烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)" \ d( D2 C, F. r. @2 F/ r8 c
• 1 1/2 cups sifted flour or all purpose flour (former is better)" {7 ]! `: y9 ~& I. j8 J+ h; k, H
• 1 1/2 teaspoons baking powder ( Q0 f u! j1 O- h$ F
• 4 eggs, well beaten

, V3 o* c/ u' S, fBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 8 `3 ~& \+ v" D4 \' {% n$ T) t6 v2 K
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
. ]" o' q' m! aBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

/ H; M0 @3 a! E+ U% A这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。- W$ { e9 ^. U" d8 g' M
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。. j2 `+ C, P: x9 ~% y

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
