Beef with Broccoli

Beef with Broccoli- ?# \: R7 R1 e" r, F$ q& _) x4 u
Serves 3 to 4

Ingredients:. E) O' s# V' h+ @' M' X, P) W
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces/ E1 s! x/ ~4 a. _5 W

1 egg
# F3 u- @. r) X  Q" w6 ^1/3 tsp (1.5 mL) salt% p& D" e1 o& }3 ~
1 Tbsp (15 mL) cooking wine' c! y! t1 s7 p1 @  _
1 Tbsp (15 mL) cornstarch
) Z/ m$ a3 K8 q5 p, y2 Tbsp water2 k" x; J6 g- c+ ^- ~5 {" x) p
5 f+ _4 w! p' A, _( r/ H  d. \7 H
1 1/2 Tbsp (20 mL) oil' e2 X; g+ g& r; U. w# X

& n2 M6 i& ?  @3 ]1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices5 O* x& r0 i8 {+ k
1 cup (250 mL) cooking oil
0 J2 A6 G5 S  O( M4 q2 1/2 Tbsp (30 mL) oyster sauce* v/ d+ e+ M0 |, ~8 E
2 Tbsp (25 mL) light soy sauce7 L! v7 X9 c- Z- t, W
3/4 Tbsp (10 mL) dark soy sauce
# {( X% K4 _  Y+ k4 J4 U1 Tbsp (15 mL) sugar: O) d( X# D- F$ _& k
a few drops of sesame oil$ [& L8 W" X) b4 Z  A& E& d
2 cloves garlic, crushed
" d& @  @* E3 |& ]" [) A1/2 cup (125 mL) chicken broth7 i$ V% D* E9 t& L
2 Tbsp cornstarch (if desired)
# o1 c+ ?) b9 V" W# k  Y' ~6 T# g1 D4 o1 U
Directions:
; ?: X' J; Z4 h. ~3 S; g* cSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. + ?5 q: ?5 u, Q8 e
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
1 d- s. G8 I3 S; kAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
, a( M& E- r5 h4 U8 M$ {Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.' Y4 l0 l% n* H' f- Z, e, c- Y# l

Variations
" _; A5 D  |4 m1 Y1 _4 S*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
