Beef with Broccoli

Beef with Broccoli

" w+ N+ k+ g! ^4 H3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
  h- d7 m7 C% o1 egg
1 C$ d9 o) u# |- W5 M8 z1/3 tsp (1.5 mL) salt
+ f) G: {7 I1 a8 y% M1 Tbsp (15 mL) cooking wine% S0 G; p3 T9 \5 q, o1 w! s3 W1 D2 `
1 Tbsp (15 mL) cornstarch
# E' f; g1 H0 K# t3 ?2 Tbsp water
: D" ~' A. x. \" Q% S# p1 ?- ~3 T2 v2 p( H; w8 T
1 1/2 Tbsp (20 mL) oil( e9 y6 H# e; l5 L! U% [
& O8 F+ J! ]$ o
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
9 b3 O2 @' j% R' {1 cup (250 mL) cooking oil2 a5 J  q( F) c2 q9 B% D" _  k4 q
2 1/2 Tbsp (30 mL) oyster sauce
1 ?) t7 K6 N; J) m6 m2 Tbsp (25 mL) light soy sauce  b1 V: V/ s# f! Z& _5 s
3/4 Tbsp (10 mL) dark soy sauce, l! U$ k0 E9 ]8 U3 d! O
1 Tbsp (15 mL) sugar
9 `6 L/ f+ J( m% W% R) x+ t6 Va few drops of sesame oil
% T7 Y: W& n# h- Q2 cloves garlic, crushed+ ]% _) f- p" c& T" ?/ E) P* I: O
1/2 cup (125 mL) chicken broth
# m7 e5 }* X1 `/ z. V2 Tbsp cornstarch (if desired)
+ `/ Q( s- Y) r% M' [* h

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. $ K9 O) r# P  n6 m, j
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.3 {) O; n. i( J4 {( B8 L+ c( n
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  2 F# L5 ~. N7 ]# N" e6 B0 _
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
