1 Tbsp (15 mL) cooking wine. T; y3 Q5 F% t x4 z) J
1 Tbsp (15 mL) cornstarch

1 1/2 Tbsp (20 mL) oil

7 X' N: A% ^, |# c1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices( y4 u+ {7 m0 H" y! U5 @
1 cup (250 mL) cooking oil
, M5 g' z0 ]5 u4 v' s2 1/2 Tbsp (30 mL) oyster sauce* h7 c5 G5 A% i( m; K
2 Tbsp (25 mL) light soy sauce+ }+ P/ K( u7 B F+ f
3/4 Tbsp (10 mL) dark soy sauce
) E A3 a( Y$ d/ K: w: c5 T8 e1 Tbsp (15 mL) sugar$ ]0 a$ n) M- i
a few drops of sesame oil
& K; x& |$ r! r2 cloves garlic, crushed. M' g0 ^6 F* t% v+ X; x L( \
1/2 cup (125 mL) chicken broth9 L4 o/ e" h, {
2 Tbsp cornstarch (if desired)( P" b5 V0 v! W& o

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
7 n8 f) i- K! ~2 R! Y3 r7 q& Q8 LHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
3 x6 L, z) Q# w- hAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
( X. `7 u" C' D8 d* x! b2 sHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.
