Beef with Broccoli

Beef with Broccoli

+ {  B8 j( I, y- d3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces* T: K1 O. v3 Q

- K4 J5 s/ J& T( R" d2 G* g  `. zMarinade for Beef:
2 j9 T/ Z4 ]8 A! m1 egg # o. [; ?/ \8 }' K
1/3 tsp (1.5 mL) salt
% C" g2 t) n+ K1 Tbsp (15 mL) cooking wine# j0 M* Z0 `* b- I8 k
1 Tbsp (15 mL) cornstarch
5 f/ z8 _1 z* A% u; V, b2 Tbsp water) E+ V- G0 D+ f. I4 i9 d  m
' u* K6 V) C( w* j  r4 B
1 1/2 Tbsp (20 mL) oil
4 R) d0 ?' c" I2 \2 O2 n/ @7 s: |4 r/ B# P/ D. C6 W% i
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices' T- H1 R8 u4 a* a
1 cup (250 mL) cooking oil# A9 S% b; ?+ q
2 1/2 Tbsp (30 mL) oyster sauce. X* R* \" v8 H( Y% E4 k
2 Tbsp (25 mL) light soy sauce/ Y7 u$ W( ?. Z
3/4 Tbsp (10 mL) dark soy sauce6 g, A' h) A& K, t# m1 w' c2 H
1 Tbsp (15 mL) sugar
! X" Q: y( Z# fa few drops of sesame oil9 o+ i  `" |; V/ Q( `' [4 D0 O
2 cloves garlic, crushed$ Z  C" i  i. o% b
1/2 cup (125 mL) chicken broth
# w, m- x! d9 S3 K; \9 G+ \2 Tbsp cornstarch (if desired)# k% ?% A* z$ O; V3 b' H

1 L  W$ P+ e. ?. hDirections:
% _% @% w. Q5 z' f6 w$ W: VSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 7 U/ ]2 `5 X' h! m0 O+ ]
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
4 ~1 S+ O. v' [! q+ z7 IAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
. Z# p$ M8 |4 g' o" l; NHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.! d0 d+ S, `+ h! X( T% y

Variations
; x3 T% H# d$ m7 X# A% P$ k) e' Z: F*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
