Beef with Broccoli

Ingredients:
( O' M$ D, E; t3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces6 U, f; u) @" \$ J

1 egg
; q2 @. Q1 L$ s1/3 tsp (1.5 mL) salt
+ l0 |; w9 W2 U) ~( B1 Tbsp (15 mL) cooking wine" m% I: i' w( _+ S' r5 T
1 Tbsp (15 mL) cornstarch
2 r0 i) S; ^* E; z7 t2 Tbsp water
1 @/ Q4 ^- |8 Q# K7 {  R- \+ U  _! E, c+ Z" l
1 1/2 Tbsp (20 mL) oil
2 E3 R) H0 {# Z+ u+ a. \
1 Y" g, d! d. W- O+ _( ]1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices# ~* l/ }/ `& M% t4 R! X7 Y! ?$ K( s
1 cup (250 mL) cooking oil8 ]6 b' V3 N" t/ s4 E
2 1/2 Tbsp (30 mL) oyster sauce  O) W, ^4 N: d
2 Tbsp (25 mL) light soy sauce, ?4 d, `1 W# h% g
3/4 Tbsp (10 mL) dark soy sauce
+ a# \& o% R# d8 z1 Tbsp (15 mL) sugar6 _2 J$ H2 ?6 Q) f  H4 D6 i% @$ o
a few drops of sesame oil, J7 }0 n5 u' T! R$ V) s
2 cloves garlic, crushed9 m) u" k  w' U' H; M6 h+ U8 [
1/2 cup (125 mL) chicken broth/ e5 O; z$ C) c7 y# a# y  z
2 Tbsp cornstarch (if desired)
; T( s! j( F, E. Y/ j9 U: f: x
3 X+ m; u; T& N' B& }Directions:/ e# o$ G! g1 L
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. $ x, r$ ^& z( Y& S3 c
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
# `1 I/ n% ~1 N* n% j) oAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
. ]+ d, X& H. q+ `) w* A. y9 E" WHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 C* P  J, V) I' `/ N2 e7 s6 E0 I

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
