Beef with Broccoli

Beef with Broccoli

Ingredients:8 A/ G8 c) F1 x. G; E
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
# G  p! }' o3 y) s# m+ L5 Q$ }
0 _3 [# {! `: m  y9 |+ O! _4 LMarinade for Beef:
( R( b+ \/ H* _. Y- P1 egg 2 z5 B5 U" ^$ P3 s. i
1/3 tsp (1.5 mL) salt
& t9 {2 c4 j* g: D- e' m  L& u1 Tbsp (15 mL) cooking wine( ?7 e+ l5 h& B/ d) c
1 Tbsp (15 mL) cornstarch5 i7 n3 [: I/ \! F' d! V
2 Tbsp water( G, o, R# z5 p, L" N2 o. Y

* K% g; {' f3 y, Z- j  I$ k$ O1 1/2 Tbsp (20 mL) oil3 N9 Z& r! \( z
0 |2 t+ }! U  X4 Z3 N
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices: S8 X! l. `+ e* p/ s/ B  ?
1 cup (250 mL) cooking oil
& P# c8 O2 b; q& L% Z! V6 o$ ?! ?% x; ]2 1/2 Tbsp (30 mL) oyster sauce
. @# j* g0 p0 t, l/ _9 f4 a& h2 Tbsp (25 mL) light soy sauce
# M5 q& l8 t: w. k0 d, O0 _# d* n3/4 Tbsp (10 mL) dark soy sauce
8 c6 n/ }3 E% F3 Z0 I1 Tbsp (15 mL) sugar
% x8 q2 G* L6 v3 u! O. _5 z7 g! Na few drops of sesame oil
' @0 w2 [5 p& W# M" ?) _" A2 cloves garlic, crushed2 u- w* o& h2 U( ?! y0 K. r
1/2 cup (125 mL) chicken broth# B7 |! D6 n$ B+ \  ?
2 Tbsp cornstarch (if desired)$ t- q& v9 B' ]# Z3 l

  t! r3 c) G* D7 S& l. O$ \Directions:/ [5 C) G/ t* s# {6 D" h
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
: j  B3 R% h$ MHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.! }3 n+ h3 }" D' I0 l0 [8 {
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ( P$ U; x% G0 T
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

/ P, y  S6 {: l* x7 ^*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
