Beef with Broccoli

Ingredients:7 L# x% I" ^9 F  R# ^1 r* M( ^3 m
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces% ]8 R" T) V; D
+ B1 g0 F0 r1 o6 o& a
Marinade for Beef: ( u, n+ f( M2 p. P! |, ?. [  z
1 egg
8 H) E8 {- A5 Y8 C+ K" z1/3 tsp (1.5 mL) salt; k  g" h7 x# j, Y2 D3 T
1 Tbsp (15 mL) cooking wine. n# ?' ^7 K. B! p8 a& ~
1 Tbsp (15 mL) cornstarch' q; K) T5 ?4 e8 [: B/ s
2 Tbsp water

" _; {5 E( Q$ x9 g  @1 1/2 Tbsp (20 mL) oil/ t/ o8 v8 }/ p

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
6 ~7 q6 E( O5 m* T( V1 cup (250 mL) cooking oil% \$ t# a, Z# e: a
2 1/2 Tbsp (30 mL) oyster sauce
4 u* }) `7 x2 ?0 T! C7 p; B2 Tbsp (25 mL) light soy sauce
) f3 m: L9 B0 r8 m) n: l) m3/4 Tbsp (10 mL) dark soy sauce) Y2 J: w& u  x* C# c% a; i
1 Tbsp (15 mL) sugar
( S* }5 W3 e8 a. m8 Y- w$ C- g# m8 Da few drops of sesame oil7 V, L2 |6 F$ E4 a3 o7 g3 Y. c
2 cloves garlic, crushed7 B: N1 y9 d" ]% I. {
1/2 cup (125 mL) chicken broth
  K. Q+ w% m0 ^. k8 p2 Tbsp cornstarch (if desired)

Directions:4 D/ |" U* h; ]7 q# V  s9 G1 N# a
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. $ B( ^6 I9 c- R& H5 J* q1 S
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
6 C# k3 H( I1 Z  zAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  $ J1 F; O; r2 m1 H& }, L7 R- k
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.7 Y  ^8 Z3 u& n7 K3 Y4 W9 I: u& m* A0 |$ Y

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
