Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1 Tbsp (15 mL) cooking wine
1 A$ s; w# i3 Y5 @/ H' t8 q1 Tbsp (15 mL) cornstarch

1 q, \, X/ U( c$ X5 f9 s1 1/2 Tbsp (20 mL) oil

* k3 d; q8 S I) z1 N1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices

2 Tbsp (25 mL) light soy sauce3 q" R7 o; P6 B0 L1 D+ i
3/4 Tbsp (10 mL) dark soy sauce# H! r/ l, @, W9 U: B; d0 I
1 Tbsp (15 mL) sugar
4 z% E, J9 K% _ s- y& ba few drops of sesame oil
( z4 @9 V- J! N& s2 cloves garlic, crushed
* q+ h% \1 M: I% z, n1/2 cup (125 mL) chicken broth4 v b: v- \0 {7 Z2 g
2 Tbsp cornstarch (if desired)
) N& w; y1 }0 F. @3 o. s' ^) I

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
0 h9 ?6 |% |+ B! DHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
6 u I e0 @+ v _# O) g& V0 uAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
% _" e" Q$ Z8 t- w1 J3 F) NHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.9 I7 G' Z& p) A3 Y1 r- K' w* Z
