Beef with Broccoli

Beef with Broccoli

Ingredients:
' i3 K3 k( h) B0 g) R6 `3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
6 {8 l7 t  l, g. t1 egg
; z, m9 D. V- x& l  Q  Y1/3 tsp (1.5 mL) salt$ `. i, d' h+ f6 q; D8 M: y
1 Tbsp (15 mL) cooking wine
) ?+ `5 F, i2 {) `1 E1 Tbsp (15 mL) cornstarch6 N! V7 E7 X: y6 K
2 Tbsp water
# T4 H) k/ R2 ~: R# k- s+ ]+ b/ E; p0 g7 N+ @% N, ?
1 1/2 Tbsp (20 mL) oil
' E# G6 ~% b2 a* t
  X9 Q7 }' J' H5 i$ o, b+ x& a1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices- H  }# ]; A2 E% w& Y5 t
1 cup (250 mL) cooking oil
" @! Y% I" e; n- e4 g# D7 @2 1/2 Tbsp (30 mL) oyster sauce
2 j8 Q  C& u' C/ W2 R& r2 Tbsp (25 mL) light soy sauce1 a' x( q* L  b& D
3/4 Tbsp (10 mL) dark soy sauce, R3 H/ V" V! \5 n; q; u- S- V
1 Tbsp (15 mL) sugar
" M; a- `# T* k& l6 ]a few drops of sesame oil, J1 {) f5 K$ F- a, T  m
2 cloves garlic, crushed# s2 S  f) A. e4 c* q. C
1/2 cup (125 mL) chicken broth
/ x* U' a" Y2 y' S" r. a& s2 Tbsp cornstarch (if desired)9 N7 k# K  r6 A2 U7 v, z# j

4 l  N5 h) ~. V  l$ |; X0 bSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 8 d- n/ f: F8 k. E4 D+ C% u9 b
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
$ p( I2 b; B+ a. o( n$ K1 kAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
& ~" A7 h9 s4 u) L+ BHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

6 F0 [8 H1 b7 u9 \*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
