Beef with Broccoli

Beef with Broccoli

Ingredients:
+ P0 P5 Z' f# X4 l+ M- M3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces9 m& B( Q5 f( ?; }5 S

Marinade for Beef:
9 ~3 z% L& N$ E% H, s0 }1 egg 4 _$ ~5 e: T' _  I  e/ u0 @5 z; ]8 B4 R
1/3 tsp (1.5 mL) salt  Z9 a) D; Q  N" z
1 Tbsp (15 mL) cooking wine
( w& R6 J9 X# g2 M7 O1 Tbsp (15 mL) cornstarch
+ Z. [7 ]* E/ L. M2 Tbsp water
) p- V9 ^  m9 r. h* ?( [7 R
2 W2 [& k6 Z: h' [) D3 w7 a7 t1 1/2 Tbsp (20 mL) oil
1 b$ B# b$ g& @5 b2 B
( P6 l* C# g; m: H  q1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices1 N7 n7 J* |- \" c
1 cup (250 mL) cooking oil
; m, s6 A( y9 |( g, [% n2 1/2 Tbsp (30 mL) oyster sauce
3 l0 H* f4 R+ b6 r7 }1 @$ ^2 Tbsp (25 mL) light soy sauce7 T8 x* x& ~* _
3/4 Tbsp (10 mL) dark soy sauce& v; i0 U$ R$ L
1 Tbsp (15 mL) sugar
4 ^! E2 e5 a" L2 P1 sa few drops of sesame oil
" q( o9 W2 H8 q6 u: }8 y2 cloves garlic, crushed
; U6 j8 U5 S$ N( B5 i1/2 cup (125 mL) chicken broth0 G* I3 |2 J' l
2 Tbsp cornstarch (if desired)" D9 n0 E( r& X: b

8 D/ z3 n. u. w0 |Directions:
0 e' U+ G! K( kSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. : A1 t4 y% q" j6 g- o
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.: S* e( y$ }8 O7 E1 @1 L( E
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ c0 W* y' P& w1 i  q9 UHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.1 M+ t' W% X" t8 e* E

) {3 ]  _/ V( S5 t*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
