Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, w: }4 \: \0 z/ L3 r5 {6 q& x

Marinade for Beef:
* W. N3 F& R$ c2 z( T7 B& O2 s1 egg 3 \9 z$ m4 {6 g. j" Y3 v/ Y
1/3 tsp (1.5 mL) salt4 s( U# L7 K1 |. Q% `% x- w
1 Tbsp (15 mL) cooking wine0 ]# w! l4 R7 X6 p6 G4 F
1 Tbsp (15 mL) cornstarch
0 `! L- d# x* E" H3 n8 H2 Tbsp water

& g7 p5 C0 F2 o* `5 k3 F% G1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
( @7 _! {' r: F6 s' ?" n& K, G, K' @1 cup (250 mL) cooking oil
! j6 K3 W3 g# m5 M% r* S- _6 ^$ {2 1/2 Tbsp (30 mL) oyster sauce9 A) w- u) K) v& \
2 Tbsp (25 mL) light soy sauce
3 G+ O& x% N2 {3 a3/4 Tbsp (10 mL) dark soy sauce% h0 H" V5 H1 I& g- h5 _& B
1 Tbsp (15 mL) sugar% J& B  X4 Q+ _; [' i% n, d
a few drops of sesame oil
, |" R$ a' U9 q4 D  |! ^2 cloves garlic, crushed6 S, }  F) B" t& \
1/2 cup (125 mL) chicken broth
- G- a5 J& p  j9 `6 w2 Tbsp cornstarch (if desired)
! j5 P% T; g% r
2 B8 A# p1 _9 k7 L; q1 S6 o/ ^Directions:
) `' @: o2 \0 B* q  I& E" T% D4 ZSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
! ]8 L8 g0 N! oHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.1 `' A6 l# Y9 A. e+ x% G9 i
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
0 R, X7 {& f& q" y$ R% VHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

6 j  u  x8 j, F# ~1 m! c& b*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
