Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
2 ~6 q; E* y# s9 [3 A9 b" J9 v6 x# N5 D
. h# T2 S$ b( f" b! d6 WMarinade for Beef:
8 E9 r8 _, ^, n; L' L1 egg % S+ l( ^" |" I
1/3 tsp (1.5 mL) salt4 K0 t+ B! o7 i/ a
1 Tbsp (15 mL) cooking wine9 P4 }) A/ }) N% P: O9 b
1 Tbsp (15 mL) cornstarch2 k9 P( z# K% @
2 Tbsp water
1 ^( @1 f- _0 V+ D& U# m1 e+ f5 y6 a3 y2 k6 T( m! E  r' P
1 1/2 Tbsp (20 mL) oil
7 x6 y; p! T) h2 k$ \# f2 r8 d6 T: J. b" \+ ]. e- @: |
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices4 L% W" v/ v$ N# [( A$ E/ e
1 cup (250 mL) cooking oil
" z; e/ ^3 v0 n' Q2 1/2 Tbsp (30 mL) oyster sauce
3 K: K2 B! U: `5 n& b' o1 r2 Tbsp (25 mL) light soy sauce! _& O5 f) G' U
3/4 Tbsp (10 mL) dark soy sauce
4 j/ c' X# M* F) J- T1 Tbsp (15 mL) sugar# h/ f+ n* k( b7 w
a few drops of sesame oil, I- M# K$ P* h0 ]7 F, A
2 cloves garlic, crushed
( @( O: h' R- A4 X. n$ E3 E7 ]1/2 cup (125 mL) chicken broth
  X2 A- j3 g5 `* `2 Tbsp cornstarch (if desired)
2 [, t, p9 s; Q8 t: n% K$ {) `1 m7 a& Y8 k4 i7 e* d
Directions:
) f0 T6 S$ _* P( R7 [0 e  w( XSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. , L7 o9 m6 V: p
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
" I" W) D% ?' U4 M7 s* }Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  : r3 Z, ~+ ?5 x; X; b
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.1 ~& Q* m3 v& \8 a  X: d( n; g

# A3 t6 ?" @- K' W8 [*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
