Beef with Broccoli

: y& p5 x( L! {' G- A8 S3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces# z9 ~/ I! c% u! J

( J& Z) x1 B. ^+ xMarinade for Beef: ( A- @" @6 T0 l7 o. X
1 egg - ^  T( W5 c3 q1 \( T
1/3 tsp (1.5 mL) salt
0 y  V1 q: I$ ]1 f$ r1 Tbsp (15 mL) cooking wine
0 T0 e# Q, O0 @1 Tbsp (15 mL) cornstarch# d+ j9 R/ e- o2 E
2 Tbsp water7 T  v* J% s4 E! c% }* x
  `" L6 C$ D8 I4 N: O
1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
, `; t3 y+ O3 w6 U, Y8 P0 m' }1 cup (250 mL) cooking oil
: B. u/ w, f4 T9 \7 t0 I5 d2 1/2 Tbsp (30 mL) oyster sauce# A$ a4 h- H: z' `
2 Tbsp (25 mL) light soy sauce
  O; ], ~- g& _1 Z3 ]6 X# j. `& S7 ^0 b3/4 Tbsp (10 mL) dark soy sauce2 u7 T7 g! h: V3 h% c
1 Tbsp (15 mL) sugar
6 v3 L/ n8 c/ r3 U: ]a few drops of sesame oil' V: y) k: C! r! c3 j; W
2 cloves garlic, crushed
4 V* X9 N0 b+ y1 b1/2 cup (125 mL) chicken broth
0 g7 V* k$ w8 W( T9 I* b2 Tbsp cornstarch (if desired)4 z8 |" Q8 t0 {

& s5 ~- }+ K' P2 d+ a3 Z% N# QDirections:
+ f  |9 z! M( g+ PSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
! h8 P) w3 S/ e2 |2 tHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
. Y) m1 w! Z5 ]4 }Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.    r9 K6 U( M* C7 E8 K& c
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.4 |; I1 N. F( {4 ~( G/ r: u

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
