Beef with Broccoli

Beef with Broccoli

Ingredients:
- v, w% {$ W, R% n" N3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces9 \3 z: h/ g* `1 V8 I
) \7 Q+ H& u8 g& O
Marinade for Beef: 9 L2 i1 x0 m9 }) o9 W, b2 s7 e
1 egg
; b$ @( M% I0 a1 j1 A- E! `7 r1/3 tsp (1.5 mL) salt" }" ?% D0 g8 t  }
1 Tbsp (15 mL) cooking wine
6 ~5 _% O- }6 b9 f$ h+ A+ K7 w1 Tbsp (15 mL) cornstarch
& C2 Z/ I9 u$ a: N2 Tbsp water
  M4 @- w% E1 C. e5 ^: J: c; j) `
1 1/2 Tbsp (20 mL) oil- u9 v4 |5 c: T
' V, C7 ]. f3 Q. e( _0 Z" W9 v
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices& G6 ?; D% x1 ^7 ^- ~; |
1 cup (250 mL) cooking oil
2 y3 ?, J8 Z  d& n! v2 1/2 Tbsp (30 mL) oyster sauce
, C3 u, f! |+ N* J  f2 Tbsp (25 mL) light soy sauce  \9 x, l2 ?2 @, m1 s
3/4 Tbsp (10 mL) dark soy sauce, b! I# ^% g) Z5 H& K
1 Tbsp (15 mL) sugar
2 \' E1 u" n8 E% A6 O* u  Aa few drops of sesame oil
$ k* X( Y! x& j* O$ U, j2 cloves garlic, crushed
& |( h5 ^6 k$ k5 D" X9 {1/2 cup (125 mL) chicken broth: J$ h0 D5 d- V3 x  G$ i9 u
2 Tbsp cornstarch (if desired)$ {1 X- ?( I. x$ B0 d- n' O" [
1 o, t+ o. i% E+ z5 N" Y6 O
Directions:% {% {8 w6 R* {" m. D  t: Z
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 4 a3 x! f& H! ~
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
2 H0 P# |9 g7 o6 `$ r9 qAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
- a$ T% u- _1 K8 c  ]Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.! ~% r& K) l$ s! R- s" T

Variations
+ f% W) X7 K7 j6 l*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
