Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces9 a% ^, l$ n' l  G

/ \0 p, C% g- w# w% ?# IMarinade for Beef:

6 t8 o# H- b  \$ o# [* F5 j1 F1/3 tsp (1.5 mL) salt1 l( [3 ^+ X9 \: t1 X/ ]5 y
1 Tbsp (15 mL) cooking wine
- J8 O( h$ `4 }5 m; m2 s1 Tbsp (15 mL) cornstarch
: e7 {. Z* s5 S1 \( c  W2 Tbsp water- o/ H/ Z& w9 p# Q6 I0 p; C- O
0 V& M  r3 [1 W, X1 d
1 1/2 Tbsp (20 mL) oil
$ j% N' d2 [% w, S7 \$ k
* ]# P5 ?+ x/ o- B8 T0 v! F: |  w1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices* v. R# M- E/ x  D
1 cup (250 mL) cooking oil
( z! [" O2 K  a0 A$ f2 b2 1/2 Tbsp (30 mL) oyster sauce) s* R& F! b2 a: C& V
2 Tbsp (25 mL) light soy sauce
$ |0 }- V2 x$ `9 i7 y9 O4 h/ m( Y3/4 Tbsp (10 mL) dark soy sauce
' ?  m  `, U8 p% L9 \1 Tbsp (15 mL) sugar  W) \. m: T) ^! t5 q) o( }5 b% D
a few drops of sesame oil# b) Q8 ?+ q/ m0 h. D( }8 Z$ {
2 cloves garlic, crushed% _8 h& I. @6 k; t# b) i' y# z
1/2 cup (125 mL) chicken broth
! W7 y, R4 [# p2 Tbsp cornstarch (if desired)( M3 {- a- M! V/ m* @

& i2 U, y) `! U; _Directions:/ P+ t& \6 H1 i, q5 \) A
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 5 x6 o$ G. g: F  H
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 R+ D4 H2 P8 l7 v% L# C( ~) R
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
  h  N" N( t0 ?  U( }6 O+ |' E! ~Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.% W$ I0 B* q. K2 Q' R

Variations
( J: `8 q% u% |7 x6 p) w& O*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
