2 n" a( s! }6 i6 U$ hBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 9 I: `1 ^+ F; f: E3 x/ c1 ~5 _; w
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. " }. ]' {5 A( D6 P6 P
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

. d4 y& p7 h- @I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.$ m9 a% {2 O" D5 f

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
