Beef with Broccoli

Ingredients:
5 g; m0 _' N/ n5 v; k( `8 B3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces7 n1 ~9 T8 E% c

Marinade for Beef: $ d0 i9 ^& ?* T: E; G1 o
1 egg
: ?$ {0 F1 `1 L3 X4 b6 Z1/3 tsp (1.5 mL) salt
: O; Q6 p9 t& X2 U8 q1 Tbsp (15 mL) cooking wine
6 Z8 `7 `- q, h0 s) Y! w1 Tbsp (15 mL) cornstarch; ~" X" k, G% a- f, Z9 S$ A
2 Tbsp water
5 j3 X; a' t; C" j4 X; L
  u/ S( U& C4 p1 C; A/ n6 Z1 1/2 Tbsp (20 mL) oil
8 \! }- E8 K7 K7 J7 d
& ]+ x8 L) \: o3 `! @" B4 B1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
. q0 f: t0 a! ], P, F1 cup (250 mL) cooking oil
' S/ h6 w. x: _2 1/2 Tbsp (30 mL) oyster sauce$ [+ Y+ `; G3 l( u
2 Tbsp (25 mL) light soy sauce' y  `' I0 B% u4 Z3 S
3/4 Tbsp (10 mL) dark soy sauce& t; N8 q8 g5 T+ K( _5 M
1 Tbsp (15 mL) sugar1 V# {7 d, K* U& i+ L8 b
a few drops of sesame oil) K8 k6 G) D3 R% w2 N' F3 @1 {
2 cloves garlic, crushed/ z% Z$ L' Z; d. R, B. q
1/2 cup (125 mL) chicken broth
) z2 K% k- _- U2 Tbsp cornstarch (if desired)
; F( r1 X, O* X

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
: `. Z1 t( Y4 Q: dHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel./ S8 h- ]% q0 A: i* ?. @
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  8 z: G& h/ k( i, r
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.' h5 v3 a. B9 f$ A3 y7 d, w. W

Variations
% S( i* x3 i, }" m$ Y*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
