Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces" g" X. B( ]1 i4 {& H2 S

0 P6 x/ l! S% H0 D8 @3 lMarinade for Beef:
5 _5 W0 _2 e# c7 P6 A7 |1 egg
/ Q" K  ]! J- H: ~3 l1/3 tsp (1.5 mL) salt" }0 c( f2 D; `& q' R
1 Tbsp (15 mL) cooking wine7 t! R$ @: P9 N. b0 m; b
1 Tbsp (15 mL) cornstarch
6 G+ _2 Z: j: [2 Tbsp water  Z: g6 f9 K5 `  s

1 1/2 Tbsp (20 mL) oil- Q0 P* ]6 o' w; i2 [& Q

: I# r9 S- G! w1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices( g4 Q. [7 t+ w0 U, `4 V0 c* k
1 cup (250 mL) cooking oil% F( C' s1 Y, i8 G! E
2 1/2 Tbsp (30 mL) oyster sauce  \6 R. U5 Z7 I! i+ s2 W
2 Tbsp (25 mL) light soy sauce# _3 M8 t, F+ z4 }2 x
3/4 Tbsp (10 mL) dark soy sauce
& D$ M- f! a) P8 y1 Tbsp (15 mL) sugar
7 H; n4 ]- C6 s# `2 R3 fa few drops of sesame oil
3 [9 }$ `6 M5 w7 I6 I8 {2 cloves garlic, crushed
3 ]/ s' m6 Q. l1/2 cup (125 mL) chicken broth8 f! g  s2 v$ v1 c$ R+ g, Z
2 Tbsp cornstarch (if desired)2 C" _7 t+ Z8 y2 U/ s# a7 u

% X( F9 C% p4 S& a9 KDirections:
+ \+ C4 s, N7 y6 Z, ASlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ; `+ W+ q( B) o+ j
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
8 Z4 ?9 v$ \. FAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
9 M) h$ u/ u. i2 eHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
