Beef with Broccoli

Beef with Broccoli

Ingredients:
% w  s& H* ?6 @- s2 f8 `3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
8 b/ O$ l# K) N( O; P8 g# ^) N+ }$ g9 d/ w8 f
Marinade for Beef:
1 o5 ^; U& L0 W% Z( |4 W1 egg
, e* v# U$ A  X! Z  E1/3 tsp (1.5 mL) salt
: H2 D8 f, ]! S1 ?7 U3 h) q4 u1 Tbsp (15 mL) cooking wine
! a6 R  e: s" o4 P" D8 ~( g1 Tbsp (15 mL) cornstarch8 Z; H8 u( G# `0 A* W' Y/ w
2 Tbsp water3 t$ Y$ W5 v, p$ F2 q

) e" ]6 ?) D+ n1 1/2 Tbsp (20 mL) oil
. }; P; k" G& r2 r' ^* M, s1 T+ B- r1 f$ U" v& G
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
) G$ }9 H9 e. T. d) i4 y$ S6 ^* m1 cup (250 mL) cooking oil' f: X& e; P, a8 f2 C& e
2 1/2 Tbsp (30 mL) oyster sauce& S9 \1 b* ]4 Z( ]: e" M/ n
2 Tbsp (25 mL) light soy sauce
/ n# r0 u# e' S* J- H1 y3/4 Tbsp (10 mL) dark soy sauce
5 J" J" d- ?( Q$ c1 Tbsp (15 mL) sugar
5 ?! K. A! h+ |9 s6 `, i: ]a few drops of sesame oil2 Q. n4 @; D" R. O
2 cloves garlic, crushed6 Z7 V  P- W/ A& z
1/2 cup (125 mL) chicken broth
/ p5 ]: F. Y0 e: I2 Tbsp cornstarch (if desired)
$ T/ j3 |. H8 \( d! y: q( }6 P1 L/ O  Z8 u6 ]% Q
Directions:
" C; z9 T2 F/ u: Z$ T' M/ ^% d, iSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
/ G, j  d4 F5 U6 b3 p4 NHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
; `2 ]. {# x3 JAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
# {" r2 }0 s2 s( z# L* @4 N1 T% A% gHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.6 P2 w( l; x8 W# M1 k

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
