Beef with Broccoli

Beef with Broccoli% Q! r/ [& ]/ _! [4 j
Serves 3 to 4

Ingredients:- b: L( \% w+ P  r3 N+ M
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces* J5 h8 k8 |5 H

2 g- `' a. p- v; w1 d& q% kMarinade for Beef: 0 j1 [: N' b1 O1 b2 e
1 egg
) Z7 G3 G1 F) `4 j1/3 tsp (1.5 mL) salt
5 o' u6 q0 ~  I3 E1 Tbsp (15 mL) cooking wine
8 \4 H( w- E/ M" S; T1 Tbsp (15 mL) cornstarch
/ o* q+ t1 t' Y' e& }! e2 Tbsp water
/ ]7 r( f+ G# b! w
' E/ H/ i3 e- ?/ @, J3 U1 1/2 Tbsp (20 mL) oil% D7 {/ C; G) v. Q3 n9 V% p

5 X, h2 b' s% Q  V& N/ m- D1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
3 l- R8 h# x2 d: o1 cup (250 mL) cooking oil
3 i1 l: v3 _( ~7 ]) m, C2 1/2 Tbsp (30 mL) oyster sauce% x: Z! V% W& e  T7 j
2 Tbsp (25 mL) light soy sauce
0 w0 W+ B5 @% H) t( j  `2 Y# d3/4 Tbsp (10 mL) dark soy sauce: c. t0 ~% ?: \
1 Tbsp (15 mL) sugar( s. R0 \" [" ?2 |" d
a few drops of sesame oil; T; u$ ^9 o7 y& W- A
2 cloves garlic, crushed& O9 S' k) L, ]; n+ N2 a
1/2 cup (125 mL) chicken broth
6 A/ @% ?2 _* t6 r) r# h% U2 Tbsp cornstarch (if desired)
0 H: u; v; G/ C+ M) e' S; d/ k0 k" H
Directions:( p1 c5 F% h8 B4 ^
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. + Q4 \9 d* J- z3 k
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
4 A/ }- B8 J6 f, D* WAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
6 y! W5 V1 }# l  f' LHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.# }9 V) P! ]4 ^

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
