Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
" A# w2 [1 k* i; M' v0 d; P% |( E# V* C. Q) `% |" g
Marinade for Beef: ( ?0 M- a+ k" Y; b% C- A
1 egg
, W9 ~6 I- J  _, \# t0 q1/3 tsp (1.5 mL) salt
; P4 l6 b+ s6 a" [) _1 Tbsp (15 mL) cooking wine
3 Z4 t! ~# c5 Y& \! V4 D1 Tbsp (15 mL) cornstarch

# j% K% Y% ~6 x! L6 D) H) C' \1 1/2 Tbsp (20 mL) oil% O6 @4 O6 }# R

/ ?/ w: y+ h; k9 p; Y% M1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices% e2 p" A7 ]; t- r8 ]. [& J
1 cup (250 mL) cooking oil8 i5 n' o, _+ Z/ |6 G; r
2 1/2 Tbsp (30 mL) oyster sauce1 d% j8 s; J8 G, \6 v' e7 F4 h
2 Tbsp (25 mL) light soy sauce
  S) g( ~7 x. G1 j3/4 Tbsp (10 mL) dark soy sauce
0 Q) V, T2 |/ {1 Y/ J* q1 Tbsp (15 mL) sugar) E9 b4 J/ f! O6 c1 b
a few drops of sesame oil
, S; Z! y! ~4 T& T3 z- L5 `  Z- l2 cloves garlic, crushed7 S4 @7 X3 ]  ]# z3 M! G
1/2 cup (125 mL) chicken broth
! X* h, ~, F+ B/ k$ m2 Tbsp cornstarch (if desired)
3 z, H6 y+ M9 p# u# a; s6 ~
9 E1 q! a4 e$ \  S3 `" e2 B# {6 ~Directions:
" n; U( a( e. ^# @/ u- aSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 3 K; g- ?; J7 H! D3 c# S: E: ?# Z" o
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.4 o2 O+ ^) @: r% w2 V
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
2 F7 d2 a8 F0 ZHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
