" I$ p% R/ Z5 ^# a' e3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
1 \! k9 Z6 t9 I/ g& X1 egg 0 k1 l; O/ w7 W4 w6 O* c
1/3 tsp (1.5 mL) salt
. E6 W" M5 m: X% ?& z7 q5 G1 Tbsp (15 mL) cooking wine
: I8 {9 l- K$ J1 Tbsp (15 mL) cornstarch/ ~: O% I- X9 V+ O* J
2 Tbsp water

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
# B$ J5 `: I0 g, P7 z% A6 Z1 cup (250 mL) cooking oil
2 R( I& S5 _ l/ j2 1/2 Tbsp (30 mL) oyster sauce
5 H! k1 r B R7 ~0 ~- `1 _% y2 Tbsp (25 mL) light soy sauce
/ g4 ?+ K2 v; `/ r3/4 Tbsp (10 mL) dark soy sauce
" {- ]3 ~, q1 R: u; {1 Tbsp (15 mL) sugar, L7 A0 \3 G+ [9 y @. D. p9 p/ d5 N
a few drops of sesame oil
* v, c, I# c3 q( P5 {2 cloves garlic, crushed
/ d3 Z" |& u. ~* T. H1/2 cup (125 mL) chicken broth
. ?8 I) T& J: Q2 Tbsp cornstarch (if desired)9 U' A' i3 r7 B3 H* Y* s% ]

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
& y* l8 f1 _7 }( ^5 x$ MHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
* m9 m0 v0 R( N* tAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok. 3 n1 i3 E8 q: R' \$ H9 u
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.+ ?0 _( x$ l7 ~8 ]% b3 V
