Beef with Broccoli

Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces. J* i. ?8 N% o, H* D( P1 O) D

1 egg
2 u6 I6 H. _, P/ i  K2 O) `  J1/3 tsp (1.5 mL) salt3 n  R3 M6 }; x6 l9 R% P
1 Tbsp (15 mL) cooking wine6 ^; {+ i' O2 X, G1 [
1 Tbsp (15 mL) cornstarch
/ q+ Y# _! V8 S% [# `2 Tbsp water
! i' P' W& J1 G. y4 h& H9 u
% M7 ]& k/ }' \7 b1 1/2 Tbsp (20 mL) oil
6 \& c$ `* d" J4 D! H6 ~( n/ T/ A0 ^
" s. V0 h* R0 t) Y* L; @2 k+ O1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
" a2 ?$ v. |) j& x! k5 l* x1 cup (250 mL) cooking oil2 I: {0 `# q! Y- ~8 H
2 1/2 Tbsp (30 mL) oyster sauce! P- x! F3 s) x2 D
2 Tbsp (25 mL) light soy sauce/ ~$ s8 g0 Q6 W$ q
3/4 Tbsp (10 mL) dark soy sauce
+ P2 A6 ~/ [+ w1 Tbsp (15 mL) sugar* r- K6 b6 Z: k( N9 p
a few drops of sesame oil# x8 W$ G2 V) }
2 cloves garlic, crushed
1 C0 ~# g( ^$ U1/2 cup (125 mL) chicken broth3 N$ @; j0 w3 A3 x: v/ ?( x
2 Tbsp cornstarch (if desired)- d1 Z* P1 G; e- g; ^' s; W

. ]$ j4 `7 B1 `# K& uDirections:& h! {9 s, z3 K( M) K8 B7 d- M3 \1 Z
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
( b0 _  r, s8 v' J8 WHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.3 i3 j8 i1 p3 y' B$ R6 k
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
, f, C9 M, d: u- CHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
! W3 ]1 B2 ~( z. O; s6 {*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
