Beef with Broccoli

Beef with Broccoli' w8 K& n2 c6 e# A- ~+ J
Serves 3 to 4: x0 S. W8 ^) u* H  K1 V# C

Ingredients:* |/ `% l! ]7 b4 W4 b  s4 M- u3 P
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

  ~; g  O0 F8 w1 uMarinade for Beef: 5 \$ ^  B' G: [+ i
1 egg ; Q, U7 e/ N* R
1/3 tsp (1.5 mL) salt
& g+ N) V  v, H, i: B1 Tbsp (15 mL) cooking wine2 O5 y0 m, M6 \' T! K5 E
1 Tbsp (15 mL) cornstarch' ?4 K) _# F7 r) Q9 c
2 Tbsp water! t' w/ _* r' y6 |& Z
: ]9 y" A" _+ G5 J- v& p
1 1/2 Tbsp (20 mL) oil; h& M! i; F% J0 w7 I, g: x
3 R* k, N. }' ^( k2 c& s9 n- ?
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
6 j: u$ r- J' ^. \4 A( e1 cup (250 mL) cooking oil  k, M2 b3 L* S
2 1/2 Tbsp (30 mL) oyster sauce+ P3 n- @1 t" g& J: t
2 Tbsp (25 mL) light soy sauce  e( P7 y0 F9 O# G* z- W& _* g
3/4 Tbsp (10 mL) dark soy sauce5 i2 W/ d* ]8 [& L' D0 f* c) F
1 Tbsp (15 mL) sugar* O6 N9 K0 T: R- u/ u
a few drops of sesame oil+ f- i) _# K6 m5 W
2 cloves garlic, crushed
; q. Y+ n0 U3 I" v6 Z2 L( {' Q: H1/2 cup (125 mL) chicken broth. y# Z+ W" ?' V1 R
2 Tbsp cornstarch (if desired)/ F* G" A& h: @9 W
* ]- A. v% F! ?6 P! }' M* o8 H
Directions:/ H; W0 l9 F( X" ]1 ^& r  u' L8 M
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ( x: Z. W8 O5 s/ Y6 ^
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.+ W+ S, ]: X, g! A  O& D
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
; ~5 k3 T/ ]' c; h; qHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations! w4 d* }8 N+ |1 q( v
*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
