Beef with Broccoli

Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
4 j/ H  w5 v7 s& U1 v$ N4 a) V6 |: B  H7 R; _9 W
Marinade for Beef:
0 R9 X5 S# k5 w% L% T1 c! G1 egg * d, k" b" s0 l; Y0 c3 c
1/3 tsp (1.5 mL) salt& n" P) k' L% z& d  c7 w
1 Tbsp (15 mL) cooking wine3 _: i1 C: E' |. Y9 W  z
1 Tbsp (15 mL) cornstarch5 |! N. S/ j$ m
2 Tbsp water

) L+ E- ~0 a( T/ [) i; P1 1/2 Tbsp (20 mL) oil! J) r# s& A" t& P* p% Q+ w' H4 F  y0 g
& h9 @$ U" J* R- ~9 w' j" \9 U* [' u
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices0 C/ `, I3 B+ @0 R) }; d
1 cup (250 mL) cooking oil; J$ D$ |5 P8 t& C6 H
2 1/2 Tbsp (30 mL) oyster sauce! g* x; G6 K! O
2 Tbsp (25 mL) light soy sauce
: M! U/ e; J! ]9 U; P$ z" l, e, a' N4 q3/4 Tbsp (10 mL) dark soy sauce
) j7 G  d* q: H. [* L1 Tbsp (15 mL) sugar
; O3 e$ }. L8 @0 G& Ba few drops of sesame oil
7 V6 e7 X" f. y) T3 ~- _4 B2 cloves garlic, crushed* J! N" l4 M5 s, r
1/2 cup (125 mL) chicken broth; `: A9 P1 s2 E$ j4 ^& W0 R4 X
2 Tbsp cornstarch (if desired)" K/ u- S* R% n+ i5 [( l6 R% ~6 K

, p1 E5 E% T/ ~# J, u+ T7 _Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. " p3 D- g* s3 F! }7 x6 D
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
, c0 |! _2 y1 z7 k$ c# YAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  . @, C1 u; O- x2 n9 V5 z
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
