Beef with Broccoli

Beef with Broccoli

Ingredients:, J' k1 ]( J6 [. ]% t
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
. v. D' m) `( M$ i' n, S
/ h$ T& ~4 A' {# k9 P0 {* `Marinade for Beef: ! r% b3 _& d+ x& y  t! i# k
1 egg 8 U2 E! V5 M4 F0 q
1/3 tsp (1.5 mL) salt
+ |+ ], q; u7 d* E7 r( v1 Tbsp (15 mL) cooking wine( i, J& s! A/ n- M$ Y6 j
1 Tbsp (15 mL) cornstarch; |6 n' R5 G. R7 m) J# H
2 Tbsp water" Z6 g' l* M5 C

/ v( e4 d% S: p. ?6 ^& A) ^: P* m1 1/2 Tbsp (20 mL) oil
+ e5 o7 `, _" D- N3 C0 F( B0 |* F6 s: P6 c& p8 B
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
/ r9 m2 Y: H2 ^, H* [- x  A1 cup (250 mL) cooking oil$ B# I4 b+ ?/ F  }3 ^, b
2 1/2 Tbsp (30 mL) oyster sauce2 v; E8 o! V( ~7 j7 |
2 Tbsp (25 mL) light soy sauce) q+ ]9 w  c& u* Z) f% f; F
3/4 Tbsp (10 mL) dark soy sauce
" Y4 |) }8 H# |+ t4 j0 t6 N+ J6 s/ n1 Tbsp (15 mL) sugar
+ Z' _6 A  Q4 F$ ma few drops of sesame oil
& C6 m" Q  j: Y$ Q9 D2 cloves garlic, crushed
1 P; S% E- t! X  I( s1/2 cup (125 mL) chicken broth4 M- z9 |8 g3 l! ?8 w
2 Tbsp cornstarch (if desired)
* B' L" ]6 w( ^  P$ z! s- I9 a
  p, d5 n& _% d/ aDirections:, _* N7 `) i" J4 g4 e. v9 J
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. * I; E" V9 S: q  X% r
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.4 v  f$ ~; j  s6 O. J6 A3 g
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
8 ]6 f# J# Z4 b0 A2 S( c, UHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.  G# N  U5 E; [- s; U) J+ _0 v* `

- `' E. O; W8 j8 Q0 P5 o*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
