Beef with Broccoli

Beef with Broccoli

Ingredients:  M/ I  X, Z# P, }) h
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
  U# L4 x; g* q: ]' z$ D, b) b
2 V2 c$ d8 F. U$ H% @3 pMarinade for Beef:
  U: h" A2 t" u; U6 [$ c. c1 egg
. E8 O6 M% O+ }' A; A- G1/3 tsp (1.5 mL) salt
# H3 o5 z* X0 a1 u1 J/ K  \1 Tbsp (15 mL) cooking wine
. o8 U1 A7 h3 k9 S% `8 E% v0 S9 ]1 Tbsp (15 mL) cornstarch
0 H) `0 g6 L/ {6 L$ z( N- y/ g! V2 Tbsp water
3 j$ g  O! \4 p1 [% o
" R- x  O1 ^  {2 k( Y0 D. b1 1/2 Tbsp (20 mL) oil

% B& k4 Y) J9 |. v) L! y2 E1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices0 J/ |2 y4 \( o) W3 ?+ \7 j) ]$ I
1 cup (250 mL) cooking oil3 ]: O3 r8 Q' {
2 1/2 Tbsp (30 mL) oyster sauce& I- y8 u. ~& l, u; b
2 Tbsp (25 mL) light soy sauce! b9 M: C/ ]7 e$ V. W& ?0 @' y: ~
3/4 Tbsp (10 mL) dark soy sauce
" `! M* G" \, H; R' k: w+ _0 ^1 Tbsp (15 mL) sugar8 m% Z* u* }$ `8 s
a few drops of sesame oil
2 x0 `7 s& P2 _& D0 K6 w2 cloves garlic, crushed
0 P. d5 h9 }, n# B0 E1/2 cup (125 mL) chicken broth1 w$ g# J( \! m2 Q/ Y7 J! D* n$ S* {
2 Tbsp cornstarch (if desired)
, g. K9 C+ A& Q
  Q7 ~# m7 p' h9 t1 ^Directions:
( U  b7 ?4 y; `3 `( z" Q: kSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
- \( ?+ a: f* W/ m3 F# o4 jHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
+ Y! F- u( G" Y3 dAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  2 c5 R- B8 _: y0 l) j" Y, m
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.$ S2 [: t7 G; ?3 o; |3 N

Variations
7 d: s3 K4 C- y2 s1 N% n*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
