Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces" u) b5 Y. k3 R- ]

Marinade for Beef:
/ B- Q5 H7 T6 u# r( p1 egg
; `1 h: ~- c5 g3 g4 d5 ?" v7 k1/3 tsp (1.5 mL) salt
: Y) U- [7 d9 W8 _; x: P3 r5 x1 Tbsp (15 mL) cooking wine
; a8 n9 c2 i7 P1 L8 l5 z1 Tbsp (15 mL) cornstarch5 M( K5 y( ^' v
2 Tbsp water

1 1/2 Tbsp (20 mL) oil8 e  j% ]4 q8 b2 `0 }3 i

" B7 _/ N4 [0 E  [9 J1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
1 \# X! y( L; _# B1 M1 cup (250 mL) cooking oil
) p9 \6 M8 V% e2 1/2 Tbsp (30 mL) oyster sauce- A0 R) N: i( E8 K8 M' z. l) Z+ j/ h
2 Tbsp (25 mL) light soy sauce
7 @3 C2 I. A8 `0 t$ G1 w) i3/4 Tbsp (10 mL) dark soy sauce0 @8 K( k! ^- I* _2 j/ y3 _# T% U  K
1 Tbsp (15 mL) sugar8 N  |" l% m' ?3 T
a few drops of sesame oil7 x5 M7 J! S) u! T: o3 \
2 cloves garlic, crushed# h" u/ K. S" p1 h/ }1 p; H
1/2 cup (125 mL) chicken broth
& t* G& Z2 u3 i6 U( T, a2 Tbsp cornstarch (if desired)

Directions:, q8 n, o# J) r6 [
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 0 [( h( V3 H: t& l3 q
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.7 E% L+ A. c8 T' x2 X
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  7 [5 g( G2 M0 f) x* ?0 o
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.) Y& P6 r' ?9 K; P4 _- K, P

Variations
& S1 i. W* H& s1 X( U& i0 c*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
