Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

0 @' c" s9 F3 {9 R' a3 ?Marinade for Beef: 8 F  }5 J+ c; S6 C
1 egg
& E0 @" M7 E/ Q1 s! x) D/ B1/3 tsp (1.5 mL) salt
$ V1 U, i. H8 t: t: A( l' J1 Tbsp (15 mL) cooking wine! F! x1 W3 [, r9 o( h, p2 p
1 Tbsp (15 mL) cornstarch& [3 p8 I! p" D1 I) C2 k& _4 s
2 Tbsp water
9 J# J$ U; N0 A2 {4 }9 L$ Y8 z1 W' l3 \
1 1/2 Tbsp (20 mL) oil

8 ^; C* ~( P3 `& Z$ M7 T1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
' j5 t2 d+ J/ d- W7 G1 cup (250 mL) cooking oil
& c1 {) a* ~, N. n! V3 j2 t2 1/2 Tbsp (30 mL) oyster sauce
3 `* d8 F; N+ a/ }5 r) A2 Tbsp (25 mL) light soy sauce
! o! W0 Y. {# y5 s' h3/4 Tbsp (10 mL) dark soy sauce6 [1 I+ q6 I% R; F9 w8 S
1 Tbsp (15 mL) sugar' e: Q  L, }5 K
a few drops of sesame oil
( x. F) U5 L. ^4 y% j" X/ }* X2 cloves garlic, crushed
- @. ^8 o8 k1 }1/2 cup (125 mL) chicken broth: e8 _9 R* I- M5 h# X+ ^0 U% n5 W3 L! a
2 Tbsp cornstarch (if desired)/ B# i( _0 j! T; N; a% y

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
: P) \- ~! p4 d5 C1 {Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
6 ~& ^2 ?5 m! p: K5 Q  ]Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  - F# o/ t9 e" Q2 G
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

4 i; w. L/ W4 ~* i*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
