Beef with Broccoli

Ingredients:
' Y2 \2 r) c" Y) w3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces6 y% p" r8 q0 a. \/ j2 Q

3 {9 C) d" K4 W. xMarinade for Beef: , y: ?7 U' `. H, U5 `0 c$ x
1 egg - a0 ^' f+ Z) G$ D1 h" o
1/3 tsp (1.5 mL) salt
* z  B7 x; F" \+ [3 o1 Tbsp (15 mL) cooking wine! u4 [$ ^: d' m
1 Tbsp (15 mL) cornstarch/ D: G; X! d  ~. J
2 Tbsp water% P7 X$ b, x8 O; U8 r
% o6 z. _  {" e  x; `& g
1 1/2 Tbsp (20 mL) oil1 A' }+ ]8 D! v0 z7 e

) s  l3 [& c  y1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
3 p' f& F) C5 J- n# ]2 V1 cup (250 mL) cooking oil1 a* b3 L& P' W
2 1/2 Tbsp (30 mL) oyster sauce/ L) w# ~  [/ o: z
2 Tbsp (25 mL) light soy sauce' j" m5 H: b8 ~2 K( _
3/4 Tbsp (10 mL) dark soy sauce+ Q6 c4 P% W3 G( H4 Y5 f
1 Tbsp (15 mL) sugar, g* {# J. M% p4 _; U3 ]
a few drops of sesame oil
* E1 d2 `3 j4 v* G, k2 cloves garlic, crushed& `" P! l; G5 V9 s8 J
1/2 cup (125 mL) chicken broth$ O. i4 Q- G  l- e, F7 r. r
2 Tbsp cornstarch (if desired)1 B5 m' C7 @; Q3 a6 K: u
' B6 N' ]1 I8 o; W8 H4 X
Directions:
" w0 i! l" n% E1 o+ D3 DSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 4 D2 v2 w: f1 s% R
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.& T$ w& }* t4 x7 Z, I2 n0 a
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
& z* n9 q  c! uHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

; F) x7 a5 R5 l/ d8 S" b* i*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
