Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces; U9 b/ C1 O/ N% M) ]& Y1 l  |) o

Marinade for Beef:
6 q: h+ H8 [, s& {$ ?8 G& q8 Z1 egg
4 a0 U1 ?5 w* ^4 P3 o1/3 tsp (1.5 mL) salt4 G1 c$ s" G6 x$ c5 R6 |1 j4 h
1 Tbsp (15 mL) cooking wine4 w- k1 K4 |% b2 L2 w) f
1 Tbsp (15 mL) cornstarch
) I& H+ c1 B$ G; @2 Tbsp water
. A7 p7 \' J- R; y* M1 \$ y5 E4 V4 F
1 1/2 Tbsp (20 mL) oil
! ?$ y9 y# S- h, o+ z. B) {9 x
* O& W9 l, f- _% P1 @1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices9 V3 P: G0 o2 c4 S6 @+ ~, E
1 cup (250 mL) cooking oil# j- C$ g4 o' ?# ?. |* O
2 1/2 Tbsp (30 mL) oyster sauce
) z, Q0 {8 A  s  [2 Tbsp (25 mL) light soy sauce
& ]- `* W" P$ l% P3/4 Tbsp (10 mL) dark soy sauce
  n: j! q! L' h4 X1 Tbsp (15 mL) sugar5 f6 b: y3 t! ~3 t1 }0 |# n
a few drops of sesame oil
6 A! D8 ^* k" w$ @) J, ^7 _5 ~$ [0 ?2 cloves garlic, crushed- B0 d" G# j, r. Z' b8 V7 f" o
1/2 cup (125 mL) chicken broth9 F! m. o- |- W- r4 Y& `
2 Tbsp cornstarch (if desired)% V5 D& p# P: K. a1 X

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. + P+ j+ {0 |8 E( q0 S
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
  E9 q+ D8 X4 z1 }8 eAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
* r$ ~+ ~; _  c0 |! I: {: U8 P, yHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
