rye starter: 1/3 cup

sugar or molasses or honey:4 Tablespoons
2 X. S& L% p2 j! psalt:3,1/2 teaspoons! ?& b7 p2 D7 q" Z! @
Dark rye flour: 3 cups/ w0 a. L+ x! N- i* ~3 e
Wholewheat flour: 4 cups

搅拌揉好,用保鲜膜覆盖,室温下18小时-24小时
& J! h+ w) C; q. W取出来折叠成型。放在和烤盆同样大的盆里,覆盖,继续二次发酵2小时。注意:发酵盆里要放cheese cloth 上后撒大量的面粉(因为rye的面团非常粘)

reduce to 380 华氏,and bake with lid on for 60 min# |. \( t+ G2 @" O2 V) m
open lid and bake for 10-15min + ~9 R4 ]; d& x% e0 O: g$ s: f: ?
Broil for 3 min until the crust turn brown3 T& d% b) R5 y5 ]9 K4 V$ `5 F
测试面包心要91摄氏度以上

( z6 O& s; ^6 @% g2 \% k吃的时候切片, 简单吃法就是用toaster 烤焦一点,抹黄油吃, 复杂的吃法很多,随意。 |
