Beef with Broccoli

Serves 3 to 4

Ingredients:2 [: A5 s! l) c9 |
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
9 v" f" e3 s+ D. T1 E; @/ Q$ z' P" c$ D3 Y7 o
Marinade for Beef:
& A! }( M' v! J% W  X& R, M1 egg ) E7 I. q* I- m5 f4 Y
1/3 tsp (1.5 mL) salt$ c, U. s+ Z4 ^
1 Tbsp (15 mL) cooking wine
& t7 n+ I2 W" @+ q$ L# X7 k) f6 p+ v1 Tbsp (15 mL) cornstarch
( I7 W! }  Z; f& q( f2 Tbsp water8 i( U  u0 {( o7 ^8 L& b) O- g/ D
# \" K/ W# q0 b4 U3 {7 M
1 1/2 Tbsp (20 mL) oil- \5 A6 _6 j. ]7 ~: m2 i- V5 `1 z! a
2 ?: b! Q& Z0 F* b
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
( D& Z8 E- H6 u" k& p1 cup (250 mL) cooking oil
1 e9 ~, L) w: e# [  p" g# N$ y. Q2 1/2 Tbsp (30 mL) oyster sauce; z0 k2 H2 h! r# i) [& `
2 Tbsp (25 mL) light soy sauce; N, M# g# N2 g: ^
3/4 Tbsp (10 mL) dark soy sauce2 a, O6 K! }, c6 ?9 _( G
1 Tbsp (15 mL) sugar- o9 a) V) p( i' W' n8 I7 Q5 R2 A
a few drops of sesame oil$ v# Z( {% k# T8 }0 C7 f
2 cloves garlic, crushed
# q- W* v, R$ I. d# W( J$ N8 Q: x1/2 cup (125 mL) chicken broth# u) }' ~1 m' p' y% o- K8 A/ \
2 Tbsp cornstarch (if desired)& _4 g' x: S4 Q' w  N! J

+ R& R# F; J5 p- J( I7 n9 X+ n. xDirections:  }$ y, O" ]% W; H/ T
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 2 j) r2 i8 Z& c. \$ S% o3 E, b2 w
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.' k4 R* Q; v% C( }% Y  z
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  4 M) V6 f4 j4 \; |, D
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
3 n. P* q+ k- r/ o! }, A/ v*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
