* 2 big halibut steaks1 \5 R/ [1 R0 x$ d& i) S
* 2 tbsp olive oil) V: \' i3 N( j7 U h6 Z
* 1 tbsp butter- O) G( Z5 e$ f7 `! y0 i- y
* 2 cups sliced chanterelle mushrooms9 d7 w* D0 X' T- R( s" _
* 1/3 cup diced roasted red pepper

* 1/2 cup water

Instructions

2 u' w8 ]( P4 U. U4 _2 NSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Step 2
1 `0 C8 V( u2 _0 w, ]' UAdd 1 cup fresh corn kernels,+ _6 [- l; V. Z# ~$ a3 q
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.

Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

4 v; v) B8 a: v# ]4 E8 BTransfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.3 ?: X2 p3 f" F# f: e1 w: h
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
