Beef with Broccoli

Beef with Broccoli

# L0 n: d2 o( Y* |3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces' q( p6 ~  b$ |8 X7 ~9 u5 ^1 Z
8 E7 X/ M8 x  H( I, y/ K
Marinade for Beef: * S+ d, c- Q( g/ X( V
1 egg 0 U4 U$ O' u; f6 I/ J/ W# h
1/3 tsp (1.5 mL) salt
6 }# x, z  W; d# h1 Tbsp (15 mL) cooking wine
) |& V' t- J% W% i( K. g1 Tbsp (15 mL) cornstarch3 L1 ?- I1 H( I8 K" ^; V
2 Tbsp water
! ]9 v! k# `8 V7 }8 _; {' W9 C) I: O! ?
1 1/2 Tbsp (20 mL) oil; x6 X$ \, W' F" M

  R3 M! C& Y3 _" ?1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices. P0 U1 s. o7 [# v
1 cup (250 mL) cooking oil! |' l; Y8 q3 l5 J- Q+ R6 P- h
2 1/2 Tbsp (30 mL) oyster sauce5 j! }5 I0 D/ u% R
2 Tbsp (25 mL) light soy sauce4 S5 e: i+ }; C
3/4 Tbsp (10 mL) dark soy sauce/ I5 H0 J/ p; `$ |  c6 c
1 Tbsp (15 mL) sugar
) P' p* t0 c% f2 g; Z) ta few drops of sesame oil/ ^. K: U7 f5 x$ c. x$ J  k
2 cloves garlic, crushed2 i4 i! `3 L! X* N" j7 s8 w
1/2 cup (125 mL) chicken broth
+ e1 K3 y+ V5 P1 X- D* |3 A6 g2 Tbsp cornstarch (if desired)3 z1 d/ W* o) Z) v/ P) X' z, S

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
8 y8 m. T" l8 H: OHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 z( w7 @" e5 h% R$ k, B
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
7 F3 D  {& U% ^& @& R3 X( X! nHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
