Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:

1/3 tsp (1.5 mL) salt2 R3 i @$ s3 C! O- j% e
1 Tbsp (15 mL) cooking wine' _/ B- R1 V2 N! [$ E% Y/ }
1 Tbsp (15 mL) cornstarch; t8 {( Q0 v! z" Z0 q4 c8 l
2 Tbsp water

1 1/2 Tbsp (20 mL) oil

5 X4 L3 g* t! A8 v1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices9 k% Q0 Y) o& u4 }7 B6 }& \
1 cup (250 mL) cooking oil
' F$ U% K3 p8 v% ?2 1/2 Tbsp (30 mL) oyster sauce
4 p+ @6 W% \/ k5 n8 r2 Tbsp (25 mL) light soy sauce4 u' t" I( @' }' x( ]
3/4 Tbsp (10 mL) dark soy sauce! o1 w: L5 t' z6 |0 m4 h
1 Tbsp (15 mL) sugar
2 `9 n& f7 j) K" Ua few drops of sesame oil8 G3 @: T' I3 h1 B% @8 c5 z2 O
2 cloves garlic, crushed
3 F) G: i) I6 V8 H. N1/2 cup (125 mL) chicken broth, |) P" E3 G2 z G# S0 k
2 Tbsp cornstarch (if desired)

Directions:
9 f0 k; e# w2 ?2 Q! |0 _* aSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. . N; ?$ I) G- j0 b* z
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.# L7 |0 h8 |" p# m' Z" L
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
$ T- a% } I) q) w- ~' a$ W3 O1 w9 oHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.
