Beef with Broccoli

Serves 3 to 4

- _8 F" H5 Q  d4 o7 [9 r( l3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces: P% z  v. c" p7 ~0 P  Q: B

4 t3 U6 N( r% r, V, o2 y: HMarinade for Beef:
& E8 K; B. B$ A- {6 D8 w1 egg 7 Q# ^/ b3 |; A( X( o% A; m
1/3 tsp (1.5 mL) salt
5 X& q3 X' Q$ x6 o* I( o- d1 ~1 Tbsp (15 mL) cooking wine5 u9 |% {* {% A& |7 d
1 Tbsp (15 mL) cornstarch
' ?! k: Y8 S1 ]) j+ o2 Tbsp water
/ m# _& h. n# C2 Y
) ?3 w% x2 F7 Y3 z1 1/2 Tbsp (20 mL) oil
& ?0 [& W! Z& _0 C2 ~$ T3 b/ {! _$ }* s$ Z" ?1 D
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices( R: m8 u( G! b; m6 }9 g
1 cup (250 mL) cooking oil5 B& D: L8 j( e( Q1 J6 a
2 1/2 Tbsp (30 mL) oyster sauce/ i5 v: A" b/ l1 [+ s* x
2 Tbsp (25 mL) light soy sauce8 G1 L  r1 [6 x$ _' J! s
3/4 Tbsp (10 mL) dark soy sauce
2 I  \  [" u) F& X4 q1 p; C+ b1 Tbsp (15 mL) sugar3 d. O/ m; p8 z
a few drops of sesame oil7 A' ?5 O- @( X2 H; O: C; x9 Z, g  ^
2 cloves garlic, crushed- x* x% n+ A" W! f% o9 P. g
1/2 cup (125 mL) chicken broth
4 R, L( @4 M4 u6 ?. g( {2 Tbsp cornstarch (if desired)
. S* x6 j% {" _$ n% O4 _) K+ g
" i7 Y# F" d5 Q- [1 h1 V% w, s! GDirections:
3 y# B: R4 Y, E4 T+ p* W8 ~Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
1 G6 `9 c2 ]& [, _7 nHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.! I' N0 y3 a* @1 D- p
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  : I) _  L3 J. d, z3 O) {' N( s+ r
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot./ }' l. ^$ }1 W) R

. B5 x% Z9 i- H8 i3 X) K*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
