Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces7 N! H8 u; x# w

1 egg
6 s/ a: F; O! U( s4 Z1/3 tsp (1.5 mL) salt
/ Z# _9 k! {6 d* S4 o9 W- B1 Tbsp (15 mL) cooking wine1 ?' ?& }5 @4 U% P* T
1 Tbsp (15 mL) cornstarch
# e6 y/ l( N7 l2 |7 E  ?# c2 Tbsp water
+ N, L" W$ j! O5 o2 Z1 {$ K# I% F4 w! o" M
1 1/2 Tbsp (20 mL) oil
1 Z# ^# Z  ]" x9 r4 n; r; ]  j1 ]! T) U, @' n6 l  w6 V' w( c9 S
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices% b1 ^; m$ H) L3 X
1 cup (250 mL) cooking oil/ w5 `1 p  D* v
2 1/2 Tbsp (30 mL) oyster sauce
" Y2 q- K: N8 R8 S" n: W2 Tbsp (25 mL) light soy sauce8 b1 h+ d2 W$ F) l+ R0 j* K/ h
3/4 Tbsp (10 mL) dark soy sauce
0 j( k' i5 H7 z7 u6 T$ ~2 l# I5 y3 D1 Tbsp (15 mL) sugar' A; z. W0 q: L) g) e* j9 r
a few drops of sesame oil- V* W' c$ `& [. p
2 cloves garlic, crushed
* n  F" R: F: m2 Z0 K+ X1/2 cup (125 mL) chicken broth- j, F5 P7 G, b- q# {. ?3 }' O2 {
2 Tbsp cornstarch (if desired)
$ P2 p8 d9 e; o! g  k$ \6 v7 y! `% C% g
Directions:
# y- o7 X1 \  F* x9 {' X3 {Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. + v9 K) s' S6 ]( L
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.3 `, t/ X3 l& O+ e: |# Z
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  4 m6 k- }$ o$ E2 g
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.: X0 \' f: t& V! H, H+ l- x. f

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
