Beef with Broccoli

1 D1 q) W2 p' F, u3 _9 Y( q+ \& q5 M3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces$ b' q5 s0 C; P8 D

Marinade for Beef: ; t/ G" f3 c. U+ J  |
1 egg
0 V2 t, i' t7 X3 O: D* J$ s# z9 L+ q1/3 tsp (1.5 mL) salt' Q3 g& _3 J8 U! J( ^
1 Tbsp (15 mL) cooking wine& D4 j$ v- W5 \
1 Tbsp (15 mL) cornstarch1 @; ]3 [3 U1 W- v; d% r  m
2 Tbsp water2 Z* a) E5 Z1 Y) o2 a7 h" d0 @

! b% g3 @7 R4 ]2 U3 [1 1/2 Tbsp (20 mL) oil/ C4 A( j- c9 R) p

; M: ~# \- |$ L4 D1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
2 c" I; I, e  S/ R1 cup (250 mL) cooking oil
5 h  }9 v3 j4 J' a2 1/2 Tbsp (30 mL) oyster sauce. q2 t' a! s$ @$ H+ X
2 Tbsp (25 mL) light soy sauce' o2 U2 j" u6 m) @
3/4 Tbsp (10 mL) dark soy sauce# \( W# O( H. P) B$ _9 @) ?
1 Tbsp (15 mL) sugar
' n* G5 G' R2 w* Ya few drops of sesame oil" c6 W0 w( _8 s5 \1 q
2 cloves garlic, crushed- s9 ~0 @- y* Y/ N/ c8 u
1/2 cup (125 mL) chicken broth  q* p- j9 w0 N  q0 W) o
2 Tbsp cornstarch (if desired), [- y5 r8 D5 F3 E3 A- b

1 \6 i% p4 T, F+ b- J6 F% ^Directions:4 M, E" l: c' K# Q7 Z. d
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
( U, A: l* J  p8 K+ P/ w$ EHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
& j: ^6 @* \8 l" \8 yAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
5 v$ h! b5 R3 O  S3 T# P1 \9 THeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.- ]/ Z7 O3 E" n3 |9 P" W# S( T

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
