Beef with Broccoli

Beef with Broccoli, V( J& d, }, U" e
Serves 3 to 4

/ ]: B0 ^) z$ G/ b! q* h! ^3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

& J2 a& N1 S3 z  }: U1 T* A: F& o2 q5 `4 EMarinade for Beef:
! A$ {& X" B" O2 G( G* h' c+ z1 egg
" F8 F) Q) w, Y8 V1/3 tsp (1.5 mL) salt. L$ N2 @* G: x# [) A- r6 u
1 Tbsp (15 mL) cooking wine: M& p2 P3 {( C) ]5 i2 r
1 Tbsp (15 mL) cornstarch$ Y/ Y# ]$ }* ?1 }
2 Tbsp water

4 Z, }9 P" ?# A, B; R1 1/2 Tbsp (20 mL) oil/ g8 j  S% o! z4 H& T( P" F
  r4 f+ |$ Q" j6 Q- u6 _
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
' Q! z& b" E3 J1 x0 `  j9 I6 ^1 cup (250 mL) cooking oil3 l5 u% I) c* l3 b
2 1/2 Tbsp (30 mL) oyster sauce
! G0 T- ?0 s) W% U2 D3 }& N2 Tbsp (25 mL) light soy sauce
# @) W) G1 z" a) ?3/4 Tbsp (10 mL) dark soy sauce
5 V% N" ]: t+ N1 Tbsp (15 mL) sugar) c3 q0 H3 p( m6 o4 T
a few drops of sesame oil
2 Z9 t1 y. a! p, y4 h; h2 cloves garlic, crushed
  N9 p, d0 i. T: ~: F5 s8 \1/2 cup (125 mL) chicken broth( V; D4 v4 |3 q6 Y) r: u# y4 L, b% ~
2 Tbsp cornstarch (if desired)

Directions:
, d2 s3 a7 R% |" q0 \Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
: H6 N) ^/ L) RHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
' u* m/ s& B) @# k5 h  ZAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  7 O" B* E4 \# W- F( j# r9 I4 Z
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
