Beef with Broccoli

Beef with Broccoli

Ingredients:
3 M+ }' }' s8 H; d' S( n) {+ @3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, ]4 P, ~$ _6 w6 D5 U7 j9 H

( G- b4 M" u( {! iMarinade for Beef:
1 v9 a' Y% W" j1 `4 A) |5 O0 I1 egg ; Y4 }9 B* N: N" D* \4 Z8 j( ~( h
1/3 tsp (1.5 mL) salt
* f) ]. T; o- H1 Tbsp (15 mL) cooking wine
% B2 u% h! Y0 B3 v1 z1 Tbsp (15 mL) cornstarch* A% B* k* {4 V" E9 P2 f" n8 l
2 Tbsp water
$ V' X( {# G  ^0 k# n2 U3 b
9 T( ?/ R  X  S$ M" J  n1 1/2 Tbsp (20 mL) oil
" {+ Q, C/ o  ]3 u' V+ r5 ~6 u3 e) ?1 I3 l4 S" x
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices; d$ W" B) Y' R9 \+ X% [& q0 c  W
1 cup (250 mL) cooking oil
9 B, \3 G0 t) Q: @5 V- @2 1/2 Tbsp (30 mL) oyster sauce3 z+ Q4 \0 X" G$ G
2 Tbsp (25 mL) light soy sauce
8 ?& M9 N, U) y' g1 ~; E6 I  L3/4 Tbsp (10 mL) dark soy sauce
/ d3 R* P" j( W1 Tbsp (15 mL) sugar
. L+ M5 Q; o( Ua few drops of sesame oil( c. m+ Q5 g: M
2 cloves garlic, crushed8 k$ F2 f, T5 }- o- o
1/2 cup (125 mL) chicken broth0 n8 ?$ o; J/ ?3 p; V. K
2 Tbsp cornstarch (if desired)  w. J8 B% g* x7 M
) V6 }: X& c, m  S6 [" U+ z4 F
Directions:( I- e7 k+ ]  {' \! ]. V
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
8 V" J) \( r" l. a4 VHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
+ k; U, B& K% Z8 JAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ( }: I% T6 j/ ]5 W
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
