Beef with Broccoli

Serves 3 to 4

Ingredients:
. F2 c: \* b( n3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces. l  }* w" w" D+ F7 [

2 H; G$ H" m! n8 _, kMarinade for Beef: 6 }% c: J# p9 E1 m0 ]4 e; w' ^
1 egg 0 n3 U& a" I6 z9 s6 v0 D
1/3 tsp (1.5 mL) salt- h3 A% A1 l0 m- v! R! ^
1 Tbsp (15 mL) cooking wine
1 s) b) t4 w' T# r! N1 Tbsp (15 mL) cornstarch
# ^- o7 w" S$ z4 z7 F. K; C2 Tbsp water
# E6 M* g1 f8 n# S8 L3 l  r! h, i# l; g; j8 P
1 1/2 Tbsp (20 mL) oil
. d+ K* M0 N2 t8 r8 @( R) D' V& H7 E6 u4 Q# S5 V6 W
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices; x5 y6 {: R- x# Y; B3 t! Q
1 cup (250 mL) cooking oil2 @& G0 n" N( [2 e' i3 K; z; \
2 1/2 Tbsp (30 mL) oyster sauce( g+ d; n, L( ?; k/ l/ J
2 Tbsp (25 mL) light soy sauce% O8 H+ R# N+ H: X1 y/ K+ P
3/4 Tbsp (10 mL) dark soy sauce; e; o, y) R9 D3 o4 N' T7 [
1 Tbsp (15 mL) sugar8 l5 I/ C0 w# f! T) O
a few drops of sesame oil
+ M0 L7 C8 C9 O5 E2 cloves garlic, crushed
- R+ T# N9 d3 V$ K3 i9 S1/2 cup (125 mL) chicken broth3 i( o% O4 B9 z1 Y- B4 M
2 Tbsp cornstarch (if desired)9 k/ n( t8 y' I' G& V

- V' }: k. m  T+ z( v6 R7 ~Directions:/ ^6 w: Y1 q+ w0 U4 O* ?
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. . ]9 o. H" I+ {4 h, W
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
0 ?3 v# T" N% ]5 M5 g+ |7 {Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  . L9 F1 `9 Q! ?/ n( d$ X+ Z
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
