Beef with Broccoli

Beef with Broccoli

Ingredients:
/ e9 G, b% N* f& ?3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
/ E  N/ P( m! p5 B6 S  I. v3 G+ H  c, ~8 H# H* a! J
Marinade for Beef:
; k) G! b% D0 P, \/ \) S4 o1 egg
6 U$ R  ^) D' _5 Z1/3 tsp (1.5 mL) salt
3 E- P3 M  b/ V# ~  [9 x6 R1 E1 Tbsp (15 mL) cooking wine% o  e+ a9 ~8 _! B, Q
1 Tbsp (15 mL) cornstarch* ~+ Y, q0 W% p" {
2 Tbsp water
3 N* ]0 \- o% i3 g! A8 m
1 h3 p, p3 [; Y' P, P+ E1 1/2 Tbsp (20 mL) oil. W2 ^8 g% ]8 `1 e- j. V

' Z* _( s9 Q1 W, d8 Z4 M7 u1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices/ a* {: E' y1 H# e
1 cup (250 mL) cooking oil% C2 N5 }% w2 y
2 1/2 Tbsp (30 mL) oyster sauce! ^6 Y* a/ t' |' [& y
2 Tbsp (25 mL) light soy sauce
6 e( m% A# n1 q; P3/4 Tbsp (10 mL) dark soy sauce
) j$ x  i5 ?* ^1 C" A: J$ [5 F1 Tbsp (15 mL) sugar5 a! E6 h4 B* m1 B3 o' v0 ^9 E
a few drops of sesame oil
" a6 O) U3 T" d: k1 M2 cloves garlic, crushed
, S+ y+ Z# p1 S" b$ I. \; n1/2 cup (125 mL) chicken broth. C- V5 g( e8 `1 v+ t
2 Tbsp cornstarch (if desired)

Directions:) |/ [* R, \" M+ E
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 6 j% z( ^1 D- l
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
) C$ A7 M8 J7 TAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  9 u% g3 N0 N9 B$ N$ C/ i% Q
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
