Beef with Broccoli

Beef with Broccoli, r4 }! w) s: O# G
Serves 3 to 41 `  z' b0 a5 [

Ingredients:
9 w- s. h- Z8 a, U3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
! j: k$ i/ l+ k
- L5 `( l3 Z- O' t! p' U4 y) K  hMarinade for Beef: ! x) }! X0 K5 x5 o/ J
1 egg
/ T" Q3 x9 d$ c1/3 tsp (1.5 mL) salt
+ d2 `. g* c$ Z1 Tbsp (15 mL) cooking wine& z. N2 w: w( u: M' D7 ~5 n
1 Tbsp (15 mL) cornstarch
2 K# T3 E" S1 ^7 m: ^* R+ n8 N) E2 Tbsp water
8 O* ^4 h+ `! @% {8 U# K- E; q) |% Z( ^! S
1 1/2 Tbsp (20 mL) oil
* T, [2 r! s0 n5 ?" K
4 d. W- U8 n+ F- s0 h2 u. G1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices! J# [( Q! ]& ~1 r& Z1 v% d- p
1 cup (250 mL) cooking oil
" y4 c3 p" z: ]$ U, L2 1/2 Tbsp (30 mL) oyster sauce
) T4 q3 z( v7 z0 w; d2 G- _) \2 Tbsp (25 mL) light soy sauce$ i' E& L  ], i0 E% ^
3/4 Tbsp (10 mL) dark soy sauce
8 j; T, g' y4 b) s# C8 o1 Tbsp (15 mL) sugar! @. U4 t* l7 z; C
a few drops of sesame oil
, `+ i* r# h0 P% {; [2 cloves garlic, crushed. X* a2 F! a( D1 o# d
1/2 cup (125 mL) chicken broth6 ]/ x) D. E, o/ O9 Z0 j
2 Tbsp cornstarch (if desired)
: ^( [/ r5 ?$ w; y8 `/ U" X, v; ~6 F: r# \9 V5 E  A
Directions:9 o% i" ?  {( ]  e! s
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
& a" B$ X3 N  c: L+ q# P# RHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 x5 b% j4 \0 |2 `% V
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
3 U8 t2 A0 k0 d, r5 a) WHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
: F" _( P; n5 h: M*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
