存一个菜谱,调整了好几次,现在做得比较成功,做酸种面包的妹妹们可以采纳。我用的是7 quart 的铸铁锅

rye starter: 1/3 cup

% j4 H$ o9 m' m5 W% X O, `sugar or molasses or honey:4 Tablespoons4 X$ ^! @6 r" s" | k( c8 s
salt:3,1/2 teaspoons
( n) {2 V. l I) b4 D& kDark rye flour: 3 cups3 k9 h3 b X2 ]' F
Wholewheat flour: 4 cups; a6 |, F. c7 y$ \' {. o
1 \7 y7 w( L7 Hoptional: (我没有加)
8 T3 N5 c! N$ F& g: @. hFennel Seed 2 Tablespoons
& _0 o' `* Q4 [& l! Y0 }Anise Seed 2 teaspoons

zest of 1 orange* b+ c; u2 L0 O) L' S5 v

搅拌揉好,用保鲜膜覆盖,室温下18小时-24小时. j6 x! {4 L4 n) o* P
取出来折叠成型。放在和烤盆同样大的盆里,覆盖,继续二次发酵2小时。注意:发酵盆里要放cheese cloth 上后撒大量的面粉(因为rye的面团非常粘)# {; ~8 t. K" I6 z/ f! c
& n4 L2 e% M% ~$ F/ Y! j, G1 U# ]
preheat the ovan and the pot 500 华氏
1 U% H* r! B9 z9 Z- j& ]% O& wreduce to 380 华氏,and bake with lid on for 60 min5 Z1 S: p' z( X# |. r- |7 W
open lid and bake for 10-15min
! j8 }1 n4 x, E7 L9 mBroil for 3 min until the crust turn brown' x: W& H( }; W
测试面包心要91摄氏度以上% Z& D+ s" b( A( o
cool

吃的时候切片, 简单吃法就是用toaster 烤焦一点,抹黄油吃, 复杂的吃法很多,随意。 |
