ?5 i4 V
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
: B# R+ k7 S3 e1 ]  l3 V7 MAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
" J" v. U  |0 D$ D" ], L. pHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
