Beef with Broccoli

Serves 3 to 4

4 v0 Y$ O& c. N, B* U7 t' O4 n0 l2 @Ingredients:' J. W- ~: j" d* k
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, u' ^* J+ Z, ^% v9 Q5 m- k

  D0 M2 h: O0 r$ [% o) {Marinade for Beef: 7 w6 W: Z1 S' p% i7 j2 H
1 egg
6 m! ~2 t$ \& @& O$ \1/3 tsp (1.5 mL) salt
3 V. W# w$ p) z9 Q8 N" s8 v1 Tbsp (15 mL) cooking wine7 K/ e8 v* {# m, u) Z3 W- B- P
1 Tbsp (15 mL) cornstarch( \) A1 G% F6 h
2 Tbsp water
2 g. s+ E7 |' P: N' R- C% [/ `' Z# _: O8 J. ~: ^# h# p7 a0 `
1 1/2 Tbsp (20 mL) oil3 K, `' M! ]( Y* b5 Z) ?

1 p! r: d& y' S  \7 S1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
( N3 v. B, Z& b1 cup (250 mL) cooking oil
! [  ~9 r. @" N, m; k; ?- \+ }2 1/2 Tbsp (30 mL) oyster sauce
  T+ {. z3 }! t2 Tbsp (25 mL) light soy sauce" {4 i+ }$ z3 j# M. A
3/4 Tbsp (10 mL) dark soy sauce3 j4 g2 x& Q7 r7 E* K7 f; v' f/ _
1 Tbsp (15 mL) sugar
4 E, ~! t5 h; l8 c3 T# X# za few drops of sesame oil8 r8 d7 Y1 X: z/ o: a. I9 D/ |
2 cloves garlic, crushed- ]5 G+ G9 q8 \& S, S
1/2 cup (125 mL) chicken broth
4 @1 i6 h, G# j, W; r/ P2 Tbsp cornstarch (if desired)
/ u2 F, ^" `+ S& c$ P5 Z& _7 c* t4 q# e
Directions:
+ x/ |5 H6 U: t/ @$ A# ]Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
( m# q/ N$ M8 s  `0 t( n% rHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
2 D. J1 `* g" v+ `6 h7 n+ OAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ; D1 J! ?$ |% ^* W- P' Y" r7 S
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.' R$ H# {) c8 I; D" e  m

. y6 y4 h3 s! t. O& q7 F& x*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
