Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces8 {; \5 ]  w" ?6 X0 Y0 l! m& W9 j6 N

Marinade for Beef:
5 v! C5 _- k8 w% L  D  X1 egg
* X' F% O4 o, }* K1/3 tsp (1.5 mL) salt+ V: m* o: ~1 T/ |5 K8 }  {
1 Tbsp (15 mL) cooking wine
8 U: }6 w2 x( T% J: ?1 Tbsp (15 mL) cornstarch
& A5 z8 G1 R. H4 j6 ~1 _: E4 [2 Tbsp water

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices0 w0 H. g' R/ V
1 cup (250 mL) cooking oil
/ ]" T% z2 `0 E, w' m% d) |$ P2 1/2 Tbsp (30 mL) oyster sauce
$ G; J! ?6 q) N2 Tbsp (25 mL) light soy sauce
* q3 u% q* l' c$ Y5 {/ ]" K7 U; j- Q3/4 Tbsp (10 mL) dark soy sauce* h4 M: K2 j5 g; `) P- W. M1 u
1 Tbsp (15 mL) sugar' l3 F, q8 ^8 G6 [
a few drops of sesame oil5 Q4 r8 s& n3 J4 Q3 `9 ~
2 cloves garlic, crushed9 F( R$ n: g8 n/ e; Z& s2 c
1/2 cup (125 mL) chicken broth
* l+ R4 X( s, {9 M  D2 Tbsp cornstarch (if desired)% ]9 {( |  U3 Q* H/ r

) `- Z2 |/ S; c; F. j2 p6 p& vDirections:
8 \( `* N+ G( A) W9 e% D% h& YSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
: G- C3 ]) f/ B% R4 nHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
  s8 E( A: m! w- s' _" oAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  & [, O1 {3 i! C) G" Q/ p( I0 u. o( s
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.: B" |, M. F: I6 i! T, ~# w

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
