Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces1 M$ D2 T9 d5 {1 i

Marinade for Beef:
3 X8 H$ ]- U! Y# m' ~) Q1 egg   C, t7 E$ e* |, n( p
1/3 tsp (1.5 mL) salt
, P- i- ~( z1 l' c5 b1 Tbsp (15 mL) cooking wine7 l" L+ J5 A' }- C) D7 M0 ]* h
1 Tbsp (15 mL) cornstarch
4 L) z" R  N$ ], T) L2 Tbsp water% o) B+ Z# Z3 u
! J! O8 o% E- E# n# F
1 1/2 Tbsp (20 mL) oil% L7 {0 X& c4 ]2 i4 ?
  W1 f0 z3 C* Z1 \: c
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices7 Y3 i) i- t. w9 T
1 cup (250 mL) cooking oil
$ i. i* G6 e& ]  J! u2 1/2 Tbsp (30 mL) oyster sauce! l$ \8 O0 Q; U* V3 C  n
2 Tbsp (25 mL) light soy sauce
$ H4 m- M% |; u# \- y( d- M& \3/4 Tbsp (10 mL) dark soy sauce6 [$ R/ ^- G% U: `$ D
1 Tbsp (15 mL) sugar: b% u" T1 h5 l
a few drops of sesame oil$ B$ `8 g1 m8 }, P: U
2 cloves garlic, crushed
, Y) A) f) y! A1/2 cup (125 mL) chicken broth( l  B8 ~  h: g0 r1 {
2 Tbsp cornstarch (if desired)
) E; k0 u$ o7 V& ?) R! b, ^1 I

: ?) [  L: }0 N& m) tSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
+ U  H2 k9 @( N5 f! {& \Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
) C8 a7 E' h) ~7 \  Q! R- yAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
9 ?, [9 H4 h+ B* j. |Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.. d3 J9 X# d' T5 ^

Variations
& E' Y! v8 W: _8 m*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
