烤蛋糕
INGREDIENTS:

7 b( p6 n" ?( T6 u, V" _0 l• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
2 V: c$ E8 g8 |6 ~, y0 W• 1 1/2 cups sifted flour or all purpose flour (former is better)

• 4 eggs, well beaten. ~( W4 Q9 f, x% M, r1 p

Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
5 G0 p& {+ R5 R3 a& c4 a* uTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
1 [- p! {8 m* ?! t& l! |Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。' |$ ]" ^. K6 u/ I' Y+ ~3 X
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。5 c z( h3 s5 `, }* w4 j
( Y* a/ l/ E, @" C3 o5 n2 ?2 X检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
