Beef with Broccoli

Beef with Broccoli, t2 t& A' v8 ^; P2 l
Serves 3 to 4

8 K2 N# ^4 b" `" P2 ]7 C5 R3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, X2 T1 ?" I8 Y* C/ P

5 @( G% q6 j1 ]5 WMarinade for Beef:
% I+ t$ X; ]8 P/ q9 l9 i8 C7 `1 egg
4 e: j/ w; _0 A6 t1/3 tsp (1.5 mL) salt
& ^% A3 w7 i' a7 s, K5 e1 Tbsp (15 mL) cooking wine
. x; R) }1 G0 N) V1 Tbsp (15 mL) cornstarch. i' R/ t, F; C- _
2 Tbsp water
% v& o" D& G+ x$ T9 x2 e4 R: J$ y) `% C* g7 _+ |7 h
1 1/2 Tbsp (20 mL) oil3 a5 [2 M% Q& L$ Z. z: d. _
& R. n2 K4 _" |2 z/ v4 `$ n. W) s3 t
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices% f, U! R, i+ K! Y! D; ]+ L$ h5 U
1 cup (250 mL) cooking oil
+ y4 `9 Z6 o. k/ Y6 a2 1/2 Tbsp (30 mL) oyster sauce
2 n  i' h% M7 T5 a$ D2 Tbsp (25 mL) light soy sauce
+ q% x0 k( P9 @3/4 Tbsp (10 mL) dark soy sauce
  C/ r& r7 B6 r2 ^1 Tbsp (15 mL) sugar
- q+ Y: V8 K: w( s- |# Wa few drops of sesame oil6 A2 @( |0 s1 ?( T1 u0 {% `
2 cloves garlic, crushed. ~4 `# S& H: R* x1 a9 [# r
1/2 cup (125 mL) chicken broth
* S( o. b/ W8 S/ [; _2 Tbsp cornstarch (if desired)- v3 S' k  j5 V% O. a6 e
; P( ~# b5 n% D( D- I8 |0 _  v0 e
Directions:& @6 ^9 v# R- a& q' |' S
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
, P4 P9 ^. Z$ H  VHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.4 n0 `3 y! W9 b
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ' w7 a4 }5 ?" y' W$ \9 a: v. p2 B) T
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

3 }0 C( C- m( X% P*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
