Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

( q. t2 l$ a# b* ~Marinade for Beef: 9 Y1 h5 X" M  l$ l! e) B3 n
1 egg
5 a5 k4 _7 _) S1/3 tsp (1.5 mL) salt
* T+ X8 H0 x) j+ C) w7 Y1 Tbsp (15 mL) cooking wine
6 Y" j- s# Y/ ]' `2 K7 i* X1 Tbsp (15 mL) cornstarch
: n2 d2 f- e% ~2 Tbsp water
3 }1 a0 M6 j( u$ g5 L, d4 ~7 r0 m: U' J+ Q+ h, w2 l
1 1/2 Tbsp (20 mL) oil

4 w+ q. U1 Y1 E- a1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
- f7 X9 a2 f4 Y* B1 cup (250 mL) cooking oil. F1 b; _7 r4 h. J9 k: ]8 K
2 1/2 Tbsp (30 mL) oyster sauce* _5 s9 o1 ^) u' I
2 Tbsp (25 mL) light soy sauce
' x  N8 }$ v& b" |7 B7 F* l% U. W; e3/4 Tbsp (10 mL) dark soy sauce+ u' m+ l, ?1 @8 C. o
1 Tbsp (15 mL) sugar
5 q1 D5 m% Y/ x  b; }a few drops of sesame oil/ D! i" ?) T- c7 B6 P& i# a
2 cloves garlic, crushed) p. _) g0 X9 Z% g: z# F1 D
1/2 cup (125 mL) chicken broth; J- _; l- |3 A# y% \7 l
2 Tbsp cornstarch (if desired)
) g0 M# W( |# b# g
1 V  _4 m. l" }Directions:; k+ ^. R! N0 c
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. & X: D; r! R. K$ s5 M* {
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
9 ?( N4 K, a8 N5 H# ]8 fAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
7 L1 `: N) ~% l6 u6 t  fHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
' a" B/ W' f6 f& u. [*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
