Beef with Broccoli

% j" |: K: m, Q3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces" W+ b5 B: ?, {% }- H: f

Marinade for Beef:

7 c% {4 y+ M+ x' [2 H% p1/3 tsp (1.5 mL) salt
4 Q- s* d! q3 H4 P1 Tbsp (15 mL) cooking wine8 |& R5 A- I' C  j
1 Tbsp (15 mL) cornstarch
9 }5 T1 Z. x4 |, e9 g2 Tbsp water) l8 ?0 H) n2 m

1 1/2 Tbsp (20 mL) oil! R$ @9 m7 g/ I$ l$ U$ z, k

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices1 E' ]% ]8 n7 i3 N9 E
1 cup (250 mL) cooking oil
, K. m6 N8 v2 Q7 v2 t2 a2 @$ C, |2 1/2 Tbsp (30 mL) oyster sauce$ {: ]1 b0 l/ c, B. _- |% W
2 Tbsp (25 mL) light soy sauce3 y) Z8 ?5 p3 l5 K
3/4 Tbsp (10 mL) dark soy sauce
3 N5 y, U& s$ F1 Tbsp (15 mL) sugar
/ H5 j3 p, ]0 Ma few drops of sesame oil2 W% f! }0 l6 w& M% ^
2 cloves garlic, crushed4 s4 B$ c+ Q# A7 j+ ^$ R0 X. a
1/2 cup (125 mL) chicken broth
) ]0 H% z4 s  o1 X. I2 Tbsp cornstarch (if desired)
% ]. x+ B) R7 B3 K' E% l$ f5 P8 [4 m. C9 |8 a
Directions:8 d4 U$ [: \* r: H7 W
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. + u% E5 P7 M4 e
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel./ _: @( J# |+ L
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  7 l: f, G8 u3 |7 o* @% K" u% v) o
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
