Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

0 a8 w( _, a8 }+ Q2 m4 uMarinade for Beef:

1/3 tsp (1.5 mL) salt
$ n1 }* u" A4 U7 a) ]1 {1 Tbsp (15 mL) cooking wine
3 i0 z0 I0 R2 O! y7 R# m/ Y1 Tbsp (15 mL) cornstarch
4 x4 h1 p' P  _0 z2 Tbsp water
) w, ^" Y5 S( [
+ W3 U( b# u& P! @2 y$ {4 B1 1/2 Tbsp (20 mL) oil
  L/ ~5 A, k$ K# m
; p2 u5 L" X/ G1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
; Z$ `) |* q0 R2 u1 cup (250 mL) cooking oil
/ z) f4 V3 ]4 \3 L  z/ m) P8 l5 d2 1/2 Tbsp (30 mL) oyster sauce
+ ~6 r: s9 b4 J: K6 L2 Tbsp (25 mL) light soy sauce
6 d: ?) O/ p8 @6 Z" H% _3/4 Tbsp (10 mL) dark soy sauce
5 e+ F9 A+ n* O! C3 ~9 T* H5 o1 Tbsp (15 mL) sugar! n1 d/ ^* h/ ^! H! [
a few drops of sesame oil
7 r) l- k; p8 G9 R4 t2 cloves garlic, crushed
( I) z1 ~+ ]; f" l+ d1/2 cup (125 mL) chicken broth
2 ^) A1 _- r4 ]1 \2 Tbsp cornstarch (if desired)
, h/ `* b+ F7 q' }6 C6 d6 f) c3 D6 P, F! E7 T
Directions:
& o' v) e8 N+ rSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. $ t4 W1 F- @" \% R1 O
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
  J- j4 Z( ?# M# z6 H* PAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
9 e0 ]2 I8 |  W9 MHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
