Beef with Broccoli

Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces* b% P" E/ j3 }  I# k! F# }/ j
. S5 a3 q9 `7 i& Y+ g
Marinade for Beef:
- n( V. O& b5 M4 J1 egg
: K( f8 B! B! E" s, ^1/3 tsp (1.5 mL) salt
- t0 \' E+ [4 g1 Tbsp (15 mL) cooking wine
0 y4 [8 p8 J5 t% J8 ^1 Tbsp (15 mL) cornstarch' y" C7 u2 L! {) b% u, D/ ?+ X+ j
2 Tbsp water
+ C: w1 L3 t9 G3 |: n8 C$ e
6 H& n0 a# p. r! I9 `- s# m+ Y6 }1 1/2 Tbsp (20 mL) oil2 V8 V" S. q# d

$ o8 p* c! j' H8 ]) f# N1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
& ]- l, d; j3 L5 S( I- M# L+ K1 cup (250 mL) cooking oil
# i0 ?! W. Z" m; J; B5 Z( L2 1/2 Tbsp (30 mL) oyster sauce
$ s. u3 a! M$ Q( T; x0 ]' G& h4 q2 Tbsp (25 mL) light soy sauce% c5 A6 s+ G  t* Q+ T
3/4 Tbsp (10 mL) dark soy sauce1 K% n$ O! l* a) T7 m3 a* {
1 Tbsp (15 mL) sugar
  y& @0 Y* ~9 l5 ia few drops of sesame oil
# ^3 R& h2 Y6 F1 p1 j( S' t2 cloves garlic, crushed
: m0 c" f6 ~6 @1/2 cup (125 mL) chicken broth: a" H8 Q4 p( l& q. e) F8 g
2 Tbsp cornstarch (if desired)
4 \5 c. X0 q. \- G( x/ F; p( {) {/ ?; l
Directions:( N2 Q6 t  G  Z+ h! m
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
9 G  m' w5 V4 y' t# Q; y& h9 THeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.' L, {. u& e! [) S
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
( t2 ~* N' Z- n0 KHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.- i- C; @$ F8 B7 V% E4 `

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
