Beef with Broccoli

! S  d# K1 H. d" j' a* e3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces  R( }- H: ^; k0 [& [

- f( q3 G6 ?' [* K+ rMarinade for Beef: ; O2 l+ |) l; d0 r* \- b
1 egg
9 t$ T; ~9 F" A- {% N1/3 tsp (1.5 mL) salt
9 a  o) g' v1 ?; L0 n- `9 m- ^1 Tbsp (15 mL) cooking wine
' Z" B3 R6 U3 V' E1 Tbsp (15 mL) cornstarch
: }5 L' |: O; }2 Tbsp water

( a! O% s3 I' a1 1/2 Tbsp (20 mL) oil
+ m% t$ s& H7 I. J& }* A/ B) N! y
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
: C/ E# T0 F9 q1 cup (250 mL) cooking oil
6 U! k- |5 ^6 e4 s0 f2 1/2 Tbsp (30 mL) oyster sauce
% [) p$ ]" Q1 J  D: _' J( C/ s% r2 Tbsp (25 mL) light soy sauce" y9 i' p) Q$ ?4 S5 V5 V, P9 |6 r+ V
3/4 Tbsp (10 mL) dark soy sauce
! K- s- j/ ?3 c. @1 Tbsp (15 mL) sugar
) O3 T! r2 J3 va few drops of sesame oil
4 M! a1 z8 w1 f  x2 i2 cloves garlic, crushed
% e7 G. m! |/ z2 y# _% U1/2 cup (125 mL) chicken broth
/ }: R9 K1 S6 }5 [2 Tbsp cornstarch (if desired), H- H2 `; A* ~! h" ?

Directions:7 h. H; l# i* ?8 B# q: A
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. % n/ C" x9 ~6 J. [
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
1 w1 ^* I) e& b) f3 l% v/ `Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  % P* Z3 b+ r) P- i3 U& y. J
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
