Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, H4 P4 D' J8 c) Y6 ?! [

Marinade for Beef:
0 e/ N& E/ n1 o1 egg 5 e+ a( ?& _) A$ x
1/3 tsp (1.5 mL) salt
  }/ a% `0 w# g0 B$ ?# V! W# w1 Tbsp (15 mL) cooking wine
# W; R, \6 b9 k& X* j4 H3 Y1 Tbsp (15 mL) cornstarch, H( t9 J* z0 s! l" J1 F; ?+ Z
2 Tbsp water

$ h6 k6 f) a. _0 l# X1 1/2 Tbsp (20 mL) oil! v; @2 U; C) o5 g+ g! h
' a  w9 W2 a* @/ d8 a/ z- e9 W
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
5 r$ R2 ]9 g) W; [/ F* q3 n1 cup (250 mL) cooking oil  ~5 t6 @7 m, m
2 1/2 Tbsp (30 mL) oyster sauce( D1 h, t- Y: O- r. [4 i
2 Tbsp (25 mL) light soy sauce* C: y$ A2 q( G$ ]) L: @
3/4 Tbsp (10 mL) dark soy sauce5 `4 f6 f6 P! e) v
1 Tbsp (15 mL) sugar0 s( e4 W+ ^8 P# z+ p
a few drops of sesame oil
' `2 z5 d  s- u1 W/ p: Y2 cloves garlic, crushed8 D0 ]6 L" v+ w% P2 A! x
1/2 cup (125 mL) chicken broth
. w) n) Q( z. H( b+ {6 h2 Tbsp cornstarch (if desired)

Directions:
9 K3 _/ h) g) O% rSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 0 a# W) N/ o$ t
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
  q  D' _8 @9 e$ m" jAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
2 v! |" |/ b6 q" H4 f" }2 IHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.) S0 T& M3 k: ]2 ~

Variations
, _! s( W* O. B/ V* l8 J*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
