Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, F: _ W( K6 U4 x4 `9 b) W

1/3 tsp (1.5 mL) salt
9 }1 R! W% P: S# J1 Tbsp (15 mL) cooking wine
h( L: u4 R: B1 ^: _" U1 Tbsp (15 mL) cornstarch% e5 _6 H4 p' U C5 Y; r# t
2 Tbsp water3 o2 A+ G; j0 `) A& ?1 C

1 1/2 Tbsp (20 mL) oil/ x; z' u& f( d& M
1 d9 x# T# L: P6 ?6 m% A& t1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices

2 1/2 Tbsp (30 mL) oyster sauce
O7 X; a. p2 C5 f; F2 Tbsp (25 mL) light soy sauce

1 Tbsp (15 mL) sugar6 L p; ~, l. o
a few drops of sesame oil

1/2 cup (125 mL) chicken broth
9 e" j2 y o+ e. T2 Tbsp cornstarch (if desired)* i* ~* ?* a8 {. J

Directions:
9 X- i8 ^# ^, o+ d+ o' PSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
: J+ {+ f, v* Q0 g: d7 ?0 PHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
" l f. ~ Z' }3 b( O0 a# eAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
9 F1 w4 _% P6 }6 L: j2 ?6 aHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.
