Beef with Broccoli

Beef with Broccoli

Ingredients:
7 r  Q. O" F3 D, \7 U/ @- {( y3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef: 7 g8 k4 v4 G, @
1 egg
, x1 O. M& e7 d6 n; `1/3 tsp (1.5 mL) salt
6 I' T+ s$ W  r8 x+ j: Z1 Tbsp (15 mL) cooking wine
; b  K5 P8 ~2 D3 `" R1 Tbsp (15 mL) cornstarch( }3 f8 Q  }: J. _* A# x2 P
2 Tbsp water

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
! W- u5 @, U( q1 cup (250 mL) cooking oil& j% E0 H2 Z$ `) |1 f
2 1/2 Tbsp (30 mL) oyster sauce
: n4 B1 E$ Z7 q; ?9 Y( x2 Tbsp (25 mL) light soy sauce
& z5 Z; Z& j/ D* l9 a9 x3/4 Tbsp (10 mL) dark soy sauce
' A/ e! ?' j1 u, r- |7 ]$ d. v$ A1 Tbsp (15 mL) sugar
) z, ~  f; `* S/ n9 ra few drops of sesame oil; u( b0 V" B$ W# L
2 cloves garlic, crushed
3 r( ]# j* J* l$ n3 Z( Y1/2 cup (125 mL) chicken broth
% p" D7 ~- n  X) A- z" f2 Tbsp cornstarch (if desired)' @0 r% u: L9 x; z8 p2 }' J

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 9 o: {: m# ~" [3 p
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
, e* w8 W$ b' `2 C8 N' t% j$ Y7 KAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  , ~# \" p; X6 w* |/ j7 ~7 P8 Y4 i) K
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
( n1 O: X8 b+ u+ T: b*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
