Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces  t( o: T) d$ m) s

( e6 _' s  ?6 @4 gMarinade for Beef: & j8 v6 Q2 C9 x7 c/ D+ u* j: K
1 egg $ g$ m9 v# L" u* x7 z) m; Z
1/3 tsp (1.5 mL) salt
0 ]( d0 W  b# c3 A9 E1 Tbsp (15 mL) cooking wine
! R1 V2 O% c3 @1 Tbsp (15 mL) cornstarch
- Z$ A# J9 ?) \9 M2 Tbsp water

% B' s. F6 y! l  c& Z/ w1 1/2 Tbsp (20 mL) oil

1 e3 n+ Z" y4 E1 W- _7 h( ~1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
  h8 Y7 q8 \. u( U, Z: h# m1 cup (250 mL) cooking oil- l; W3 K, v  W: ?
2 1/2 Tbsp (30 mL) oyster sauce
+ L1 _9 P# C+ g  N2 Tbsp (25 mL) light soy sauce
) `9 W% H/ ~  |1 _/ [" m3/4 Tbsp (10 mL) dark soy sauce6 s. Q' U& s- C( |1 k
1 Tbsp (15 mL) sugar! q3 p; k' ]6 q6 |( _
a few drops of sesame oil
, {4 ?6 P* y) _- @2 cloves garlic, crushed- L& [/ N! l; x( |. X
1/2 cup (125 mL) chicken broth4 N9 p1 r" V( h1 {5 E9 R
2 Tbsp cornstarch (if desired)/ u% h: _& g8 g# @! ^
0 L' d- D0 J4 J( R: c# N/ Q0 x
Directions:
8 T" v: J  A5 j  Q& X* dSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
9 W" _# m' U2 }Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
( L# B5 n1 S2 \4 g1 FAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
9 O( N4 j9 {, a$ ]9 \7 AHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.2 [, ?" p7 f* F2 K

Variations
0 t2 B; @4 G4 W/ _  l0 ~7 a*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
