Beef with Broccoli

Beef with Broccoli; n: `( K" s7 ^5 A) x- t6 D9 S& v
Serves 3 to 4

Ingredients:  N  O9 J8 z8 o7 Y
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

4 W! m3 Q7 q% D2 R" O9 ~Marinade for Beef: ' v6 |$ v) |2 V0 `  f) N' n
1 egg
. e( @. B1 q7 T1/3 tsp (1.5 mL) salt
5 M- x, C2 ?5 A1 Tbsp (15 mL) cooking wine
# R' C( }* e6 g. `$ t% }; {5 e1 Tbsp (15 mL) cornstarch- x" N, I0 n* C) t
2 Tbsp water
- |$ x  i' o4 o; F' f5 s
/ r' z; h; W0 G  N* _! W2 A1 1/2 Tbsp (20 mL) oil$ R) J, t3 [5 o( H0 X- g

1 T( k3 N9 W/ b% A$ w" ^* c1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
# ]& o& F7 b: `" t1 S( v+ e1 cup (250 mL) cooking oil
8 z0 z! R9 M( F$ F2 1/2 Tbsp (30 mL) oyster sauce( P9 Q! i+ m1 d9 r7 I3 o
2 Tbsp (25 mL) light soy sauce
4 g# `0 ~! P) P; L! {8 B" y3/4 Tbsp (10 mL) dark soy sauce
* I. A  M. z8 K% \; M0 K1 Tbsp (15 mL) sugar" M9 M; _8 X$ R0 ^# K; u
a few drops of sesame oil
0 I2 b; {! s0 v  V  c2 cloves garlic, crushed1 F! b# S% a! B7 g* l% K3 u* @& x
1/2 cup (125 mL) chicken broth* {) s7 B4 s/ b, Y
2 Tbsp cornstarch (if desired)+ `' s  I4 ~3 V4 F% m7 P$ Z+ K

  \' B1 V" C  t1 F& _% G) hDirections:9 Y/ S/ c' c: j
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ( t! Y. M# w: o$ Z+ [. C3 f
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 P9 r1 ?0 _) d* |, d* G+ c( U
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
- F6 q" M9 G! `6 F6 LHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
