Beef with Broccoli

Beef with Broccoli

) w8 Z& I9 }4 k' o5 V4 o7 |. Y0 J3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces+ ?$ c: B3 U* R/ m

- d% b9 T" }1 pMarinade for Beef:
. i+ u3 h0 P# w8 u& I1 @, l1 a; x1 egg / z0 u4 @3 v& r4 H# j2 u
1/3 tsp (1.5 mL) salt
2 s1 Z# |: }' f" ]8 L1 Tbsp (15 mL) cooking wine7 `! P. T7 `$ u
1 Tbsp (15 mL) cornstarch; {; S4 }& b* V; u6 ~
2 Tbsp water3 j$ @3 F* ~: i, c. P

3 Y; A) \2 t, T; Y1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices: W7 E! o6 W! T. N$ e; K5 i2 T3 g+ L+ q
1 cup (250 mL) cooking oil1 X( ^4 Q$ u5 T' F6 s. |: |% I
2 1/2 Tbsp (30 mL) oyster sauce* l7 C$ |& A# Q2 K
2 Tbsp (25 mL) light soy sauce
% z9 r( `, X! B( r$ t3 f3/4 Tbsp (10 mL) dark soy sauce# g! G. N8 y4 l" k. [
1 Tbsp (15 mL) sugar
" ]$ h5 W; k5 L0 y5 F" Za few drops of sesame oil- ^  w8 n5 b( C  A0 o1 ^
2 cloves garlic, crushed
- h) D1 U$ @! H( x) H1/2 cup (125 mL) chicken broth6 U1 m, O/ x3 B- y0 W: `/ G- s
2 Tbsp cornstarch (if desired)$ ?" \9 a. A3 [/ n

Directions:1 _) ]* n1 {( Z8 l0 O
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. $ q& q& F/ K; F5 X5 }8 G! `
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 b& x8 {9 b: P, {$ N
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ I7 P, q2 n* b: J2 i+ _( b. s/ E* n' tHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.5 j3 e0 Y+ U$ \* X0 q2 G

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
