烤蛋糕

• 1/2 cup butter ! ^% v+ U8 b; d9 B# G* R+ g
• 1 cup sugar ( F0 a) j9 q- M6 L, `
• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none); j1 g6 L- Y. A' D
• 1 1/2 cups sifted flour or all purpose flour (former is better)

PREPARATION:
. {; P6 W; G/ |2 r4 c5 e. [Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
6 R* [) j B5 j `! F. Q) lTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. ( u$ l# y2 U7 y2 J, O! D/ Q9 o
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

4 ^ s+ q8 X( K* S% V8 E这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。
& c6 o2 X4 r s1 n# E" Z, t7 |0 Lbeating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
