Beef with Broccoli

Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

  [+ u. r5 x; ~' O, x) KMarinade for Beef: 6 ?+ b- `1 i3 c
1 egg ! G; s# a% `" V3 e/ \/ ?: F9 O
1/3 tsp (1.5 mL) salt
  \. m5 I- j" }( ~1 Tbsp (15 mL) cooking wine
. ]2 I8 j! n' k' \1 Tbsp (15 mL) cornstarch
  P9 m3 [! B5 E; m) I) g2 Tbsp water
1 {2 N) ^+ _4 W2 [* ?7 N
- }3 F1 s! w2 x! ?4 C5 b1 1/2 Tbsp (20 mL) oil

9 ^3 B" Z0 X9 m. R9 g. ^1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
( ?' k4 Y0 @# o0 [- h( _& x1 cup (250 mL) cooking oil" Y  J0 s% A3 Y" g' w
2 1/2 Tbsp (30 mL) oyster sauce
! Y( C  P0 P5 G% |- Y  l2 E2 Tbsp (25 mL) light soy sauce7 D0 u& V" v% ]$ t+ B
3/4 Tbsp (10 mL) dark soy sauce
4 j, n- M' _- h* Q" }# G% i# d: S0 G+ V1 Tbsp (15 mL) sugar
, S' h, `  L0 C4 Ga few drops of sesame oil& `7 C+ n$ V7 @! d
2 cloves garlic, crushed+ b+ `( ~, l; P
1/2 cup (125 mL) chicken broth  w/ c" \  g* c# H6 R; ]  K
2 Tbsp cornstarch (if desired)  X" x% M( [0 M, T  `9 e0 E) w

, E% C, _8 X! @" ?Directions:
9 H$ F2 I$ ~; c0 ], e3 j+ N) USlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 7 \! C% ^' B: L4 i4 F
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
4 t! d5 r( Y5 s2 |0 DAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.    i  i9 J; v4 E7 F4 ?& u
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.& q5 Z& c9 g* h4 X- g

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
